Ingredients

1/4 cup sugar
Zest of 2 limes
1/4 cup packed fresh mint leaves, plus torn leaves for garnish
1 1/2 cups coconut water, cold
1 cup lime juice (about 8 juicy limes)
1/2 cup white rum
1/4 cup coconut rum
Best-quality lime club soda, cold

Steps:

Combine the sugar, lime zest and 1/4 cup water in a small saucepan. Bring to a boil, stirring a few times until the sugar is dissolved. Chill completely before making the mojitos.
Add the mint and 1/4 cup of the chilled lime syrup to a pitcher; muddle with a wooden spoon to bruise the mint. Add the coconut water, lime juice, white rum and coconut rum and stir to combine. Refrigerate, covered, for at least 30 minutes to let the flavors meld.
Fill four glasses with ice, then fill by three-quarters with the rum mixture. Top off with lime club soda. Garnish with torn mint and serve.

1 lime, quartered
8 fresh mint leaves
1-2 teaspoons granulated sugar ((optional) )
1 ounce (2 tablespoons) white rum
1/2 ounce (1 tablespoon) coconut rum
1/4 cup canned full fat coconut milk (well stirred)
ginger beer (for topping)
zest of 1 lime
2 tablespoons granulated sugar
flaky sea salt

Steps:

1. To make the lime sugar. Combine the lime zest, sugar, and a pinch of salt on a shallow plate. Rim your glasses in sugar, then fill with ice.2. In a cocktail shaker or glass jar, muddle the lime, mint, and sugar (if using) together, squashing everything to release the juices. Add the white rum and coconut rum. Fill with ice and shake until combined. Add the coconut milk and shake. 3. Strain into your prepared glass. Slowly top with ginger beer, then gently stir to combine. Enjoy immediately.

16 ounces coconut water, chilled
8 ounces white rum, chilled
Ice
1 cup granulated sugar

Steps:

Put the mint, lime juice and Simple Syrup in a pitcher. Muddle for a few seconds to release the flavor from the mint.
Pour in the coconut water and rum. Add ice to fill a pitcher, and stir to combine and chill.
Stir together the sugar and 1 cup water in a medium pot. Bring to a simmer over medium-high heat. Stir to make sure all the sugar is dissolved. Simmer for 1 minute, and then remove from the heat. Cool completely.

1 ounce white rum (2 Tbsp)
1/2 ounce coconut rum (1 Tbsp)
1 ounce coconut cream (2 Tbsp)
2 tsp simple syrup
ice (crushed)
club soda
1 Tbsp raw sugar
1/8 tsp lime (or just a squeeze of lime)

Steps:

Make the sugar rim by mixing raw sugar and a squeeze of lime together in a bowl.
Rim the glass and set aside.
In a separate glass or cocktail shaker, muddle the mint leaves and lime juice.
Add in both of the rums, coconut cream, and simple syrup.
Mix or shake until the ingredients together.
Fill the glass with ice and pour the cocktail into it.
Add in the club soda and give it a final stir.
Garnish with extra mint and lime (optional) and enjoy!
