2 (8 ounce) packages cream cheese, softened
2 bunches green onions, chopped
salt and ground black pepper to taste
6 skinless, boneless chicken breast halves - pounded 1/4 inch thick
2 (16 ounce) packages sliced bacon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix cream cheese and green onions in a bowl; season with salt and black pepper. Spread about 1/4 cup of cream cheese mixture over each chicken breast. Starting at the narrow end, roll chicken breasts over filling. Wrap each chicken breast in 4 slices of bacon. Set wrapped chicken on a rack set in a baking dish.
  • Bake in the preheated oven until bacon is browned and an instant-read meat thermometer inserted into the thickest part of a breast reads 160 degrees F (70 degrees C), about 1 hour.

1 pound skinless, boneless chicken thighs
½ (8 ounce) package cream cheese
6 slices bacon, or as needed
1 (10.75 ounce) can condensed cream of chicken soup

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread chicken thighs out flat and pound if necessary with a meat mallet. Spread cream cheese across each thigh. Roll up chicken thighs, tucking in the sides. Wrap each chicken roll with at least 1 slice of bacon and secure with a skewer.
  • Place chicken rolls in a deep casserole dish. Pour entire can of condensed cream of chicken soup over the chicken rolls. Cover dish with aluminum foil .
  • Bake in the preheated oven for 20 minutes. Remove foil. Continue cooking until chicken is no longer pink in the center and the juices run clear and bacon is crisp, 20 more minutes.

I'm not sure where I got this recipe, but I've had it for years. This is one that my kids request when they come over for dinner. I've used onion and chive cream cheese with great results too. I'm guessing that this could also be made in a crockpot.

4 boneless skinless chicken breasts
4 slices bacon, honey-maple smoked is good
4 slices cream cheese, about the size of your finger
1 (10 3/4 ounce) can cream of chicken soup
3/4 cup mayonnaise
3/4 cup cream
1 teaspoon lemon juice
1 pinch sugar
salt and pepper
green onion, chopped

Steps:

  • Preheat oven to 325 degrees (175 C.).
  • Pound out the chicken breasts until flattened out a bit and season with a little salt and pepper.
  • Put a slice of cream cheese in the middle of each one and sprinkle with chives and roll up each one.
  • Wrap each rolled breast with a slice of bacon and secure with toothpick.
  • Combine the remaining ingredients and mix until smooth to make the sauce.
  • Place the rolled chicken breasts in a well greased 13 x 9 inch baking dish and pour over the sauce.
  • Bake in the preheated oven for about an hour or until chicken is cooked and juicy.

2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon black pepper
½ teaspoon salt
¼ teaspoon onion powder
4 (4 ounce) skinless, boneless chicken breast halves
1 (16 ounce) package bacon
1 tablespoon chopped fresh parsley

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
  • Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
  • Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

My husband and I were away in a cabin and stopped in a winery while out and about. The host had recommended a nice chardonnay in answer to my inquiry what to serve with bacon wrapped grilled chicken. But then he recommended stuffing them before wrapping rather than marinating. This is what I came up with. I thought my husband had died and gone to heaven the way he was moaning about the taste. He loved it.

4 button mushrooms, chopped fine
1 shallot, chopped fine
2 garlic cloves, chopped fine
1 tablespoon butter
4 chicken thighs (large)
12 slices bacon

Steps:

  • Prepare your charcoal for the grill (I'm sure this is good on gas too but the charcoal grilling was out of this world). Spray a 12x12 or so piece of heavy duty foil with cooking spray. When coals are ready, place a piece of heavy duty aluminum foil directly on the grill directly over the hot area.
  • Saute the mushrooms, shallots, garlic in the butter over medium heat until soft. Remove from the pan to a plate to cool at least 10 minutes.
  • (If you were trying to do the whole thing on the grill, I'm sure you could cook this mixture on a piece of foil also).
  • Run your finger up under the skin of each thigh to make a pocket. Divide the mushroom mixture into fourths and stuff each thigh with 1/4 of the mixture. This takes some patience, but starting at one end of the thigh, wrap 3 pieces of bacon to secure the mushroom mixture inside and try to wrap each piece of chicken in the bacon.
  • You can secure with toothpicks, but I didn't and it was fine. I just had to be careful when turning them over.
  • Grill on the foil, turning every 10 minutes. Fat will accumulate on the foil, allow this to happen for the first 30 minutes of grilling.
  • After 30 minutes, punch holes in the foil or remove it completely and allow the chicken skin side to have 10 minutes of direct grill contact.
  • Serve hot and crispy.

2 tablespoons Hidden Valley Original Ranch Seasoning Mix
4 ounces cream cheese
1 shallot, minced
2 tablespoons fresh chives, sliced thin
1 cup baby spinach leaves
8 ounces apple-smoked bacon

Steps:

  • 1. Preheat the oven to 375°F.
  • 2. Butterfly the chicken breast and place them between two sheets of plastic wrap and flatten with a meat mallet.
  • 3. Season the chicken on both sides, with the packet of Hidden Valley Ranch Seasoning.
  • 4. In a small bowl mix together the shallots, chives, and cream cheese.
  • 5. Spread the mixture on top of the chicken and top with spinach.
  • 6. Lay half of the bacon out next to each other in the style of a fence.
  • 7. Place a chicken breast on top and fold each side up and fasten together with toothpicks.
  • 8. Repeat with the other chicken breast.
  • 9. Roast the Chicken for 30 minutes, until internal temperature reaches 165°F.

This is one of the few dishes I make that uses canned soup. When I left school I worked as an au-pair in Norway for a year and the family I lived with used to cook this. It's easy, but really yummy.

4 small chicken breast fillets
4 -8 slices unsmoked bacon
1 cup mushroom, sliced
1 (10 ounce) can cream of mushroom soup (cream of chicken soup also works)
3/4 cup cheese, your favourite variety

Steps:

  • Wrap the chicken breast fillets with 1-2 bacon rashers each.
  • Heat a little oile in a non stick frying pan, and quickly fry the chicken for a couple of minutes each side, just so the bacon starts to brown a little.
  • Place in an oven proof dish, that just holds them lying next to eachother (not too big).
  • In a bowl mix the soup with the mushrooms and pour over the chicken, so it's nearly covered.
  • Cover with a lid or tin foil and bake in a preheated oven at 190°C/375°F/Gas 5 for 30-40 minutes, until chicken is no longer pink.
  • Remove lid and sprinkle the cheese over the chicken breasts, replace lid and let rest for 5 minutes.
  • Serve with rice.

Steps:

  • In a bowl, mix cream of chicken soup and sour cream. Set aside.
  • Wrap 1 raw chicken breast with 2 pieces of raw bacon. Continue to do this 3 more times and place in a 9x13-inch baking dish.
  • Pour soup and sour cream mixture on top of bacon-wrapped chicken, making sure all the chicken is covered. Bake uncovered at 400ºF for 1 hour.

2 tablespoons Dijon mustard, or to taste
6 slices dill pickle
2 ounces cooked ham, cut into matchsticks
3 ounces Gruyere cheese, cut into matchsticks, divided
12 strips bacon

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread chicken thighs out flat and remove the bones. Place skin-side down and rub mustard on top. Divide pickle slices, ham, and 2/3 of the Gruyere over the chicken thighs. Roll up each thigh and secure with 2 strips of bacon crosswise.
