- Peel potatoes and rinse in cold water (cut potatoes in half if very large). If you want the smoothest potatoes possible, remove the little knots from the potatoes with a small spoon or the tip of a potatoes peeler. Place potatoes in a large pot (5 Qt+) and cover potatoes with cold water. Bring to a boil and cook partially covered until easily pierced with a knife (boil 20-25 min depending on the size of your potatoes; mine took 22 min).
- Drain well and transfer to the bowl of your stand mixer. Grab the whisk attachment and mash potatoes lightly by hand to break them up. Fit mixer with whisk attachment and start on low speed 30 sec then increase to medium and slowly drizzle in 1 to 1 1/4 cups of the HOT milk to reach your desired texture.
- With mixer on, add softened butter 1 Tbsp at a time, waiting a few seconds between each addition. Potatoes will be whipped and fluffy. Finally add 1 1/2 tsp salt, or add to taste.

- Scrub the potatoes clean and add to a deep pot. Completely cover the potatoes with water, about 1/2 inch above the potatoes. Bring the potatoes to a boil and add 1/2 teaspoon of kosher salt. Boil the potatoes for 20 to 30 minutes or until they are very easily pierced with a fork and the skin pulls away from the potato where cut.
- Drain the potatoes, and while still hot, use a paper towel to wipe the skin away from the potatoes, then add back to the warm pot.
- Gently smash the hot potatoes with the tines of a hand mixer and add the butter to the potatoes. Cover with a lid for the butter to melt, about 3-4 minutes.*
- Add the half and half or other liquid dairy to the pot and set it in the kitchen sink so the potatoes don't fly around the kitchen while whipping. Cream the potatoes with the hand mixer until smooth, rotating the pot counter-clockwise as you mix. Don't over mix the potatoes. Add the remaining 1/2 teaspoon of kosher salt and black pepper to taste, and add more dairy to get the consistency you like best.
- Add more butter if you'd like, and garnish with minced chives, green onion, or serve plain.

- Peel the potatoes and rinse them in cold water. Chop the potatoes in fourths. Place the potatoes into a large pot and cover with water. Bring to a boil and cook until fork tender, 20 to 25 minutes.

- Peel the potatoes and cut into large cubes.
- Add potatoes to the Instant Pot and cover with just enough cold water to submerge most of the potatoes. It's fine if they are not completely underwater as they will still cook from the steam. Season with 1.5 teaspoons of salt (don't worry, not all of that salt is absorbed during cooking!)
- Secure and lock the lid; make sure the pressure handle is pointing to Sealing on Duo Classic. Select Manual/Pressure Cook and adjust the timer to 2 minutes on HIGH pressure. After a few beeps/seconds, the ON sign will come on indicating the pot is heating up and the pressure is building; pressurizing will take about 5-7 minutes and then the 2-minute timer will begin.
- Once the timer is done, release the pressure manually after a couple of minutes. Press the steam knob down gradually (or point to Venting on older models).
- While the potatoes are cooking, prepare butter and sour cream.
- Open the lid and remove the inner pot. Carefully, drain most of the liquid and return cooked potatoes to the pot. Add the butter and sour cream and use a masher to break down the potatoes while absorbing butter and sour cream. Mash it to a fairly smooth consistency and use a whisk to get it even fluffier and creamier. Taste for salt and add a little more if needed. You can also add a splash of milk or more sour cream if you like a thinner consistency.
- Top with a little extra butter and cracked pepper if you wish.
