Steps:
- Using a medium sized stock pot bring water to a boil, add potatoes and cook until tender. Drain reserving 1 cup liquid.
- Stir in butter, onion and flour. Season with salt and pepper. Gradually stir in potatoes, reserved liquid, milk, sugar, cheese, and ham. Simmer for 30 minutes, stirring frequently.

After constant tinkering with this recipe, I have come up with soup which is the definitive cream of potato soup. Rich with vegetables and wonderfully spiced, you will find yourself doubling this recipe often!

- In a large stock pot, saute onion, celery, carrots, garlic and parsley in butter until soft but not browned. Sprinkle in flour and cook, stirring for 2 minutes. Add broth slowly, stirring as you add.
- Add milk, potatoes, Worcestershire sauce, dry mustard, allspice, celery seed, thyme, seasoning salt, dry white wine, cayenne pepper and chicken granules. - In a 3 quart saucepan over medium-high heat, melt butter or margarine. Add onion and cook until tender, about 5 minutes. Stir in flour and cook until flour has blended with onion mixture.
- Add chicken broth and cook, stirring constantly, until mixture is slightly thickened. Add milk and heat just to boiling, stirring constantly.

GRANDMA'S CREAM OF POTATO SOUP OR BROCCOLI SOUP

- Empty cans of chicken broth in pot.
- Add cubed potatoes and bring to a boil.
- While potatoes are starting to cook pan fry bacon until crisp and add bacon grease to chicken and potato broth.
- Crumble bacon and add to broth.
- Add diced ham to broth (optional).
- In a sauce pan melt butter and add diced onion, celery and carrots.
- Pan fry until soft.
- When potatoes are done add the celery, carrot and onion mixture with butter to broth.
- Reduce heat to medium and add about 1/4 to 1/2 of the quart of heavy cream.
- Be careful not to have soup at a heavy boil or cream will curdle.
- Add enough cream to make soup look creamy throughout.
- Add cheese (optional).
- Mix corn starch with very cold water and add to soup.
- Continue medium boil until soup thickens.
- If it isn't thick enough repeat corn starch and add slowly.
- Remove from heat and enjoy.
- Soup will thicken when it gets cold.
- Can add milk or water to thin out.

CREAM OF POTATO SOUP
This soup isn't like the potato soups you find in resturaunts. This is an old fashioned Cream of Potato soup. I got the orignal recipe in home ec. in high school. This soup is thick and hearty. Perfect for cold days or when you just want some comfort food. I've given alternate measurements for a smaller portion at the bottom of the recipe along with tips to make thinner and/or chunkier.

- Now before starting the soup I cook the potatoes. I put them in a colander to cool and drain while I get the soup boiling. I also smash the lightly. They will still be chunky but in a big mushy clump.
- Melt butter in sauce pan (you'll need a big one) and remove from heat. Add flour, salt, and pepper. Mix with butter to form a paste.
- Slowly add milk. I add about 1/8 cup and mix well with the flour until it's all blended. I do this a few times until the flour and milk are blended well and start to get thinned out. Then I add the rest of the milk.
- Cook on med-high heat. STIR CONSTANTLY I really can't stress enough how important it is to stir constantly. If you don't the milk will burn. Bring to a boil.
- Add potatoes a little at at time and stir well in between each addition. Return soup to boiling and you're done! My husband also like to add cheddar cheese to his bowl. You may need to add more salt or pepper depending on your tastes.
- There are a lot of ways to change this up. You can just add the potatoes in diced if you want bigger bites of potato. My husband likes his soup thick and I find smashing the potatoes before adding to the soup helps thicken it. If you want your soup a little thinner you can add less potatoes or add more milk.
- If this makes too much soup for you (it's enough to feed 4 as a meal) here is the original recipe: 4 T butter, 4 T flour, 1 t salt, 1/2 t pepper, 4 cups milk, 4 cups potatoes.
- I originally doubled it but decided that was too thin so cut back on 1 of every thing except the potatoes. A guideline to follow is to remember for every cup of milk use 1 T butter, 1 T flour, 1/4 t salt, and 1/8 t pepper.

CREAM OF POTATO AND CARROT CHEDDAR SOUP (LOWER FAT)
It's cold here today and I wanted soup. I looked through some recipes and came across one that sounded interesting but I modified it heavily based on what I had. The result was delicious and very very filling. This is meatless though not vegetarian because of the worcestershire sauce (that has anchovies in it).

- Peel and grate the carrots and potatoes (putting the potatoes into water so they don't turn colors).
- Chop the onions. (I like a large dice on onions though I tried to make this one a bit smaller. If you are so inclined, chop them fine.).
- Heat approximately 1 teaspoons olive oil in a large stock pot. (I spray the bottom of the pan a few times with a mister filled with olive oil.) Add the onions and stir. (At this point I spray a little more olive oil on top of the onions.).
- Once the onions are soft, add the broth, the carrots, the potatoes (wring them out if they have been sitting in water), and the hominy. Stir well.
- Then add the herbes, the bay leaf, the hot sauce, the worcestershire sauce, the sugar, and salt and pepper to taste if desired.
- Let it cook on medium until the vegetables are tender (approximately 20 minutes but I had mine grated thick. If yours are grated thin it could be less.).
- Add the half and half, the skim milk, and the cheese. Stir until the cheese is melted.
- Remove the bay leaf and serve with crusty bread.

- Add shredded sharp cheddar cheese and stir until cheese is completely melted and dissolved into the mixture. Sprinkle sugar, pepper, and salt into soup, stir. Let soup simmer very slowly for 20 - 30 minutes taking care not to let soup scorch. When ready to serve garnish with shredded Colby cheese, jack cheese and maybe a little parsley. Add a crisp salad and hard rolls and you have a wonderful meal.
