CREAMY MACARONI AND CHEESE
This is my absolute very favorite macaroni and cheese recipe and I have a large collection of m/c recipes. Adapted from Southern Living. I don't make this very often because I could literally eat the whole thing and lick the dish clean.

Steps:
- In a big skillet, melt the butter over medium-high heat.
- Whisk the flour in gradually until the mixture is smooth.
- Cook and whisk continually for 2 minutes.
- Add in salt, pepper, cayenne, and garlic; stir to combine.
- Gradually whisk in half-and-half and milk.
- Cook and whisk continually for 8-10 minutes or until mixture is thickened.
- Add in half of the sharp cheddar cheese; stir.
- Add in all of the extra-sharp cheddar cheese; stir until smooth.
- Take skillet off stove burner.
- Mix together the cooked macaroni and cheese mixture; transfer to a greased 13x9 inch casserole dish.
- Sprinkle with the remaining sharp cheddar cheese.
- Bake in a 350° oven for 20 minutes (may need to bake longer for a crispy top).
CREAMY BAKED MACARONI AND CHEESE
This baked mac and cheese - perfect for a large crowd or as a side dish - is super simple to make. The cream cheese gives it richness and a little tang.

- Set an oven rack 6 inches from the heat source and preheat the oven to 425 degrees F.
- Bring a large pot of salted water to a boil. Add the macaroni and cook until it is al dente, about 6 minutes. Strain, reserving 1 3/4 cups of the pasta water. Set aside.
- Heat the half-and-half and cayenne in a large saucepan over medium heat until it just comes to a simmer. Continue simmering until the half-and-half is reduced to 1 1/2 cups, about 15 minutes. Add the cream cheese and stir until melted. Whisk in the Cheddar and Gruyere until all the cheese is melted and the sauce is smooth.
- Add the macaroni and the reserved pasta water to the saucepan and stir to combine. (It will look very loose, but the pasta will suck up a lot of the sauce as it bakes.) Season to taste with salt if needed. Pour into a 13-by-9-inch baking dish. Toss the bread crumbs with the butter and a sprinkle of salt in a small bowl and sprinkle evenly over the top of the macaroni and cheese. Bake until the cheese is bubbly and the bread crumbs are lightly browned and crispy, about 10 minutes.

- Spray a 9x13" glass casserole dish with cooking spray.
- Set aside.
- Cook the pasta according to package directions, in a large pot.
- Drain, rinse, and return to the large pot.
- Set aside.
- In a large skillet, melt the butter over medium heat.
- Add the flour, and cook until bubbly (about a minute).
- Add the milk slowly, stirring after each addition and cook until slightly thickened.
- Add the cream cheese, again stirring until completely melted.
- Season with salt.
- Remove from heat.
- Carefully pour the cream cheese mixture over the pasta, stirring gently to combine.
- Add the shredded cheddar cheese, stirring to combine.

SUPER CREAMY MACARONI AND CHEESE
This is a no bake, one pot recipe that my kids think is the best! For a special surprise, add a 15 ounce can of well drained regular diced, or my favorite, fire roasted tomatoes at the very end. You can broil this for a few minutes if you like the browned cheese look. Will lose it's creaminess if left to sit or is reheated, but still tastes great.

- Butter a 13 by 9-inch glass baking dish and set aside. Cook the noodles in a large pot of boiling salted water until tender but still firm to bite, stirring frequently, about 5 minutes. Drain well, but do not rinse.
- Whisk the cream, milk, flour, 1/2 teaspoon salt, and pepper in large bowl to blend. Stir in 1 cup Fontina, 1/2 cup Parmesan, 1/2 cup mozzarella, ham, if using, and parsley. Add the noodles and toss to coat. Transfer the noodle mixture to the prepared baking dish. Toss the remaining 1 cup Fontina, 1/4 cup Parmesan, and 1/4 cup mozzarella in a small bowl to blend. - Saute onions, on low heat, in 1 tbsp of butter until just tender, but not brown. Set aside.
- In a large pot, add 1 tbsp salt to the boiling water, and cook pasta until al denta. Drain, but do not rinse.
- While the pasta is cooking, prepare the sauce.
- In a microwave safe measuring cup, mix the half and half with the milk, and heat for 2 minutes on high, in the microwave. Let sit in the microwave until ready to use. (This step is not crucial, but the sauce will thicken faster when using warmed milk.).
- Preheat oven to 350*. Spray a large casserole dish with cooking spray and set aside.
- In a medium sized saucepan, using medium heat, melt 1/4 cup of butter along with the black pepper. Once bubbling, sprinkle with 1/4 cup of flour. Allow a few moments for the fat to absorb the flour, then stir to combine. Carefully stir the warmed cream/milk into the butter/flour mixture and cook until thickened. This generally takes about 10 minutes on my stove.
- Remove from heat, and stir in the onions, hot chili sauce, ricotta cheese, and the 2 cups of shredded cheddar. Stir until the cheddar has melted. Taste, and add the optional salt if needed. Depending on your taste, you may also opt to increase the amount of hot chili sauce as well.
- Pour the sauce over the drained pasta and gently stir. Pour into the prepared casserole dish.
- Mix together 1 tbsp melted butter with the corn flake crumbs. Sprinkle over the pasta and top with the 1/4 cup shredded cheddar.
- Bake for 35 minutes or until the sauce is bubbling.
CREAMY BAKED MACARONI AND CHEESE - NOT LOW FAT!
Combined a few recipes together and this is the BEST I came up with. Cheesy - Creamy Crusty top and easy to reheat with putting a little bit more milk into and on top of the leftovers and covering with foil putting back into the oven for 1/2 hour

- Boil noodles according to package.
- After noodles are drained and have cooled for a few minutes, put them in a big bowl and mix with beaten egg.
- Preheat oven to 350 degrees.

- Bring 2 quarts of water to boil in large soup kettle. Add salt and pasta. Using package directions as a guide, cook until al dente. Drain. To prevent sticking, drain and immediately pour onto a large lipped baking sheet and let cool while preparing sauce.
- Meanwhile, microwave the milk and chicken broth in a 4-cup Pyrex measuring cup or bowl until hot and steamy (not boiling). Melt butter in the empty pasta pot; whisk in flour, then hot milk mixture. - Preheat oven to 350 degrees and place oven rack in the middle.
- Pulse bread, melted butter, and Parmesan in food processor until ground to coarse crumb.
- Transfer to bowl.
- Bring 4 quarts water to boil in large pot.
- Add 1 tablespoon salt and macaroni to boiling water and cook 6 minutes-do not overcook.
- Reserve 1/2 cup macaroni cooking water, then drain and rinse macaroni in colander under cold running water.
- Drain well & set aside.
- Melt remaining 4 tablespoons butter in now-empty pot over medium-high heat until foaming-don't let it brown.
- Stir in flour and cook, stirring constantly, until mixture turns light brown, about 1 minute.
- Slowly whisk in evaporated milk, hot sauce, red pepper flakes, nutmeg, mustard, and 2 teaspoons salt and cook until mixture begins to simmer and is slightly thickened, about 4 minutes.
- Off heat, whisk in cheeses and 1/2 cup reserved pasta water until cheese melts.
- Stir in macaroni until completely coated.
- Transfer mixture to 13 by 9-inch baking dish and top with bread crumb mixture.
- Bake until cheese is bubbling around edges and top is golden brown, 20 to 25 minutes.
- Let sit for 5 to 10 minutes before serving.
