ONE-POT CHICKEN AND RICE CASSEROLE



One-Pot Chicken and Rice Casserole image

This easy chicken and rice casserole is done in one pot on the stove top for a favorite comfort food dinner that's ready in 30 minutes or less, no oven required.

3 tablespoons Simple Truth butter
1 medium onion (, chopped)
2 cloves garlic (, minced or pressed)
2 teaspoons kosher salt
1 teaspoon Private Selection dried thyme
1 1/2 cups long grain white rice
1 carrot (, diced)
3 cups Simple Truth chicken broth
1 12-ounce can evaporated milk
1 pound skinless, boneless chicken (, (about 2 breasts or 4 cups))
1/2 teaspoon freshly ground black pepper
1 10-ounce bag frozen peas (, or 1 15-ounce can of peas, drained)
1 cup shredded cheddar cheese

Steps:

  • Melt the butter in a large skillet or dutch oven over medium to medium-high heat. Add the onion, garlic, 1 teaspoon of the salt and the thyme. Cook until the onion softens, about 5-7 minutes, stirring occasionally. Add the rice and carrot and cook for 2-3 minutes.
  • Add the chicken broth and evaporated milk and stir in the chicken, the remaining salt and the black pepper. Bring to a boil then reduce to a simmer. Stir, cover with a lid and cook for about 15 minutes, stirring so the rice doesn't stick to the pot.
  • Stir in the peas and add more chicken broth or water if the mixture is too thick. Sprinkle with the cheese and cover with the lid to melt the cheese, and serve.

4 cups cooked rice
1/2 cup butter, divided
1/4 cup all-purpose flour
2 cups milk
2 teaspoons chicken bouillon granules
1/2 to 1 teaspoon seasoned salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
4 to 5 cups cubed cooked chicken
12 ounces Velveeta, cubed
2 cups sour cream
1-1/4 cups crushed butter-flavored crackers (about 32)

Steps:

  • Spread rice into a greased shallow 3-qt. or 13-in. x 9-in. baking dish; set aside. , In a saucepan, melt 1/4 cup butter; stir in flour until smooth. Gradually add milk, bouillon, seasoned salt, garlic powder and pepper. Bring to a boil; cook and stir for 2 minutes or until thickened and bubbly. Reduce heat; add chicken, cheese and sour cream; stir until the cheese is melted. Pour over rice. , Melt the remaining butter; toss the cracker crumbs. Sprinkle over casserole. Bake, uncovered, at 425° for 10-15 minutes or until heated through.

4 cups cooked white rice
¼ cup butter
¼ cup all-purpose flour
2 cups milk
2 teaspoons chicken bouillon powder
1 teaspoon seasoned salt
½ teaspoon garlic powder
¼ teaspoon ground black pepper
5 cups cooked, shredded chicken breast meat
12 ounces processed cheese food (eg. Velveeta), cubed
2 cups sour cream
½ cup butter
2 cups crushed buttery round crackers

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Spread rice in the bottom of a 9x13 inch baking dish; set aside.
  • In a medium saucepan melt butter or margarine and stir in flour until smooth. Gradually add milk, bouillon granules, seasoned salt, garlic powder and pepper. Stir all together and bring to a boil. Let simmer and stir for 2 minutes or until thickened and bubbly. Reduce heat; add chicken, cheese and sour cream. Stir until cheese is melted. Mix all together and pour mixture over rice.
  • Melt 1/2 cup butter or margarine in saucepan and toss with crushed cracker crumbs. Sprinkle crumb mixture over casserole. Bake in the preheated oven for 10 to 15 minutes or unti heated through.

1 cup celery, finely chopped
1 1/2 cups onions, chopped
1 cup brown rice
56 ounces chicken broth
1/2 cup butter
3/4 cup flour
3 cups cooked chicken, chopped
6 cups skim milk, divided
salt and pepper, to taste

Steps:

  • In a large pot over high heat, combine the celery, onion, rice, and broth; bring to a boil. Reduce heat to low, cover and simmer 30 minutes. Remove from heat and set aside.
  • Melt butter in a medium saucepan. Slowly add the flour, stirring often, to make a roux. Add milk, 1/2 C at a time, while constantly stirring.
  • Add roux and chicken to the rice mixture and return the rice mixture to the stove over low heat. Season with salt and pepper to taste.
  • Simmer for 1 hour, stirring frequently.

1 tablespoon olive oil
3 boneless chicken thighs, cut fine
32 ounces low sodium chicken broth
2 (10 3/4 ounce) cans condensed cream of chicken soup (undiluted)
2 (8 7/8 ounce) packages Uncle Ben's Ready Rice, roasted chicken flavor
1/4 teaspoon pepper
1/2 lemon, juice of
4 baby carrots, grated
1 tablespoon chopped fresh parsley

Steps:

  • Heat a tablespoon of oil in pan and saute chicken til browned.
  • Add rest of ingredients and bring to a boil, stirring to break up rice.
  • Simmer for 15 minutes and enjoy!

3/4 cup long-grain white rice
1/2 teaspoon onion powder

2 cups vegetables (your choice, can use fresh or frozen)

1 cup cheddar cheese, shredded

Steps:

  • Mix soup, water, rice, onion powder and black pepper in shallow 2 qt baking dish. Stir in vegetables (if frozen, thawed under running water).
  • Top with chicken. Sprinkle chicken with additional pepper, if desired. Cover
  • Bake at 375°F until chicken is cooked through and rice is tender - about 45 minutes. Sprinkle cheese over chicken. Remove chicken and stir rice before serving.

1/4 cup flour
1/2 cup butter or 1/2 cup margarine, divided
2 cups milk
2 teaspoons chicken bouillon granules

This recipe was one of the 'usuals' at my house when I was little- Even so, we never got tired of it! It is a super easy recipe, and you can play around with it: For the soup, you can either use two cans of cream of mushroom, or one can each of cream of mushroom and cream of celery. For the chicken, you can use boneless skinless chicken breasts, or chicken legs. I truly hope you enjoy!

2 (10 3/4 ounce) cans cream of mushroom soup (Or can cream of mushroom and 1 can of cream of celery)
1 cup long grain rice (Not minute rice)
1/2 cup 1% low-fat milk
0.5 (1 1/4 ounce) envelope dry onion soup mix
4 boneless skinless chicken breasts (chicken legs or other kinds work as well)
salt
pepper

Steps:

  • Rinse off chicken pieces.
  • Mix rice and cans of soup together.
  • Add 1/2 cup of milk, if you wish.
  • Place the chicken on top of rice mixture.
  • Sprinkle 1/2 of the dry onion soup mix on top of the chicken, or just sprinkle salt and pepper as desired.
  • Cover with foil and bake at 350 degrees for one hour.
  • Remove foil for the last 10 minutes.
