CREAMY AVOCADO-RANCH DIP
I haven't seen a recipe combining avocados with cream cheese and sour cream, so I made one! Came up with this creamy blend of cream cheese, sour cream, and avocado seasoned with ranch dressing mix, hot sauce, etc. Excellent with tortilla chips. Add more hot sauce, if you like (I don't add lemon juice because the sour cream already gives it tartness). We couldn't stop eating it!

- Transfer scallions and oil to a medium bowl. Add avocado, yogurt, and remaining 3/4 tsp. salt; stir to combine, lightly mashing avocado so mixture is slightly chunky. Taste and adjust seasonings. Top with finely chopped scallions. Serve with tortilla chips or pita chips alongside, if using.
CREAMY AVOCADO DIP
Guacamole may be the MVD ("Most Valuable Dip") at any party or get-together, but it's not the only avocado dip in town. Our Creamy Avocado Dip is a smoother, tangier version of guacamole that we're sure you and your crowd will love just as much. Made in a food processor with two avocadoes, 1/2 cup of sour cream, and 1/2 cup mayonnaise, this dip is richer and paler in color than traditional guacamole. (It's also a great dip to make if you're in the mood for a big batch of guacamole, and are short on avocadoes.) Flavored with lime juice, jalapenos, and cilantro, Creamy Avocado Dip is delicious served with tortilla or pita chips and crudites for dipping, or you can also use it as a topping or spread for tacos, burgers, and sandwiches. Want to lighten up the recipe a bit? Substitute an equal amount of plain Greek yogurt for the mayonnaise or sour cream. Unlike many dips, you can even make this one in advance. The acid from the lime juice and the sour cream will keep it from turning brown as quickly as regular guacamole. To prepare the dip one day in advance, cover the dip bowl or container with plastic wrap pressed on the surface of the dip to prevent it from browning. Then store it, covered, in the refrigerator. Serve this cool, creamy dip on a hot day with plenty of chips and cold beverages (we suggest margaritas) for a snack that will really hit the spot.

CREAMY AVOCADO DIP
Quick, easy and delicious. This is a wonderfully creamy dip for tortilla chips, or a dairy free topping for tacos or burritos. I kept the spices kind of basic, but I think some chopped jalapeno, or some cumin or chipolte might make a nice addition to this.

CREAMY AVOCADO DIP
Think of this dip as the creamy, tangy cousin to guacamole. The Parmesan may seem out of place, but it's a stand-in for hard-to-find Mexican cheese and is the secret ingredient. Serve it with tortilla chips or veggies, or on the side with grilled chicken or steak.

- Using a spoon, scoop the flesh of the avocados into a food processor or blender. Add the cilantro, lime juice, jalapeño, water, and salt.
- Process, stopping to scrape down the sides as necessary, until the sauce is smooth and creamy. (If the mixture refuses to blend, add additional water in 1-tablespoon increments, as necessary.)
- If you would like a thinner, more drizzly sauce, add water in 1-tablespoon increments until it reaches your desired consistency. Taste, and add more salt if it’s not quite flavorful enough.
- Transfer the avocado sauce to a small serving bowl. This sauce keeps well in the refrigerator, covered, for about 4 days.

- Scoop the greens of the avocado into a food processor (blender works too but see notes first) along with the sour cream, cilantro, lime juice, jalapeños, garlic, cumin, and salt.
- Process until smooth and creamy. You might need to stop the food processor and scrape the sides. Taste and adjust with additional salt and lime juice as desired. To spice it up further, you can also add a bit of cayenne pepper or next time, leave some of the ribs/seeds of the jalapenos intact. Let sit for 15-20 minutes in the refrigerator if time allows, I prefer to let the flavors mingle a little before serving. Leftover dip should be covered and refrigerated for up to 3 days. I like to store it in these containers (affiliate link.)
