- Bring a large pot of lightly salted water to a boil. Add linguini pasta, and cook for 8 to 10 minutes, or until al dente; drain.
- Meanwhile, place chicken and Cajun seasoning in a bowl, and toss to coat.

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

CREAMY CAJUN CHICKEN PASTA | SLIMMING & WEIGHT WATCHERS FRIENDLY

- Cook pasta as per instructions on the pack with a little salt.
- Cook the chicken and onions in a few sprays of low calorie cooking spray over a medium heat for 3-5 minutes until the chicken starts to brown and the onions start to soften.
- Mix the cajun seasoning, paprika and Season All together, then add half of it to the pan.
- Stir and cook for a minute or so.
- Add the mushrooms, peppers and carrot. Cook for another minute.
- Add the cherry tomatoes and the chicken stock. Then add the remaining seasoning. Stir well.
- Cook for about 5 minutes, then add the rest of the vegetables. Stir and cook for another 5 minutes.

- Boil 6 cups of water in a large pot over high heat and cook the pasta according to the package directions. Drain the pasta, rinse with cold water (so it doesn't clump, can also toss a little olive oil on it to prevent clumping) and set aside.
- While the pasta is cooking, add the butter, olive oil and onion to a large pot over medium-high heat and cook for 3-4 minutes, or until the onion becomes translucent.
- Add the red bell pepper, garlic, Cajun seasoning, basil, paprika, ground black pepper, salt and cayenne pepper. Stir to combine and cook for 3 more minutes or until the bell pepper starts to become soft.

- Bring a large pot of salted water to a boil.
- Halve the chicken breasts horizontally (resulting in two thin fillets) then season generously on both sides with the Cajun seasoning.
- Heat a large frying pan over medium-high heat. Add a splash of oil then add the chicken. Cook for a few minutes per side until golden brown and cooked through. Remove and set aside.
- By this time, the water should be boiling. Add the pasta and cook until al dente. Reserve 1 cup of cooking water before draining.
- In the same pan the chicken was cooked in, add the butter, onion and garlic. Cook for a few minutes until soft and translucent.
- Add the Cajun seasoning and stir into the onions. Pour in the cream and lemon juice then bring to a gentle simmer. Cook for a few minutes until the sauce thickens enough to coat the back of a spoon. Reduce the heat and add the Parmesan. Stir until the sauce is smooth then season to taste.
- Toss the drained pasta with the creamy sauce. Add a few tablespoons of pasta water. Stir to coat the pasta in the sauce, and add more water if you want it to be saucier. Feel free to add more grated Parmesan too. Slice the chicken thinly then add to the pasta.
- Serve topped with chopped parsley and extra Parmesan.

- Bring a large pot of water to a boil and add 1 Tbsp salt. Cook pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water then drain, cover, and keep warm.
- Beat the chicken breasts so that they are even in thickness and season all over with 1½ Tbsp cajun seasoning.

- In a large skillet or Dutch oven pot (you will need a lid to cover the pot later), heat the olive oil and butter over medium-high heat.
- Once the butter is melted, add the chicken to the pan. Sprinkle salt and pepper over the chicken, then add the onion and bell peppers to the pan. Cook, stirring often, until the chicken is lightly browned and the veggies start to soften, about 6 minutes.
- Add the garlic and Cajun seasoning and cook, stirring, for 1 minute.

- Saute onions: In a large nonstick pot over medium high heat, start sauteing your onion. I use water for this, but feel free to use oil if you prefer. Saute the onions until they become translucent, about 3-4 minutes.
- Add green onions & tomatoes: Then, throw in the white parts of your green onion and the fire roasted tomatoes. Stir well, and cook for 2 minutes.
- Add pasta and broth: Now add the pasta, and all but half a cup of the broth. Keep this on reserve.

- Heat the oil in a large frying pan (skillet) and add the onion. Cook on a medium heat for 5 minutes, stirring occasionally, until the onion begins to soften.
- Sprinkle the Cajun seasoning on the chopped chicken breast, then add to the pan with the onion. Heat for 5-6 minutes until the chicken is sealed on all sides.
- Add in the chorizo and garlic and fry for a further two minutes, until the chorizo starts to release it’s oils, then add peppers. Stir, then add the pasta shapes, tin of tomatoes and chicken stock. Bring to the boil, stir, then place a lid or some foil over the pan. Turn the heat down and let the pasta simmer for 15 minutes. Check and stir once or twice during this time.
- After 15 minutes, remove the lid and test the pasta. It should be just cooked (if it isn’t, cook for a couple of minutes more with a splash of boiling water if needed). Stir in the cream, heat through for a minute then turn off the heat and stir in the spinach. It should wilt very quickly.

- Mix the cornstarch, Cajun seasoning, salt, and pepper in a wide bowl. Coat the chicken pieces in the spices then set any leftover spices aside.
- Heat the butter and oil in a large frying pan over medium heat. Add the chicken and cook until it is golden, about 5 minutes per side. Remove the chicken from the pan.
- Add the garlic to the pan and let it cook for 1 minute. Add any remaining spices to the pan and stir. Pour in the cream and scrape the bottom of the pan with a spatula or wooden spoon to remove any bits that are stuck on. Simmer until liquids reduce to a thick sauce and spinach is wilted, 1 to 2 minutes. Toss in pasta and stir until sauce coats pasta. Season with some salt and pepper.
