- Bring water, peas, and salt to a boil in a saucepan; cook until peas are just tender, about 2 minutes. Drain and return peas to saucepan. Reduce heat to medium and stir in flour. Add butter and enough milk to barely cover peas. Cook and stir until thickened, 5 to 10 minutes.

- Heat undrained peas in a small saucepan.
- In a second small saucepan; melt butter. Add flour and whisk for 30 seconds.
- Add milk to the butter mixture, stirring over medium heat until thickened.
- Pour the mixture into the peas, and continue to cook until thickened to your desired consistency. Add salt and black pepper, and stir before serving.

- Melt the butter in a large saute pan over medium-high heat. Once melted and foamy, add the onion, garlic, and red pepper flakes and saute until tender, about 2 to 3 minutes. Season with salt and pepper. Add the heavy cream and let thicken, stirring for just 1 minute.
- Add the peas and the mint and cook until the peas are bright green and warmed through, another 5 minutes.

- Melt butter in a large pan, add flour and cook over medium heat until light brown and pasty (1-2 minutes).
- Slowly add milk and whisk until all flour bits are broken up. Continue to whisk while milk comes to a boil and thickens, and add salt and pepper to taste.
- When cream sauce is slightly thickened, add salmon and peas and continue to cook until sauce is thickened up and the salmon and peas are heated through. Stir in lemon juice and dill.
- Serve over hot white rice, toasted bread, a hot biscuit or puff pastry.

- Place potatoes in saucepan, cover with water and cook until tender.
- Cook peas according to package directions, adding the sugar.
- Melt the butter in a saucepan; add flour, salt and pepper to form a paste.
- Gradually add the milk. Bring to a boil; boil for 1 minute -- stirring often. Add dill; cook until thickened and bubbly.
- Drain potatoes and peas and return to one saucepan. Pour sauce over; stir to combine.
- Serve immediately. Garnish with a sprig of fresh dill if desired.
SALMON PATTIES WITH CREAMED PEAS
Steps:
- Drain and flake salmon. Set aside. Melt butter, add onion and cook till tender.
- In medium bowl mix all ingredients for salmon patties with butter and onions (except shortening and 1/2 cup of cracker crumbs). Mix well, form into patties and coat with remaining cracker crumbs. Melt shortening in fry pan and brown patties.
- Sauce:
- Mix all sauce ingredients except peas together and bring to a boil; cook until thick. Add peas and cook on low until peas are heated.

- Begin by melting the margarine in a 2-quart saucepan. Use a fork or a whisk to stir in the flour making sure it is smooth. Gradually stir in the milk. If you have a whisk you can go a little faster because a whisk can beat out any lumps. If you are using a fork then go very slowly so you can keep the mixture smooth. When the mixture is smooth stir in the sugar, salt and pepper. Cook and stir the sauce until it begins to boil. Allow it to boil for a full minute by the clock. Now remove the sauce from the heat.
- Drain the peas and the tuna. Stir gently and reheat only till boiling again. Do not overcook or the peas will get mushy. Serve over buttered toast or biscuits, rice, or noodles. The salt may be replaced with celery salt or garlic salt if desired.
- To use fozen peas instead of canned, simply replace the canned peas with 2 cups frozen peas. Allow the sauce to reheat for a minute or two so you will be sure the peas are cooked through. Do not ovecook the frozen peas wither. This is vital for a good dish.

- In a large skillet over medium-low heat, melt butter.
- Cook the butter stirring with a wooden spoon until golden brown.
- Add in sliced mushroom; cook until all the moisture is released.
- Add in onions and garlic; cook stirring for about 3 minutes.
- Add in flour and cayenne pepper and cook stirring with a wooden spoon for 1 minute, then slowly add in broth and stir with wooden spoon until thickened.
- Add in whipping cream, Parmesan cheese, chicken bouillon, cubed chicken and peas.
- Reduce the heat to low and cook stirring until heated through and thickened.
- Add in cheddar cheese and stir until melted.
- Simmer for about 20 minutes over low heat stirring often.
- Season with seasoned salt or white salt and black pepper.
- If you would like a thicker sauce just mix 1-2 tablespoons flour in 1/4 cup milk until smooth and add to the simmering sauce.
- Divide the mixture onto the toast, then sprinkle with more Parmesan cheese if desired.
