Time 30m

Number Of Ingredients 12

4 salmon fillets, (5 ounces each, skin on )
2 teaspoons smoked or sweet paprika
1 teaspoon dried marjoram leaves
Salt and freshly ground pepper, (to taste)
6 ounces cream cheese, (softened)
2 ounces finely shredded cheddar cheese
4 cloves garlic (minced)
1 tablespoon Cajun Seasoning
3 tablespoons avocado oil, (divided (you can also use olive oil))
1 tablespoon butter, (divided)
Chopped fresh parsley (for garnish)
lemon wedges, (for serving)

Steps:

  • Using a paring knife, cut a slit on the side of each salmon fillet to create a pocket. Do not cut all the way through.
  • Season salmon fillets with paprika, marjoram, salt, and pepper. Rub in the seasonings with your fingers. Set aside.
  • In a mixing bowl combine softened cream cheese, cheddar cheese, garlic, and cajun seasoning; mix and stir until well incorporated. Taste and adjust accordingly. If you like a spicier filling, add some cayenne pepper.
  • Spoon the seasoned cheese mixture into the fish pockets.
  • Heat 1 ½ tablespoons avocado oil (or olive oil) in a large nonstick skillet set over medium-high heat.
  • Add 2 salmon fillets to the skillet, skin-side down.
  • Cook for 6 minutes, or until fillets are cooked about three-quarters of the way up.
  • Using a fish spatula, carefully flip over the fillets; add ½ tablespoon butter and continue to cook for 5 more minutes, or until cooked through.
  • Slowly remove cooked fish from the pan, trying not to lose any of that filling. Set fish aside.
  • Add remaining oil to the skillet; cook remaining two fillets for 6 minutes; flip, add remaining butter, and continue to cook for 5 more minutes.
  • Remove from heat.
  • Garnish salmon with chopped parsley.
  • Serve with lemon wedges.

SPICY CAJUN SEAFOOD STEW

Spicy Cajun Seafood Stew image

Provided by Food Network Kitchen

Categories     main-dish

Time 1h5m

Yield 8 servings

Number Of Ingredients 14

1 tablespoon olive oil
8 ounces smoked andouille sausage, diced (1 1/2 cups)
1/4 cup all-purpose flour
1 teaspoon Cajun seasoning
3 cloves garlic, finely chopped
2 bell peppers, red and/or green, chopped (about 2 1/2 cups)
1 onion, chopped (about 1 1/2 cups)
One 8-ounce bottle clam juice
One 15-ounce can diced tomatoes
1 pound firm white fish, such as halibut, grouper or black sea bass, cut into 1 1/2-inch pieces
1 pound peeled and deveined large shrimp (21 to 25 shrimp)
2 tablespoons chopped fresh parsley leaves
Kosher salt
Cooked white rice, for serving

Steps:

  • 1. Heat the oil over medium-high heat in a large pot or Dutch oven. Cook the sausage until browned, about 5 minutes. Sprinkle the flour over the sausage and cook, stirring, until lightly toasted and the meat is well coated, about 2 minutes. Add the Cajun seasoning, garlic, peppers and onions and continue to cook until the vegetables are softened, 5 minutes. Add the clam juice, tomatoes and 4 cups water, scraping up any browned bits from the bottom of the pot, and increase the heat to bring to a simmer.
  • 2. Lower the heat slightly and simmer until the stew is thickened and the flavors are melded, about 30 minutes. Gently stir in the fish and shrimp. Cook, making sure the stew is not bubbling vigorously, stirring once or twice, until the shrimp and fish have just turned opaque, about 5 minutes. Remove from the heat and stir in the parsley. Season with salt and serve over rice.

CREAMY CAJUN FISH

Simple, healthy and delicious. For the rice, I choose to use canned wild rice mixed with prepared instant brown rice; it keeps the rice quick to prep, but is a healthier option than white rice.

CAJUN CHICKEN ONE-POT

Cajun chicken one-pot image

Make a crowd-pleasing pasta dish for dinner. We've taken inspiration from creamy alfredo sauce with Cajun-style seasoning to add a bit of punch.

Provided by Barney Desmazery

Categories     Dinner

Time 40m

Number Of Ingredients 11

1 tbsp olive oil
400g chicken breasts, chopped into large chunks
3 garlic cloves, finely chopped or grated
2 tbsp Cajun-style seasoning
400g can chopped tomatoes or passata
1 chicken stock cube, crumbled
500g penne or another tube- shaped pasta
150ml double cream
20g parmesan, finely grated, plus extra to serve
½ lemon, juiced
chopped parsley, to serve (optional)

Steps:

  • Heat the olive oil in a large, shallow saucepan or deep frying pan over a medium heat, then add the chicken, season lightly and fry for 6-8 mins, stirring occasionally until just golden all over - no need to worry about it being cooked through at this stage.
  • Stir in the garlic and cook for 2 mins more, then scatter over the Cajun-style seasoning and stir so the chicken pieces are evenly coated. Tip in the tomatoes, a quarter of a can of water and the stock cube. Stir, then bring to a simmer and cook for 5 mins.
  • Meanwhile, bring a large pan of salted water to the boil and cook the pasta for a minute less than pack instructions. Stir the cream into the chicken and continue to simmer gently. When the pasta is cooked, drain well and stir into chicken mixture. Finish cooking the pasta in the sauce over a low heat for 2 mins, then stir in the parmesan and lemon juice, and cook for 1 min more. Serve the pasta straight from the pan, or tip into a large serving bowl. Scatter with parsley, if you like, and extra parmesan.
