Decadent! Everyone raves about this dish. So cheesey and full of flavor. Good southern comfort food. Wonderful with pork chops or fried chicken. Originally I got the base of this recipe from Nell Carter on some TV show. I had to spice it up a bit.

2 cups elbow macaroni
1/4 cup butter, melted
1 cup cream cheese, softened
1 cup sharp cheddar cheese, shredded
1 cup gouda cheese, shredded
1 cup swiss cheese, shredded
1 cup muenster cheese, shredded
2 cups whole milk
3 eggs
1 1/2 teaspoons salt
1 1/2 teaspoons fresh ground pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Cook 2 cups macaroni noodles in salted boiling water for only about 6 minutes > do not over cook as they will continue to cook in the oven.
  • While noodles are cooking: mix eggs, milk, cream cheese, melted butter and spices together in large mixing bowl.
  • Drain noodles.
  • Add noodles and all the shredded cheese to egg mixture.
  • Pour into a greased 9x13 baking pan.
  • Bake in a 325 degree oven for 45 minutes.

I've adapted this recipe off of others after not finding exactly what I want in the ones I've tried. Try not to use extra sharp or aged cheeses, they don't melt well and contribute to the grainy texture everyone talks about in macaroni and cheese. Also, make sure all your cheese is grated and macaroni is boiled and drained before finishing the cheese sauce. Overcooking or letting it sit too long can also make the texture grainy.

3 tablespoons unsalted butter
3 tablespoons flour
2 cups hot milk
1 cup grated cheddar cheese
1/4 cup grated colby cheese
1/4 cup grated monterey jack cheese
1/4 cup grated mozzarella cheese
1/4 cup grated monterey jack pepper cheese
1 teaspoon kosher salt (or to taste)
1/2 teaspoon pepper
1 lb elbow macaroni
1/2 cup mozzarella cheese, cubed small
2 tablespoons melted unsalted butter
1 cup breadcrumbs or 1/2 cup grated cheese

Steps:

  • Grease a 2 quart casserole dish, and preheat oven to 400 degrees.
  • Cook macaroni to desired tenderness and drain, set aside.
  • Combine melted butter and breadcrumbs (if using), set aside.
  • Melt butter in saucepan over medium heat, whisk in flour and cook, whisking constantly for 2 to 3 minutes,.
  • Add hot milk slowly, whisking constantly, and cook for 3 to 5 minutes, until thickened.
  • Add the grated cheeses to the sauce in small batches, whisking until each one is melted completely.
  • Remove from heat, add salt and pepper, and taste to see if it needs more seasoning.
  • Combine noodles and cheese sauce and mix well, then mix in cubed cheese.
  • Pour into casserole and top with breadcrumbs or cheese.
  • Bake for 30 minutes or until well browned.

This baked mac and cheese - perfect for a large crowd or as a side dish - is super simple to make. The cream cheese gives it richness and a little tang.

1 pound elbow macaroni
2 1/2 cups half and half
1/8 to 1/4 teaspoon cayenne pepper
1 pound cream cheese, room temperature
8 ounces sharp Cheddar, shredded (about 3 cups)
3 ounces gruyere cheese, shredded (about 1 cup)
1 cup panko bread crumbs
4 tablespoons unsalted butter, melted

Steps:

  • Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
  • Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
  • Heat the half-and-half and cayenne in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
  • Add the macaroni and the reserved pasta water to the saucepan and stir to combine. (It will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Season to taste with salt if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs with the butter and a sprinkle of salt in a small bowl and sprinkle evenly over the top of the macaroni and cheese. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

1/4 pound bacon, diced
1 medium onion, diced
5 tablespoons unsalted butter, plus more to butter baking dish
6 tablespoons all-purpose flour
1 tablespoon Dijon mustard
2 1/2 cups whole milk
2 cups heavy cream
1 sprig fresh thyme
1 bay leaf
1/2 teaspoon salt
1 1/2 cups grated fontina
1/2 cup crumbled blue cheese
3/4 cup grated Gruyere
3/4 cup grated white Cheddar (Australian)
3/4 cup grated Parmesan
3 tablespoons chopped Italian parsley
1/4 cup bread crumbs

Steps:

  • Preheat oven to 450 degrees F and butter a 9 by 13-inch glass baking dish.
  • Bring a large pot of water to a boil and add salt. Cook macaroni according to package directions. Drain.
  • In a large Dutch oven or other heavy pot, saute the bacon until crisp. Remove bacon with a slotted spoon and reserve. Saute the onion in the bacon drippings until soft. Add the 5 tablespoons butter to the onion mixture and melt the butter stirring with a wooden spoon.
  • Using a whisk, add the flour, and stir constantly until well mixed with the fat making a roux. Whisk in the mustard. Gradually add the milk and cream whisking constantly.
  • Add the thyme, bay leaf, and salt. Let come to a simmer and stir frequently for 15 minutes.
  • Strain the hot milk mixture into a metal bowl and discard the solids. Working quickly, mix in 1 cup fontina, blue cheese, 1/2 cup Gruyere, 1/2 cup white Cheddar, 1/2 cup Parmesan, the reserved bacon, and parsley. Continue to stir until all cheese is melted.
  • Add the cooked noodles to the cheese mixture to coat. Add the noodle mixture to the prepared baking dish. Mix the remaining cheese and bread crumbs together and sprinkle on top of the noodles. Bake for about 15 to 20 minutes or until bubbling and golden brown. Remove from oven when done and rest for 5 minutes.

3 cups milk (use whole milk or 2% milk fat)
1 pound dried macaroni pasta (elbow macaroni)
1 tablespoon olive oil
1 small yellow onion (peeled and minced)
2 cloves garlic (minced)
1 teaspoon salt
1 teaspoon paprika
1 teaspoon mustard powder
1/2 teaspoon ground cayenne pepper
1/4 teaspoon ground nutmeg
1/2 teaspoon freshly ground black pepper
1/4 cup unsalted butter
1/3 cup all-purpose flour
1 (12-ounce) bottle lager beer (use your favourite variety)
1/4 cup cream cheese (softened and cut into small cubes)
3.5 cups shredded mozzarella cheese (divided)
1 cup shredded cheddar cheese
1 cup shredded gouda cheese
1/2 cup grated parmesan cheese
1/2 cup panko bread crumbs
1/4 pound bacon slices (about 4 to 5 slices)
Fresh parsley (roughly chopped (optional))

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Spray a baking dish (like a 9-inch x 13-inch deep baking dish) with cooking spray or grease with butter and set aside.
  • Place milk in a small saucepan and keep over low heat just to warm through.
  • Cook macaroni pasta according to package instructions one minute short of al dente (it will finish cooking in the oven). Drain and set aside.
  • Heat olive oil in a large heavy-bottomed pot on the stovetop over medium heat. Add onion and cook, stirring often, until softened, about 5 minutes. Stir in garlic and cook an additional 1 minute. Add salt, pepper, paprika, mustard powder, cayenne pepper, nutmeg, and black pepper. Stir.
  • Add butter to onion mixture and melt. Add flour and stir to combine and cook for 2 to 3 minutes. Add half of beer, stirring until thickened slightly. Add remaining beer, stirring for a couple more minutes until thickened slightly.
  • About a cup at a time, add the warmed milk to the pot, stirring between each addition and letting thicken slightly. Add cream cheese and whisk until incorporated.
  • Turn off heat and add 2 cups of mozzarella and all of the cheddar and gouda. Stir in cooked pasta.
  • Pour pasta mixture into prepared baking dish. Top with bread crumbs, Parmesan and remaining 1.5 cups of mozzarella cheese. Bake for 25 to 30 minutes until top has browned slightly and mixture is bubbly.
  • Carefully remove from oven and let cool for 15 to 20 minutes.
  • While mac and cheese is cooling, place bacon on a sheet pan (in a 375 degree Fahrenheit oven) and bake for 15 to 20 minutes or until crispy. Remove and drain on a paper towel-lined plate to remove any excess grease. Crumble over mac and cheese and garnish with parsley to taste, if using. Serve and enjoy!

12 ounces Velveeta cheese
8 ounces cream cheese
1/2 cup parmesan cheese (canned is fine)
1 beaten egg
1 1/2 cups half-and-half
1/4 cup butter
1 tablespoon flour
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Boil noodles until done.
  • While noodles are cooking, grease a rectangular glass casserole dish.
  • After noodles are drained and have cooled for a few minutes, put them in casserole dish and mix with beaten egg.
  • Set aside.
  • In a medium saucepan, melt butter on medium-low heat and add flour to make a paste.
  • Add half and half and bring to a boil on medium-high heat.
  • Reduce heat and add velveeta and cream cheese in small chunks.
  • Stir and add seasonings (last four ingredients).
  • After all the cheese is melted and the sauce has a medium thick consistency (you may need to play around with the half and half or milk to get the consistency you prefer), pour it over the noodles.
  • Stir noodles with sauce until they are combined.
  • Sprinkle parmesan over the top.
  • Bake in a preheated oven at 375 degrees for 30-45 minutes (I wait until it's a little browned).

8 ounces whipped chive-flavored cream cheese
Kosher salt and freshly ground black pepper
2 cups heavy cream
2 cups reserved pasta water
8 ounces sharp Cheddar, shredded from the block
8 ounces Gouda, shredded from the block
8 ounces mozzarella, shredded from the block
3 ounces Pecorino Romano, shredded on a box grater

Steps:

  • Preheat the oven to 375 degrees F. Butter the bottom and sides of a deep 13-by-9-inch baking dish.
  • Make the sauce. In a large bowl, mix the ingredients in order, combining completely between additions. Start by adding the flour, paprika, ground mustard, garlic, scallions, hot sauce, cream cheese, a pinch of salt and more grinds of black pepper than normal. Mix this until combined completely. In a liquid measure, mix the heavy cream and pasta water together and add slowly to the bowl while whisking. Add the Cheddar, Gouda, mozzarella and Pecorino Romano cheeses.
  • Bake. Add the pasta to the bowl of liquid and stir until the liquid seeps into the elbows and everything is distributed evenly. Pour into the prepared dish. Level with the back of your spoon. Toss together the Cheddar and mozzarella in a small bowl and sprinkle evenly over the top. Bake until the edges are bubbly and the top is golden brown, 35 to 40 minutes.

4 slices white bread, torn into pieces
4 tablespoons unsalted butter plus 4 tablespoons melted unsalted butter
1/4 cup freshly grated parmesan cheese
1 tablespoon salt
1 lb elbow macaroni
5 tablespoons flour
3 (12 ounce) cans evaporated milk
2 teaspoons hot sauce
1 teaspoon red pepper flakes
1/8 teaspoon nutmeg
1 teaspoon dry mustard
2 cups shredded extra-sharp cheddar cheese
1 1/4 cups shredded American cheese
3/4 cup shredded monterey jack cheese

Steps:

  • Preheat oven to 350 degrees and place oven rack in the middle.
  • Pulse bread, melted butter, and Parmesan in food processor until ground to coarse crumb.
  • Transfer to bowl.
  • Bring 4 quarts water to boil in large pot.
  • Add 1 tablespoon salt and macaroni to boiling water and cook 6 minutes-do not overcook.
  • Reserve 1/2 cup macaroni cooking water, then drain and rinse macaroni in colander under cold running water.
  • Drain well & set aside.
  • Melt remaining 4 tablespoons butter in now-empty pot over medium-high heat until foaming-don't let it brown.
  • Stir in flour and cook, stirring constantly, until mixture turns light brown, about 1 minute.
  • Slowly whisk in evaporated milk, hot sauce, red pepper flakes, nutmeg, mustard, and 2 teaspoons salt and cook until mixture begins to simmer and is slightly thickened, about 4 minutes.
  • Off heat, whisk in cheeses and 1/2 cup reserved pasta water until cheese melts.
  • Stir in macaroni until completely coated.
  • Transfer mixture to 13 by 9-inch baking dish and top with bread crumb mixture.
  • Bake until cheese is bubbling around edges and top is golden brown, 20 to 25 minutes.
  • Let sit for 5 to 10 minutes before serving.
