Stuff avocado with chicken when you want a creamy and filling meal. It's a quick dish to enjoy for lunch or dinner.

Number Of Ingredients 9

Ingredients

2 Large avocados
1 ¼ cups Shredded chicken (more or less)
⅓ cup Chopped green onions
¼ cup Bacon pieces
3 ounce Cream cheese
½ teaspoon Chili powder
¼ teaspoon Cumin
Salt and pepper to taste
½ cup Cheddar cheese shredded

Steps:

Preheat the oven to 350 degrees.
Slice the avocados in half lengthwise, remove the pits, and use a spoon to carefully scoop the flesh out. Mash the avocado with the back of a fork, or in a food processor, and place into a mixing bowl.
Add the shredded chicken, green onions, bacon pieces, salt and pepper, cream cheese, chili powder and cumin to the bowl, and mix until well blended.
Fill the empty avocado shells with the filling, and place into a well greased baking dish.
Sprinkle with the shredded cheese and bake for 15-20 minutes.

2 package(s) neufchatel, softened to room temperature
1 jar(s) salsa, chunky
1 1/2 cup(s) grated cheddar cheese
2 can(s) 12.5 oz canned chicken, drained
1 package(s) dry ranch dressing mix
paprika
6 acacados

Steps:

Separate chicken chunks into shreds with a fork.
Combine all ingredients in a bowl except paprika and avacado.
Fill avacado halves with mixture and top with a sprinkle of paprika.

In a medium skillet over medium heat, melt the butter. Add the sliced mushrooms and saute until they soften and release their juices (2-3 min). Add the shredded chicken, season with salt, pepper, and cajun seasoning. Stir thoroughly. Turn the heat down to low, add the heavy cream and cook for an additional minute. Remove from heat.
Halve the avocados and remove their pits. Season the avocado halves with salt, pepper and brush with lime juice to prevent discoloration. Place on the prepared baking sheet. Stuff each avocado half with the chicken mixture. Top with cthe rumbled blue cheese and bake for about 5 minutes. Garnish with chopped chives, if desired. Enjoy!

Cut the avocados in half and remove the pits. Using a spoon, scoop out some of the flesh, leaving a 1/2-inch-thick wall inside the skin. Brush each avocado half with the lime juice and sprinkle lightly with salt and pepper.
In a medium bowl, mix together the chicken, mayonnaise, remaining lime juice, cilantro, and chipotle powder until well combined. Season with salt and pepper to taste. Gently fold in the diced tomatoes.
