DREAMY TROPICAL CREAM FIZZ

Make a tropical drink for kids and adults that doubles as dessert!

Ingredients

2 cups mango juice or tropical juice blend
1/4 to 1/2 cup lime juice
12 to 14 ice cubes
1 cup club soda
1 pint coconut ice cream, coconut sorbet or vanilla ice cream
Large candy sprinkles, if desired

Steps:

Chill glass jars or goblets in freezer several hours before serving, if desired.
Place mango juice, lime juice and ice cubes in blender. Cover and blend on high speed about 45 seconds or until smooth. Pour mixture into 4 jars.
Pour 1/4 cup club soda into each of the jars. Add 1 large scoop ice cream to each jar. Garnish with candy sprinkles.

KAHLUA BANANA CREAM FIZZ

This one is a little different and its out of my 1986 Kahlua recipe book. My wife and I liked it, so I decided to post it. It makes two drinks. But I could have drank it all.

Ingredients

2 ounces Kahlua
1 ounce rum
1 banana, sliced
3/4 ounce lime juice
2 ounces half-and-half
1 cup ice, finely crushed
1 ounce club soda, chilled

Steps:

In a blender, combine all the ingredients except soda.
Blend smooth.
Pour into 10 oz. glasses. Add club soda.
Garnish with banana chunks and cherries, if desired. (I skipped this step).
Makes 2 drinks or one nice big one.

CREAM FIZZ

Fizzes, which have been popular drinks in the late morning and afternoon, are usually served in highball glasses. They are made from liquor, citrus juices, and sugar, shaken with ice. The mixture is strained into glasses, which are then filled with club soda or other carbonated drink, including champagne. Egg, both yolk and white, is used in some fizzes.

3 ounces gin
1 tablespoon superfine sugar
2 tablespoons lemon juice
1 tablespoon lime juice
2 teaspoons heavy cream
3 or 4 ice cubes
Club soda

Steps:

Combine all ingredients except the soda in a cocktail shaker and shake vigorously. Strain into a highball glass and fill with soda.

CREAM GIN FIZZ

1 1/2 ounces gin
1 1/2 ounces milk
3 teaspoons sugar
4 tablespoons lime juice
3 or 4 ice cubes
1/2 cup crushed ice
Club soda

Steps:

Combine all ingredients except the crushed ice and soda in a cocktail shaker and shake vigorously. Put the crushed ice in a highball glass, and strain in the mixture. Add soda to fill and stir quickly to make it foam up.

Ingredients

2 scoops vanilla ice cream
1 scoop lime sherbet
4 ounces margarita mix, well chilled
1 fluid ounce tequila (optional)
2 ounces carbonated water, well chilled (seltzer)
3 maraschino cherries (garnish)

Steps:

Place 1 scoop of ice cream into a parfait glass. Place sherbet atop of the ice cream, then the other scoop of ice cream.
Pour margarita mix (and tequilla if using) over scoops. Splash with the seltzer water over top.
Garnish with marachino cherries and serve with a spoon and a straw.

Ingredients

2/3 cup sugar
2/3 cup water
2 cups fresh or frozen blueberries, thawed
1/4 cup heavy whipping cream
8 freezer pop molds or 8 paper cups (3 ounces each) and wooden pop sticks

Steps:

For sugar syrup, in a small saucepan, combine sugar and water; bring to a boil, stirring to dissolve sugar. Cool completely., Meanwhile, in a bowl, coarsely mash blueberries; stir in cream and sugar syrup. Spoon into molds or paper cups. Top molds with holders. If using cups, top with foil and insert sticks through foil. Freeze until firm. To serve, let pops stand at room temperature 10 minutes before unmolding.
