DELICIOUS BASIL DIP
This Delicious Basil dip is incredibly creamy, and is absolutely awesome on so many things, including meats, breads, veggies and chips!

Steps:
- In your blender or food processor, chop up your garlic, then add the basil and chop that all up. Then add the mayonnaise.
- Next add the Dijon Mustard, olive oil, lemon juice and salt and pepper. Blend everything until it is completely smooth and combined. Put it in a dish, cover and refrigerate for at least an hour or so. This allows the flavors to marry and results in a delicious, fragrant, wonderful Basil Dip.
CREAMY BASIL DIP

CREAMY BASIL DRESSING OR DIP!
The thin version of this recipe makes a great salad dressing. When thickened after refrigeration it makes a good vegetable dip, topping for a baked potato, or mayonnaise replacement for sandwiches. Can be made vegan by using tofu instead of yogurt. This recipe tastes best after marinating in the refrigerator for 24 hours (not in the cooking time). - In a food processor or blender, combine the lemon juice, basil, mustard, and garlic. Process until smooth. Then, with machine running, gradually ad oil. When oil has been completely blended in, add tofu (if making nondairy option). If using yogurt, remove the dressing from the food processor and place in small bowl and gently stir in yogurt.
- Season to taste with salt. Cover and refrigerate. Stir well before each serving. The tofu version will especially thicken when chilled. Thin with a teaspoon or so of water if needed.

- With a fork, mash the cheese and buttermilk together until it resembled the consistency of cottage cheese.
- Add the remaining ingredients and blend well.
- Add salt and pepper to taste.
- Let sit, covered, in the refrigerator at least a few hours to blend flavors.
- If it's too thick, just add a little milk until it's the texture you desire.
- This is sooo good on a salad with fresh greens, tomatoes, cucumbers, slices of red onions, and kalamata or ripe olives.

- Dressing: In a bowl, whisk together basil, yogurt, mayonnaise, vinegar, salt and pepper. Set aside.
- In a skillet, cook bacon over medium-high heat for about 7 minutes or until crisp. Drain on paper towels.
- Meanwhile, cut baguette diagonally into 12 slices. Broil on a baking sheet, turning once, for about 1 minute or until golden. Rub both sides with cut sides of garlic. Arrange in serving basket.
- Cut tomatoes into 1/2 inch thick wedges. Peel, pit and cut avocado into 1/2 inch cubes.
- In a large bowl, toss together lettuce, onion and half of the dressing; arrange on large plates. Top with tomatoes and avocado; spoon remaining dressing over top. Sprinkle with bacon. Serve with garlic toasts.
