Baked Creamed Corn With Red Bell Peppers and Jalapenos image

8 ears corn, husked
2 red bell peppers, diced
2 jalapeno peppers, diced
1 cup heavy cream
Kosher salt and freshly ground pepper
1 stick salted butter, cut into pieces

Steps:

  • Preheat the oven to 350 degrees F. Slice the corn kernels from the ear in a large, deep bowl with a sharp knife. Turn the knife to the dull side and scrape the cob all the way down to remove all the bits of kernel and the creamy milk.
  • Add the red bell peppers, jalapenos, heavy cream, 2 teaspoons salt, a generous amount of pepper and the butter and mix well. Pour into a 9-by-13-inch baking dish. Bake until hot and bubbly, 45 to 55 minutes.

2 cups fresh sweet corn (about 2 cobs)
2 sweet red peppers
2 celery ribs, thinly sliced
1 garlic clove, peeled and finely chopped
4 vine ripe tomatoes, chopped
2 cups rocket (or arugula)
1/4 cup flat leaf parsley
3 tablespoons olive oil
1 tablespoon red wine vinegar
salt and pepper, to taste
1 -2 tablespoon parmesan cheese, shavings

Steps:

  • Remove all the husks and fibres from the cobs and slice the kernels off the cobs.
  • Put the kernels in a pan with some water and bring to the boil. Cook for about 8 minutes or until tender. Drain well and reserve.
  • Remove the caps, pith and seeds from the peppers and finely chop the flesh.
  • Combine the corn, peppers, celery, garlic, tomatoes, rocket and parsley in a large bowl and mix thoroughly.
  • In a small bowl, whisk the olive oil, vinegar, salt and pepper together. Pour over salad.
  • Sprinkle Parmesan shavings over salad and serve.

1/2 cup half-and-half cream
1 tablespoon brown sugar
1 tablespoon dried parsley flakes
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1 package (8 ounces) cream cheese, cubed and softened

Steps:

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon, leaving drippings in pan; drain on paper towels., Cook and stir onion and sweet red pepper in bacon drippings over medium-high heat until tender, 5-6 minutes., In a greased 4-qt. slow cooker, combine corn, ham, cream, brown sugar, parsley, paprika, salt, pepper, bacon and onion mixture. 2 tablespoons unsalted butter
1 cup chopped onion
2 cloves minced garlic
1/4 cup tomato paste
6 cups chicken stock
2 cups heavy cream
2 tablespoons chopped fresh cilantro leaves
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 to 2 tablespoons cornstarch
1 cup sweet corn kernels, lightly roasted
Cilantro Lime Sour Cream, recipe follows
1 cup sour cream
1/2 lime, juiced
1 teaspoon finely minced fresh cilantro leaves

Steps:

  • Slice the peppers in half lengthwise; remove stem, seeds and membrane. Place under the broiler skin side up until the skin turns black and blisters. Remove and immediately place in a small paper bag or plastic container with a tight lid. Place in the freezer for 10 minutes; this will loosen the roasted skin. Remove peppers and rub off the black skin with your fingers. Chop skinned peppers and set aside.
  • Saute the butter, onions, and garlic until soft in a heavy bottomed soup pot on medium-low heat. Add the reserved red peppers, tomato paste, and chicken stock. Bring to a low boil, reduce the heat, and then simmer for 10 minutes. Stir in the heavy cream, cilantro, salt, and pepper. Stir in the cornstarch mixed with a little cold water to thicken. Simmer 5 minutes. *Let the soup cool slightly, and then blend in batches in a blender, or use an immersion blender to puree. Sprinkle the roasted corn over the soup before serving and top with a dollop of Cilantro Lime Sour Cream.
  • In a mixing bowl, whisk all ingredients vigorously until light and creamy.

2 tablespoons onions, chopped
2 1/2 cups corn kernels (thawed if frozen)
1/2 red sweet bell pepper, chopped
2 tablespoons flour
2 cups chicken broth
1 (12 ounce) can reduced-fat evaporated milk
salt and pepper, to taste

Steps:

  • In a large saucepan, melt the butter over medium-low heat. Add the onion and saute until translucent.
  • Add the corn and the bell pepper. Cook, stirring often until the vegetables begin to soften.
  • Add the onion and stir to combine. Make sure it is well incorporated. Cook for a minute, then add the evaporated milk and the chicken broth. Mix in using a wire whisk. Bing to a boil, whisking constantly, then lower the heat and cook until soup is thickened. Check seasoning and add salt and pepper to taste.
  • At this point soup can be pureed in small batches in a blender or can be left as is.
  • Serve hot topped with croutons, if desired.
