My family loves the scampi-inspired combination of garlic and olive oil in this delicious pasta. I love that it's guilt-free! -Judy Crawford, Deming, New Mexico

8 ounces uncooked rigatoni or large tube pasta
1/4 cup sun-dried tomatoes (not packed in oil)
1/2 cup boiling water
1/2 pound boneless skinless chicken breasts, cut into 1-inch cubes
1/4 teaspoon garlic salt
2 tablespoons all-purpose flour
2 tablespoons olive oil, divided
1-1/2 cups sliced fresh mushrooms
3 garlic cloves, minced
1/4 cup reduced-sodium chicken broth
1/4 cup white wine or additional reduced-sodium chicken broth
2 tablespoons minced fresh parsley
1/4 teaspoon dried basil
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
1/4 cup grated Parmesan cheese

Steps:

  • Cook rigatoni according to package directions. In a small bowl, combine tomatoes and boiling water; let stand 5 minutes. Drain; chop tomatoes., Sprinkle chicken with garlic salt; add flour and toss to coat. In a large skillet, heat 1 tablespoon oil over medium-high heat. Add chicken; cook and stir 4-5 minutes or until no longer pink. Remove from pan., In same skillet, heat remaining oil over medium-high heat. Add mushrooms and garlic; cook and stir until tender. Add broth, wine, parsley, seasonings and chopped tomatoes; bring to a boil. Stir in chicken; heat through., Drain rigatoni; add to chicken mixture. Sprinkle with cheese and toss to coat.

This is dinner tonight...something I threw together...I suspect the family will want garlic bread and a salad with it..but any good crusty bread would be good with this, and maybe a veggie..

8 oz rigatoni pasta, cooked
1/2 c chopped celery
1/2 c onions, diced
1/3 c butter
1/3 c flour
2 Tbsp instant chicken bouillon granules
1 1/2 c sharp cheddar cheese
3 c chicken, cooked and cubed
4 1/2 c milk
1/2 c diced red bell pepper
TOPPING
1 sleeve of ritz crackers, crushed
1/2 stick butter ,melted
1/2 tsp garlic powder
1/2 c shredded parmesan

Steps:

  • 1. Cook pasta according to package directions. Preheat oven to 350.
  • 2. In large skillet, over medium heat, cook celery,red bell pepper and onion in margarine until tender. Stir in flour and boullion. . Gradually stir in milk. Cook and stir until thickened and bubbly. Remove from heat. Add cheese; stir until melted.
  • 3. Stir in the pasta and chicken.
  • 4. Spoon into a greased 9x13 baking dish. Melt the 1/2 cup of butter and add to the crushed ritz crumbs, then add cheese and garlic powder, mix well and evenly coat the top of casserole Cover. Bake 30 - 40 minutes remove the cover, and continue baking another 5 min or till golden brown...I used a deep dish pie plate for presentation..so it may not take as long to bake using a 9x13 pan.

3/4 cup butter, cubed
1/2 cup chopped onion

5-1/4 cups 2% milk
4 cups shredded Italian cheese blend
1 can (14 ounces) water-packed artichoke hearts, rinsed, drained and chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1/4 cup shredded Parmesan cheese

Steps:

  • Preheat oven to 375°. Cook rigatoni according to package directions., Meanwhile, in a large skillet, cook pancetta over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings; wipe skillet clean., In same pan, heat butter over medium-high heat. Add onion; cook and stir until tender. Stir in flour, salt and pepper until blended; gradually whisk in milk. Bring to a boil, stirring constantly; cook and stir until thickened, 2-3 minutes. Remove from heat. Stir in cheese blend until melted., Stir in artichokes, spinach and pancetta. Drain rigatoni; add to cheese sauce. Transfer to a greased 13x9-in. baking dish; sprinkle with Parmesan cheese., Bake, uncovered, until golden brown and bubbly, 20-25 minutes.

3 tablespoons olive oil
2 boneless, skinless chicken thighs (cut into bite-sized pieces)
½ teaspoon kosher salt
½ teaspoon ground black pepper
1 tablespoon minced garlic
8 ounces cream cheese (cut into small pieces (1 standard package))
½ cup peas (fresh or frozen)
2 cups marinara sauce (1 jar)
⅓ cup shredded Parmesan cheese
1 cup heavy cream
Chopped fresh basil (optional, for garnish)
Shredded Parmesan cheese (optional, for garnish)

Steps:

  • Cook the noodles according to package directions. Drain and keep warm.
  • Heat the olive oil in a large sauté pan set over medium heat. Season the chicken with salt and pepper and cook through, about 3-4 minutes per side. Add the garlic and cook for another minute.
  • Add the cream cheese and stir until melted.
  • Add the peas, marinara sauce, and Parmesan cheese and simmer until the cheese is melted and smooth. Add the heavy cream and stir. Bring the sauce back to a low simmer, then remove from the stove.
