1 cup heavy cream
1 (16 ounce) can mushrooms, drained
1 pound cooked, cubed chicken breast meat
2 (8 ounce) cans water chestnuts, drained and sliced

1 (5.5 ounce) can baby corn, drained
1 ½ tablespoons teriyaki sauce
1 tablespoon salted butter

Steps:

  • Mix soup and cream together in a large saucepan over medium-low heat. Stir in mushrooms and simmer over low heat for 5 minutes; add chicken, water chestnuts, bamboo shoots, corn, teriyaki sauce, and butter. Simmer all together for 10 minutes. Finally, stir in cooked broccoli and simmer for 5 minutes.

8 skin-on, bone-in chicken thighs (about 6 ounces each)
2 teaspoons toasted sesame oil
1/4 teaspoon five-spice powder
Kosher salt and freshly ground pepper
1/4 cup hoisin sauce
1 tablespoon packed light or dark brown sugar
3 cloves garlic
2 small bunches broccolini
1 bunch baby carrots, greens trimmed
1 tablespoon vegetable oil
2 teaspoons toasted sesame seeds
1 scallion, thinly sliced

Steps:

  • Position a rack in the upper third of the oven; preheat to 450 degrees F. Put the chicken on a foil-lined rimmed baking sheet; drizzle with 1 teaspoon sesame oil, sprinkle with the five-spice powder and toss. Arrange skin-side up; season with salt and pepper. Roast until the chicken is cooked through and the skin is crisp, 25 minutes.
  • Meanwhile, stir the hoisin sauce, brown sugar and remaining 1 teaspoon sesame oil in a small bowl. Grate 1 garlic clove into the sauce; set aside. Chop the remaining garlic. Trim the broccolini and slice lengthwise into long florets. Trim and scrub the carrots; halve or quarter lengthwise.
  • Preheat the broiler. Brush half the hoisin sauce mixture on the chicken and broil until bubbling, 1 to 2 minutes. Brush with the remaining sauce and broil 1 to 2 more minutes.
  • Heat the vegetable oil in a large nonstick skillet over medium-high heat. Add the broccolini, carrots and chopped garlic; season with salt and pepper. Cook, stirring, until the garlic is soft, 1 minute. Add 1/4 cup water, cover and cook until the vegetables are crisp-tender, about 4 minutes. Uncover and stir in the sesame seeds.
  • Divide the chicken among plates; top with the scallion. Serve with the vegetables.

4 cups fresh or frozen broccoli florets
4 teaspoons canola oil
1 1/2 teaspoons toasted sesame oil
1 cup 1/4-inch-thick half-moon slices onion
2 tablespoons minced ginger (about a 1-inch piece)
6 cloves garlic, minced
4 whole small dried chiles or 1/2 teaspoon chile oil
1 1/2 pounds skinless, boneless chicken breast, cut in 1-inch cubes
4 teaspoons cashew butter
3 tablespoons tamari
1/2 cup unsalted whole cashews
Salt and freshly ground black pepper

Steps:

  • Bring a large saucepan of water to a boil. Add the broccoli and cook until bright green and tender-crisp, about 2 minutes. Drain and set aside.
  • Heat the canola and sesame oils in a large nonstick skillet set over medium heat. Add the onions, ginger, garlic and chiles and saute until the onions are soft, 3 to 5 minutes. Increase the heat to medium-high, add the chicken and cook, stirring occasionally, until the chicken is cooked through, 5 to 7 minutes. Transfer to a plate.
  • In a small bowl, whisk the cashew butter and tamari and pour into the skillet, stirring to remove any lumps. Add the chicken back in the pan, stir in the broccoli and cashews, and stir to heat through and completely coat with the sauce. Season with salt and pepper, then serve.

1 head broccoli, cut into florets
3 garlic cloves, minced
3 tablespoons brown sugar
1/4 cup sesame oil
1/4 cup soy sauce
1 teaspoon grated gingerroot (optional)

Steps:

  • Cut chicken into pieces (strips or chunks).
  • Put a little olive oil and water in the pan, heat and cook the chicken until no longer pink on medium high, stirring frequently.
  • Drain if needed.
  • Mix brown sugar, sesame oil, soy sauce, and ginger and whisk.
  • Add sauce and broccoli florets and lower temp to medium and cover.
  • Stir occasionally.
  • When the broccoli appears to be tender, but not mushy, it's done.
  • Just use your best judgement.

  • Bring a large pot of salted water to a boil. Parboil the broccoli for a minute and remove. Add the Chinese noodles and cook for 5 minutes or until al dente.
  • In a large skillet heat the vegetable and sesame oils. When hot, add the scallion, ginger and garlic and cook, stirring for 30 seconds.
  • Add the chicken and saute, stirring continuously until no longer pink. Add the soy sauce, and sugar and simmer 10 seconds. Stir in the parboiled broccoli.
  • Add the broth mixed with cornstarch and just bring to a simmer. Simmer until lightly thickened. Serve over noodles and garnish with toasted peanuts.

2 lbs boneless skinless chicken thighs
7 tablespoons sugar
1/4 cup fish sauce
2 tablespoons grated fresh ginger
1 lb broccoli, florets cut int 1 -inch pieces, stalks peeled and sliced 1/4 inch thick
2 teaspoons cornstarch
1/2 teaspoon pepper
1/2 cup chopped fresh cilantro leaves and stems

Steps:

  • combine baking soda and 1 1/4 cups cold water in large bowl. Add chicken and toss to coat. Let stand at room temperature for 15 minutes. Rinse chicken in cold water and drain well.
  • Meanwhile, combine sugar and 3 tablespoons water in small saucepan. Bring to boil over medium-high heat and cook, without stirring, until mixture begins to turn golden, 4 to 6 minutes. Reduce heat to medium-low and continue to cook, gently swirling saucepan, until sugar turns color of molasses and registers between 390 and 400 degrees, 4 to 6 minutes longer. (Caramel will produce some smoke during the last 1 to 2 minutes of cooking.) Immediately remove saucepan from heat and carefully pour in 3/4 cup hot water (mixture will bubble and steam vigorously). When bubbling has subsided, return saucepan to medium heat and stir to dissolve caramel.
  • Transfer caramel to 12-inch skillet and stir in fish sauce and ginger. Add chicken and bring to simmer over medium-high heat. Reduce heat to medium-low, cover, and simmer until chicken is forktender and registers 205 degrees, 30 -40 minutes, flipping chicken halfway through simmering. Transfer chicken to serving dish and cover to keep warm.
  • Bring 1 inch water to boil in Dutch oven. Lower insert or steamer basket with broccoli into pot so it rests above water; cover and simmer until broccoli is just tender, 4.5 to 5 minutes. Transfer broccoli to serving dish with chicken.
  • While broccoli cooks, bring sauce to boil over medium-high heat and cook until reduced to 1 1/4 cups, 3 to 5 minutes. Whisk cornstarch and 1 tablespoon water together in small bowl, then whisk into sauce; simmer until slightly thickened, about 1 minute. Stir in pepper. Pour 1/4 cup sauce over chicken and broccoli. Sprinkle with cilantro and serve, passing remaining sauce separately.
