CAJUN SAUSAGE PASTA (ONE-SKILLET MEAL)
This easy, incredibly tasty one-pot Cajun sausage pasta is a flavorful dish that's sure to please the entire family any night of the week! Rich, delicious andouille sausage combines with a rich and creamy pasta to make a pasta dish that's perfect with every bite!

Steps:
- Heat a stockpot to medium heat and sear the sausages with the olive oil (or cut the sausage links into slices and sear them sliced). Be sure to note a few additional minutes will be necessary if you are cooking raw andouille sausages.
- When the sausage is browned (or fully cooked) transfer it to a plate and set aside. Saute the minced garlic in the pan juices for 30 seconds to a minute then add the chicken broth, heavy cream, Cajun seasoning, Herbes de Provence, and linguine.
- Bring the pot to a boil then reduce heat and simmer uncovered for 12-15 minutes, stirring occasionally. Cook until the pasta is al dente (tender but with a firm core). Add the softened cream cheese to the sauce and stir it in until melted and the sauce is smooth and thickened.
- Use small amounts of water or broth as needed to thin the sauce (if needed) to your desired consistency. Return the sliced andouille sausage to your pasta and sauce, stir to coat thoroughly and warm the sausage through.
- Remove from heat and serve immediately. Garnish with optional chopped parsley.

Steps:
- Puree the tomatoes using an immersion blender or food processor. Set aside.
- In a saucepot over medium heat, combine the olive oil, pepper flakes and garlic. Gently toast the garlic until golden brown, being careful not to burn it. Add the tomatoes and bring to a simmer; simmer 5 to 8 minutes.
- Bring a large pot of salted water to a boil. Add the rigatoni and cook for 2 minutes less than the package instructions. Reserve about 1/4 cup of the pasta water, then drain the pasta.
- Add the pasta to the pot with the sauce. Add 2 tablespoons of the reserved pasta water and cook until thickened, about 3 minutes. Add the butter, half of both cheeses and half of the basil and cook, tossing frequently, until the pasta is nicely coated. Season with salt if necessary.
- Transfer to a serving bowl, top with the remaining cheese and basil and drizzle with olive oil.

- Roast the head of garlic: Preheat your oven to 350ºF. Cut the head of garlic in half. Place it on a piece of parchment paper lined aluminum foil (about 4″ square). - Add the sausage to a large skillet or braiser over medium heat and sear the sausage medallions on both sides, until they crisp up a bit, about 4 minutes total (see notes). Remove and set aside on a paper towel lined plate. Don’t get rid of that sausage oil!
- Add the mushrooms, peppers, and garlic to the same skillet you cooked the sausage in and sauté for about 3 minutes, or just until the mushrooms begin to brown.
