1 pound broccoli (cut into florets)
1 rotisserie chicken (meat shredded)
8 ounces cream cheese
3/4 cup heavy cream
1/2 cup unsweetened almond milk
1 tablespoon dijon mustard
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper (ground)
1/4 cup fresh basil (chopped)
1 cup cheddar cheese (shredded)

Steps:

  • Preheat your oven to 200C/390F.
  • Place a saucepan of water over high heat and boil the broccoli florets until al dente. Drain well and add to a large mixing bowl along with the shredded chicken.
  • In a small saucepan, add the cream cheese, cream, almond milk, mustard, garlic, salt and pepper and place over low heat. Whisk until the sauce is smooth.
  • Pour the warm sauce into the broccoli and chicken mixture, add the basil, and mix well.
  • Pour the mixture into a casserole dish and top with the shredded cheese.
  • Bake in the oven for 20-30 minutes, until warmed through and the cheese has browned.
  • Serve immediately.

1 lb boneless chicken
20 oz broccoli florets
1 cup Heavy Cream
1/2 cup parmesan cheese
1/2 tsp garlic salt
1 cup mozzarella cheese

Steps:

  • Preheat oil in an oven safe skillet. Add pieces of chicken and cook it until golden brown.
  • Cut broccoli florets into bite-size pieces. Add them to the dish with chicken.
  • Combine whipped cream, parmesan cheese, and garlic salt together. Pour the sauce over the broccoli.
  • Bake at 350F for 10 minutes. Remove from the oven and sprinkle the mozzarella cheese on top.

For anyone who adores the marriage of chicken and cheese, it's a match made in heaven, with tiny broccoli florets to help balance the rich and creaminess of the dish.

Number Of Ingredients 14

4 boneless, skinless chicken breasts (about 3 lbs)
3 medium heads broccoli, cut into 1" to 1 1/2" florets (approx. 9 cups of raw, cut broccoli)
1 cup sour cream
1 cup block cream cheese, (8 oz package) softened
1/2 cup mayonnaise
1 egg, beaten
2 cups cheddar cheese, shredded (8 oz bag), divided (1 1/2 cups + 1/2 cup for topping)
2 cups mozzarella cheese, (8 oz bag) divided, (1 1/2 cups + 1/2 cup for topping)
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1 teaspoon instant chicken bouillon powder (can substitute with one crushed bouillon cube)
1/2 cup hot water

Steps:

  • Place chicken breasts in a large pot and pour in enough water to cover the breasts. Salt the water. Place over medium/high heat, bring to a boil, then reduce heat to low and simmer until no longer pink, about 40 minutes. Allow chicken to cool, then shred it into small pieces. Set aside.
  • Meanwhile, preheat the oven to 350 degrees. Grease a 13x9 inch baking dish with butter or non-stick cooking spray.
  • Add a few pinches of salt to the broccoli florets and steam until crisp-tender using your favorite method. Once cooked, drain to remove excess moisture, set aside.
  • In a large bowl, using a hand mixer, blend sour cream, softened cream cheese, mayonnaise, egg, and spices (salt through pepper) until thoroughly combined. Dissolve bouillon in 1/2 cup of hot water and beat into the mixture. Now add 1 1/2 cups each cheddar and mozzarella, mix well. Lastly, add the shredded chicken, stir to combine.
  • Spread about 1/4 of the chicken mixture into an even layer on the bottom of your greased baking dish. Make a second layer using the broccoli, followed by the rest of the chicken mixture. Top with remaining cheese.
  • Bake for 45 minutes. Let stand 5 minutes before serving.

1 (16 ounce) package rotini pasta, uncooked
2 tablespoons butter
3 tablespoons extra-virgin olive oil
2 cups broccoli florets, finely chopped
2 tablespoons all-purpose flour
1 cup chicken broth
1 cup milk
salt and pepper to taste
⅛ teaspoon chipotle chile powder
2 cups Cheddar cheese, shredded
¼ cup onion, finely diced
1 pound ground chicken
1 cup sour cream

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta and cook until al dente, 7 to 10 minutes. Drain, cover, and set aside until needed.
  • Melt butter in a saucepan over medium-high heat, and stir in 1 tablespoon olive oil. Add 1 cup broccoli; toss and cook just until tender, about 5 minutes. Sprinkle broccoli with flour, and cook 1 minute. Stir in the chicken broth, and bring to a boil. Pour in the milk, and stir to blend. Season with salt, pepper, and chipotle pepper powder, if desired. Reduce heat to medium, and simmer mixture until sauce thickens, 8 to 10 minutes. Mix in 1 cup Cheddar cheese and stir until melted. Remove from heat.
  • Heat the remaining 2 tablespoons olive oil in another large skillet over medium-high heat. Stir in the onion, ground chicken, and remaining 1 cup of broccoli. Cook and stir until chicken is evenly browned and no longer pink, about 10 minutes. Season to taste with salt and pepper. Reduce heat, and cook until liquid is reduced, about 5 minutes.
  • Preheat oven broiler to High. Lightly grease 9x13 inch baking dish.
  • Toss the pasta with the broccoli sauce until evenly blended. Stir in the sour cream, if desired. Stir the broccoli sauce mixture into the chicken mixture. Spoon into the prepared baking dish. Top with remaining 1 cup Cheddar cheese.
  • Cook under preheated broiler until cheese melts and browns around the edges, 3 to 5 minutes.

3 1/2 boneless skinless chicken breasts
16 ounces frozen broccoli florets
2 tablespoons butter
1 (10 3/4 ounce) can campbell's cream of chicken and mushroom soup
6 ounces sour cream
1 cup real mayonnaise
1/2 teaspoon thyme
1/2 teaspoon Lawry's Seasoned Salt
1/2 teaspoon curry powder
1/4 teaspoon rosemary
1/4 teaspoon sage
2 cups shredded monterey jack cheese

Steps:

  • Cut chicken breasts into chunks.
  • Sprinkle chicken with a bit of salt and pepper and cook in a skillet over medium/high heat with a bit of butter/olive oil (or your preferred oil) until no longer pink in the center.
  • While the chicken is cooking, steam or cook broccoli according to package directions. I like to steam it and keep it slightly crisp. Put butter into the drained broccoli and salt it a bit.
  • Put the buttered broccoli in the bottom of a 9 X 13 baking pan.
  • Combine the cream of chicken & mushroom soup, sour cream, mayonnaise, the herbs and seasonings, and 1 cup of the shredded cheese into a bowl. Add the chunks of cooked chicken.
  • Pour and spread chicken mixture on top of the broccoli, and top with the remaining 1 cup shredded cheese. Sprinkle lightly with curry powder. (it's easy to go overboard -- very lightly!).
  • Bake in a preheated 350 degree F oven for 40-45 minutes until hot and bubbly.

1 1/2 lbs boneless skinless chicken breasts, about 3 cups (steamed and cubed)
1 lb broccoli, steamed and chopped (frozen may be substituted, but steam it too)
1 cup light sour cream (Cabot preferred)
1 cup reduced-fat mayonnaise (Kraft preferred)
10 ounces cream of chicken soup, undiluted (98% fat free works, too)
1 tablespoon lime juice
1 tablespoon garlic, minced
2 cups low-fat cheddar cheese, shredded
salt, to taste (optional)
1/2 teaspoon white pepper

Steps:

  • Preheat oven to 350°; you'll need a 13 x 9 pan for this recipe.
  • In the 13 x 9 pan, spread out the broccoli; then layer the chicken atop the broccoli.
  • Combine the sour cream, mayonnaise, soup, lime juice, garlic and salt & pepper.
  • Spread this mixture over the broccoli/chicken; top with the cheddar cheese.
  • Cover with aluminum foil and bake in the preheated oven for 30 minutes.
