This is a fast and easy dish that does not require whipping cream for the sauce. I made it with skim milk and it turned out just fine. We use a lot a cajun spice so adjust to your tastes.

1 (8 ounce) package spaghetti or 1 (8 ounce) package angel hair pasta
1/4 cup butter
1 lb shrimp, peeled and deveined
1 garlic clove, minced
1/4 cup all-purpose flour
2 tablespoons cajun seasoning
2 cups milk
1/4 teaspoon salt
parmesan cheese, to top

Steps:

  • Bring a large pot of salted water to a boil. Add pasta and cook until al dete; drain.
  • Meanwhile, melt butter in a large heavy skillet over medium heat. Saute shrimp for 1 minute on each side. Stir in garlic and cook for 1 minute. Remove shrimp from skillet (some shrimp may not be cooked completely) and set aside.
  • Stir in flour and Cajun seasoning into the butter. Cook, stirring for 2 minutes. Gradually whisk in milk, then cook until thickened. Return shrimp to sauce and cook 1 to 2 minutes more until shrimp is done. Season with salt.
  • Top pasta with shrimp sauce and sprinkle with Parmesan cheese.

This recipe is a hot one, but delicious! If you are weak of tongue, then divide the amounts of peppers in half. Better to add more than spoil your creation! Bay scallops are preferred, but the larger sea scallops can be used if they are cut in half. This dish can also be placed in a casserole dish and placed under the broiler until top turns golden brown!

1 cup chopped green onions
1 cup chopped parsley
½ pound shrimp, peeled and deveined
½ pound scallops
½ cup shredded Swiss cheese
½ cup grated Parmesan cheese
1 pound dry fettuccine pasta

Steps:

  • Cook pasta in a large pot of boiling salted water until al dente.
  • Meanwhile, pour cream into large skillet. Cook over medium heat, stirring constantly, until just about boiling. Reduce heat, and add herbs, salt, peppers, onions, and parsley. Simmer 7 to 8 minutes, or until thickened.
  • Stir in seafood, cooking until shrimp is no longer transparent. Stir in cheeses, blending well.
  • Drain pasta. Serve sauce over noodles.

3/4 lb raw shrimp, peeled, deveined and tails removed
1 teaspoon kosher salt
1 teaspoon freshly ground pepper
2 tablespoon flour
1 tablespoon olive oil

1/2 cup heavy cream
1 1/4 cups low-sodium chicken broth
1/2 teaspoon cajun seasoning

Steps:

  • Cook pasta according to package directions. Season shrimp with salt, pepper, and toss to combine. Sprinkle 1 tablespoon flour over the shrimp, and toss to coat the shrimp. Sprinkle 1 more tablespoon flour and toss to evenly coat the shrimp.

Shrimp and scallop pasta in Cajun cream sauce is a house favorite! Giant shrimp or king prawns, scallops and Andouille sausage (or use chicken or turkey Andouille sausage) sautéed with peppers and onions in a lighter spicy Cajun cream sauce tossed with gluten-free fusilli pasta noodles.

½ lb. jumbo shrimp
½ lb. scallops
2 Andouille sausage links (turkey or chicken Andouille sausage for a healthier version, cooked)
12 oz. TresOmega gluten-free fusilli pasta noodles
½ red bell pepper (cut into slices)
½ green bell pepper (cut into slices)
½ cup white onion (diced)
2 teaspoons minced garlic
8 oz. whipped cream cheese
½ cup half and half
½ cup grated Parmesan cheese
1 cup white wine
1 vegetable bouillon (no salt added)
2 Tablespoons tomato paste
1-2 Tablespoons Cajun seasoning
1 ½ teaspoons Himalayan salt
¼ teaspoon freshly ground black pepper
1 Tablespoon parsley (chopped)
1-2 Tablespoon olive oil

Steps:

  • Cook the vegetables: In a medium skillet heat 1 tablespoon of olive oil and add the onions, red bell pepper slices and green bell pepper slices. Heat on medium-high until the onions become translucent about 10 minutes continuously mixing. Set aside until ready to use.
  • Prepare the meat: In a skillet add olive oil then the shrimp and scallops. Cover and heat for 5 minutes on medium heat or until the shrimp starts to turn pink and the scallops are no longer translucent. Make sure not to over-cook them. Remove from the pan and set aside to cool. Meanwhile slice the sausage. When the shrimp and scallops are cool enough to handle remove the legs, shells and tails of the shrimp then cut each shrimp into thirds. Cut the scallops in half or thirds as well so you have the seafood in large chunks. Set the meat aside until ready to use.
  • Make the Cajun cream sauce: In a saucepan or skillet add the garlic and heat on low-medium about 1 minute then add the cream cheese, half and half, Parmesan cheese, white wine, vegetable bouillon, tomato paste, 1-2 Tablespoon Cajun seasoning (for a super spicy dish use up to 2 tablespoons and for a more mild dish use 1 tablespoon), salt and pepper. Mix it continuously to melt the cheeses and combine the flavors. Cover and heat on low for about 15-30 minutes while you make the pasta.
  • Make the pasta according to the package directions. Reserve ¼ cup of the water then drain the noodles. In a large bowl mix together the noodles, sausage, shrimp, scallops, cooked onions and peppers and desired amount of the sauce. If the sauce is too thick add a little of the reserve water from the noodles. Toss to combine the ingredients well and garnish with freshly chopped parsley.

12 ounces uncooked pasta (I used fettuccine)
2 tablespoons olive oil
1 lb Andouille Sausage
1 pound large shrimp (For this I used frozen deveined. If using fresh clean and devein)
1 bell peppers, thinly sliced (I used a red bell pepper)
1 small onion, peeled and diced
2 tablespoons olive oil or butter
4 large cloves garlic, minced or pressed
1 tablespoon sugar
1 cup chicken broth
1 15 oz can crushed tomatoes
1 1 1/2 cup heavy cream
1/4 cup Parmesan cheese
2 tablespoons Cajun seasoning, homemade or store-bought (divided using a pinch to season the shrimp)
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
salt and fresh cracked black pepper, to taste
1 tablespoon chopped fresh parsley for garnish (optional)

Steps:

  • Cook the fettuccine according to the package instructions, and keep warm.
  • Cut the sausage into 1/4" -1/2" chunk size slightly diagonal. Season shrimp with salt and pepper and a pinch of Cajun seasoning.
  • In a large skillet over medium heat, heat olive oil, add onion and bell pepper. When the onion is almost translucent, about 3 minutes then add garlic. Remove and set aside.
  • Add sausage to brown and set aside. Pour out any excess grease leaving about 1 tablespoon, add the shrimp and cook until pink, curled and cooked through, about 2 minutes per side, then transfer to a plate.
  • Add chicken broth, stirring and scraping up any brown bits from bottom of pan. Add crushed tomatoes, sugar, remaining Cajun seasoning, thyme and heavy cream then turn down to a simmer.
  • Once simmering, add Parmesan and stir into sauce, simmer a few more minutes and taste if sauce needs any extra salt or pepper.
  • If serving directly from the skillet, mix in pasta and top with shrimp, sausage and the parsley. Depending on the size of your skillet I poured the pasta into a serving dish, and topped with the sauce, shrimp, sausage and sprinkled the chopped parsley.

8 oz penne pasta
1 lb large shrimp (peeled and deveined)
1 Tbsp olive oil
2 Tbsp cajun seasoning (divided)
2 Tbsp unsalted butter
2 garlic cloves (minced)
1/2 cup diced tomatoes
1 1/2 cups heavy whipping cream
1/2 cup grated parmesan cheese (plus more to serve)
2 Tbsp parsley to garnish ( (optional))

Steps:

  • Cook the penne pasta in a pot of salted water until al dente according to package instructions. Drain the water and cover the pasta to keep warm.
  • Coat the shrimp with 1 Tbsp of the cajun seasoning. In a deep skillet, heat 1 Tbsp oil over medium heat. Once hot, add the seasoned shrimp in a single layer and saute for about 1-2 minutes per side, or until the shrimp is no longer translucent, remove from skillet and cover to keep warm.
  • In the same skillet, melt 2 Tbsp butter with the minced garlic and cook 30 seconds until fragrant. Add in the diced tomatoes and saute for about 2-3 minutes.
  • Pour in the heavy whipping cream, remaining 1 Tbsp cajun seasoning and grated parmesan cheese. Bring to a simmer then reduce to medium/low heat and continue 2-3 minutes or until the sauce thickens.

500 g (1lb) pasta
500 g (1lb) shrimp / prawns (peeled and deveined )
1 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
1 tsp chilli flakes
2 tsp oregano
2 tbsp Cajun seasoning
2 tbsp butter
2 tsp crushed fresh garlic
1 cup white wine (I used Sauvignon Blanc)
1 cup heavy cream
1-2 tsp fresh lemon juice
salt and pepper (to taste)

Steps:

  • Place a large pot of salted water over medium heat. Bring to the boil then season generously with salt.
  • Once boiling, add the pasta and cook according to package instructions until al dente. Reserve 1 cup of water then drain and set aside.
  • Place the peeled and deveined shrimp in a large bowl then add the olive oil, crushed garlic, half of the seasonings and a generous pinch of salt.
  • Stir to coat the shrimp in the spices.
  • Heat a large skillet or pan over medium-high heat. Sear the shrimp for a minute per side until they are golden brown and just cooked.
  • Remove and set aside.
  • In the same pan, melt the butter and add the garlic. Cook for 30 seconds then add the remaining spices.
  • Cook for another 30 seconds then pour in the white wine. Allow the pan to deglaze and the wine to reduce by half.
  • Pour in the cream and season with salt and pepper. Allow the cream to simmer for 5 minutes or until the sauce coats the back of a spoon.
  • Taste and adjust seasoning if necessary.
  • Add the shrimp back to the pan with a squeeze of fresh lemon. Allow the shrimp to heat through.
  • Toss the creamy sauce and shrimp with cooked pasta of your choice and a splash of the reserved pasta water and serve scattered with fresh parsley and oregano (optional).
