3 cups fresh green beans, trimmed and cut into 1-inch pieces
1 tablespoon baking soda
1 ½ cups peeled and diced potatoes
⅓ cup melted butter
½ cup diced onion
⅓ cup bacon bits
1 (10.5 ounce) can cream of chicken soup
3 cups milk
salt and ground black pepper to taste

Steps:

  • Place the green beans into a pot with enough water to cover. Add the baking soda to the water; bring the mixture to a boil, reduce heat to medium, and cook until the green beans are nearly tender, 7 to 10 minutes. Drain the water from the green beans; set aside.
  • Place the potatoes into a large pot with enough salted water to cover; bring to a boil, reduce heat to medium, and continue cooking until almost tender, about 20 minutes. Remove from heat, but do not drain the water from the pot.
  • Heat the butter in a large skillet over medium heat. Cook the onion and bacon bits in the melted butter until the onions are soft and translucent, 5 to 7 minutes; add to the large pot with the potatoes, along with the cream of chicken soup and milk; stir until smooth. Add the green beans. Season with salt and pepper.
  • Place the large pot over low heat and cook the soup at a simmer until hot and the flavors have melded, about 30 minutes.

1 lb green or yellow string beans ((fresh or frozen))
1 tbsp water (or a drizzle of olive oil)
13 cloves garlic
2.5 cups cashew milk ((plain, unsweetened))
3.5 cups vegetable stock ((low sodium))
1 carrot (- sliced into thin rounds)
4 tbsp whole wheat pastry flour ((or all purpose organic flour))
2 tsp onion powder
2 leaves bay
5 sprigs fresh dill
1 cup fresh tomatoes (- chopped)
1/3 cup fresh dill (- roughly chopped)
1 pinch red pepper flakes (+ more to taste)
sea salt to taste
2 tbsp nutritional yeast ((OPTIONAL))

Steps:

  • Rinse the beans, discard the ends and snap them in half or smaller pieces to your liking.
  • If desired you can steam the beans in advance. Prepare a double boiler with 2 inches of water in the bottom pot. Bring to a simmer and then place the green string beans in the top basket. Cover with a lid and steam for 10 to 15 minutes or until desired tenderness is achieved. Check after 10 minutes to make sure you don't overcook the beans. Remove from the steam and transfer to a bowl. Rinse with ice cold water to stop the cooking process at this point. Refrigerate until ready to use. (Alternatively you can use the 1- pot method below but take good care not to overcook them).

I was so surprised when I found this recipe. It's made with fresh green beans, and uses potatoes to thicken it instead of flour or cornstarch. I especially like the tarragon in this soup. If it gets too thick, use the larger amount of whipping cream. To save calories, I like to use fat-free half and half. This was in a box of my mother's clipped recipes. I don't know where she clipped it from....looked like magazine paper to me.

6 green onions, sliced
6 shallots, chopped
1 garlic clove, minced
3 tablespoons butter, melted
2 medium baking potatoes, peeled and diced
4 cups chicken broth
2 lbs fresh green beans, cut into 2 inch pieces
1/2-1 cup whipped cream or 1/2-1 cup half & half light cream
1 tablespoon lemon juice
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Saute the green onions, shallot and garlic in the butter in a medium skillet over medium heat, stirring constantly, until tender. Set aside.
  • Cook the diced potatoes in boiling water to cover for 15 minutes, or until tender (depends on how small you diced them); drain well, and set aside.
  • Bring the chicken broth to a boil in a large saucepan; add green beans, and cook 30 to 35 minutes or until tender. Add the reserved green onions and potato; stir well.
  • Transfer half of the green bean mixture to the container of an electric blender; cover and process until smooth, stopping once to scrape down the sides. Repeat the procedure with the remaining green bean mixture. (Sometimes I like to use my immersion blender, leaving some of the pieces whole). Return the pureed mixture to the saucepan and bring to a boil. Reduce heat; stir in whipping cream or half and half, lemon juice, and tarragon. Cook until thoroughly heated. Serve, and sprinkle with black pepper.

  • Gather the ingredients.

  • Remove green beans to a colander, reserving cooking liquid.

2 tbsp olive oil
1 small chopped onion
2 cloves garlic chopped
2 medium potatoes diced
1 medium chopped carrot
2 cups diced tomatoes ((fresh or canned))
3 cups green beans ((fresh or frozen, thawed) cut into pieces)
5 cups chicken ((or vegetable) stock (can use hot water and chicken base))
1/2 tsp black pepper
1 tsp salt - or more depending on taste
1/4 tsp dry basil

Steps:

  • In a large sauce pan, over medium heat saute onions and carrots in olive oil for 3 minutes.
  • Add chicken stock, potatoes, tomatoes and garlic and bring to a boil. Add salt, pepper and basil.
  • Reduce heat and simmer for 15 minutes. Add green beans and simmer for 15 more minutes, until tender. (I do not like over cooked green beans, that's why I add them 15 minutes after all the other vegetables.).
  • Cook soup until all vegetables appear cooked through, it usually takes me 30-35 minutes. Cooking time depends on the king of pot used, stove, vegetables amounts of stock used.
  • Serve hot. You can garnish with chopped parsley or dill.

8 cups ham, chicken, or vegetable broth
2 all-purpose medium potatoes, peeled and cut into 1/2 inch cubes
1 clove of garlic, minced
1 medium onion, chopped fine
1 stick (8 Tablespoons) butter
4 Tablespoons all-purpose flour
2 cups whole milk
8 ounces sour cream
1/4 cup white distilled or cider vinegar
Fresh dill to taste, chopped
OPTIONAL: 3 or 4 slices of bacon, fried crisp and crumbled for garnish

Steps:

  • Cook beans and cubed potatoes with garlic in broth in large pot until tender, about 20 to 25 minutes.
  • Meanwhile, melt the butter in a small saute pan, add the onions and cook until soft, but not browned. Set aside.
  • Place flour in a mixing bowl and take some of the 2 cups milk and whisk it with the flour to make a smooth paste. Whisk in the remaining milk and sour cream until smooth. Set aside.
  • When beans and potatoes are tender, add the onions and butter to the pot with the soup. Temper the sour cream mixture slowly by whisking in a few ladles of the hot soup to it , then stir in the sour cream mixture into the hot soup. Simmer a few minutes, stirring frequently, but do not boil. Remove from heat, stir in the vinegar.
  • Adjust seasonings to taste with salt and black pepper. If you want the soup thinner, add more milk to bring it to the consistency you desire. Add dill to taste.
  • Serve topped with crumbled bacon when served, if desired.

1 pound fresh mushrooms (cleaned and sliced)
1 medium white onion (chopped)
2 cloves garlic (minced)
1 cup whole milk
one 11.5 oz can Cream of Mushroom soup
2 tablespoons all purpose flour
one 16 ounce can French fried onions

Steps:

  • Preheat your oven to 350 °F. Get out a 9x13 baking pan and lightly coat with butter. Set aside.
  • Clean and trim the green beans. In the microwave, steam the green beans until tender crisp, about 3 minutes.
  • Run the green beans under cold water to stop them from cooking and set aside.
  • Melt the butter in a large skillet and sauté the mushrooms and onions. Once they are cooked, add the minced garlic and continue to cook until fragrant.
  • Whisk together the milk, mushroom soup and flour until completely combined and smooth.
  • Add the cooked green beans to the skillet. Pour the mushroom soup mixture over the vegetables and stir until coated.
