HARD TIMES CREAMED TUNA

Hard Times Creamed Tuna image

Times were tough for my newly divorced mom in the 70's. I remember eating creamed tuna on toast with a green salad on the side at least weekly. It was one of my favorite meals, and I had no idea we were eating it out of necessity. Times aren't so tough now, but I still make this about once a month. It's great when you're in a hurry, or have limited supplies on hand. My kids love it too!

Grandma's Creamed Tuna and Eggs on Biscuits image

Categories     One Dish Meal

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 11

3 tablespoons flour
3 tablespoons butter
1 1/2 cups milk
1 teaspoon salt
1 teaspoon black pepper, course grind
6 ounces albacore tuna or 6 ounces chunk tuna
3 hard-boiled eggs, sliced
3 ounces diced pimentos
1/2 cup frozen baby peas
1 (3 ounce) package cream cheese (optional)
8 -12 biscuits

Steps:

  • Prepare biscuits and have them baking in oven.
  • In a deep sauce pan melt the butter and whisk in flour to make a roux.
  • When your butter/flour mixture has cooked for a few minutes begin to add the milk slowly, whisking frequently to ensure a smooth white sauce.
  • Add salt and pepper.
  • Bring to an "almost" boil, while continuing to whisk. Once you reach this point turn your heat back down to low. (You might have to take pan off of the burner for a minute or two if you are using electric so as not to scald white sauce).
  • Add tuna, peas, and pimentos and lightly stir to combine ingredients throughout the sauce.
  • **Here is where you would add your cream cheese (cut into small cubes) to your sauce if you are using it.
  • Cook on low to medium low heat until heated thorougly, stirring occasionally.
  • Just before biscuits are done slice your hard boiled eggs and add to your creamed tuna.
  • Give the sauce one last stir and then serve over hot biscuits.

CREAMED TUNA AND PEAS

Categories     < 15 Mins

Time 10m

Yield 4 serving(s)

Number Of Ingredients 8

1/4 cup margarine
1/4 cup flour
2 cups milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon sugar
15 ounces peas
6 ounces tuna

Steps:

  • Begin by melting the margarine in a 2-quart saucepan. Use a fork or a whisk to stir in the flour making sure it is smooth. Gradually stir in the milk. If you have a whisk you can go a little faster because a whisk can beat out any lumps. If you are using a fork then go very slowly so you can keep the mixture smooth. When the mixture is smooth stir in the sugar, salt and pepper. Cook and stir the sauce until it begins to boil. Allow it to boil for a full minute by the clock. Now remove the sauce from the heat.
  • Drain the peas and the tuna. Stir gently and reheat only till boiling again. Do not overcook or the peas will get mushy. Serve over buttered toast or biscuits, rice, or noodles. The salt may be replaced with celery salt or garlic salt if desired.
  • To use fozen peas instead of canned, simply replace the canned peas with 2 cups frozen peas. Allow the sauce to reheat for a minute or two so you will be sure the peas are cooked through. Do not ovecook the frozen peas wither. This is vital for a good dish.
