Cilantro, mint, cashews, and basil are ground together in a food processor for an herby take on the classic pesto. Slather on toast or add to a sandwich to give it lots of herb flavor.-

Number Of Ingredients 7

1/3 cup cilantro, loosely packed
1/4 cup mint, loosely packed
1/4 cup basil, loosely packed
2 t. lemon juice (freshly squeezed)
3 tbsp cashews
3 to 4 tbsp olive oil
2 tbsp parmesan cheese

Steps:

  • In the bowl of a small food processor add the basil, mint, cilantro, and cashews. Pulse really well and scrape down the sides of the bowl. Add the parmesan and pulse a few more times.
  • Add the lemon juice and pulse again. While the food processor is still running slowly drizzle the olive oil into the food processor and continue to process it until all the ingredients are emulsified.
  • Scrape the pesto into a container and refrigerate for up to 5 days.

2 cups fresh mint, thoroughly washed and patted dry
1 cup fresh cilantro, thoroughly washed and patted dry
1 medium clove of garlic
¼ cup pine nuts
2 tablespoons fresh lemon juice
½ cup (or more) of extra virgin olive oil
¼ cup grated Parmigiano Reggiano cheese
Coarse sea salt and freshly ground pepper

Steps:

  • Combine mint, cilantro, garlic, pine nuts and lemon juice in the bowl of a Vitamix or food processor and chop.
  • Leaving the motor running, add the olive oil in a slow, steady stream until mixture is moist (but not too oily).
  • With the motor off, add cheese, salt and pepper.
  • Process briefly to combine, then scrape into a bowl and cover until ready to use.

A delicious creamy topping for chicken or fish. Can be served cold or hot. I personally prefer it cold on top of hot broiled lemon pepper mahi mahi with brown rice and steamed spinach. Garnish dish with cilantro leaves after topping with sauce.

1/2 cup pine nuts, lightly toasted
1/2 cup parmesan cheese, freshly grated

Steps:

  • Pour olive oil into bowl of food processor.
  • Add garlic, jalapeno and onion, and process until pureed.
  • Add mint and cilantro leaves, pulsing on and off until a grainy puree forms.
  • Add toasted pine nuts and pulse again.
  • Gradually add Parmesan cheese, and a few more drops of olive oil if needed to blend ingredients.

1 bunch cilantro (the large stems cut off near the bottom of the bunch)
1/2 cup walnuts (chopped)
3 -4 large garlic cloves (whole)
1/4 cup lemon juice
1 bunch green onion (green parts only)
1/4 teaspoon salt
1 cup broccoli (about 1 crown,stems removed)
2 tablespoons basil (dried)
1/2 cup parmesan cheese (ok to use bottled kind for spaghetti)
1/2 cup vegetable oil (can use olive if you want)
3 tablespoons laughing cow swiss cheese (approximately 3 wedges, individually wrapped soft spread)

Steps:

  • Put cilantro, walnuts, garlic, lemon juice, green onions, and salt in the blender.
  • Blend until formed into a smooth paste.
  • Add Broccoli, Oil and basil, Blend until smooth.
  • Last add Parmesan Cheese and the Swiss cheese. **If at this point the mixture is too thick add more oil and lemon juice a little at a time -- remember a little goes a long way.

My version of island pesto. This tastes great on grilled shrimp, as a sandwich spread. Use it like chutney, pesto, a dip, or a spread.

3/4 cup unsweetened coconut, firmly packed
1 cup cilantro, chopped
1/2-3/4 cup green onion, chopped
2 tablespoons lime juice
1 teaspoon sugar
2 tablespoons ginger, minced
1 -2 teaspoon garlic, minced
1/2 teaspoon salt
3 tablespoons olive oil or 3 tablespoons peanut oil
1/4 cup water or 1/4 cup coconut milk

Steps:

  • Place first eight ingredients in food processor. NOTE: Don't add sugar if the coconut is sweetened.
  • Process about 1 minute till almost smooth but not pureed. Leave some texture.
  • Drizzle in the olive oil while processing.
  • If too thick add water or coconut milk, a tbsp at a time.
  • Chill at least 3-hours. Flavors develop best when chilled overnight. Thin with a little water or coconut milk if necessary.
