CREAM CHEESE TUNA LOAF
Two cans of tuna and cream cheese and bread cubes and you have the start of a wonderful main dish. You can serve this with cream sauce or plain with any type of red sauce. It is delicious to serve as a slice in a sandwich.

Steps:
- Beat with mixer in a large bowl, cream cheese, eggs, dried dill weed, salt and pepper.
- In another bowl, add two cubes dried bread cubes and 1 cup milk. Stir around. Set aside.
- Add tuna. Break tuna apart with a fork while adding. Mix.
- Add balance of seasoned bread cubes and the soaked break cubes.
- Stir with spatula until mixed.
- Add vegetable oil and mix.
- Preheat oven 350*.
- Spray Pam in a large loaf pan.
- Pour loaf ingredients and smooth out.
- Sprinkle paprika on the top.
- Bake 1 hour or until top springs back to the touch.
- Let cool at least 10-15 minutes.
- Note: I used my spiced croutons which have chili powder and cumin. and butter. You might like to use thyme or sage along with the dill weed.
- This keeps well.
- You may serve with tartar sauce, cream gravy, ketchup, chili sauce or mayo or miracle whip on a sandwich.
TUNA LOAF
Quick, cheap, tasty and nutritious! Mom used to serve this all the time to our busy family. I replace the 2 lightly beaten eggs with Egg beaters or egg whites and substitute crushed popcorn, or GF cracker/breadcrumbs so that I can continue to enjoy this dish.

- Preheat oven to 350 degrees.
- In a large bowl, stir together tuna, breadcrumbs, egg, bell pepper, and onion. Then add milk, Worcestershire sauce and Tobasco, and salt and pepper, mixing with your hands.
- Pack ingredients into a large, greased loaf pan.
- Bake about 45-50 minutes, until top is golden brown and center is thoroughly cooked. Allow to cool about 10 minutes before slicing and serving. Enjoy!

TUNA LOAF
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a large loaf pan.
- Mix tuna, cream of chicken soup, milk, cracker crumbs, bread crumbs, onion, egg, and black pepper until thoroughly combined and spoon the mixture into the prepared bread pan. Smooth top.
- Bake in the preheated oven until a toothpick inserted into the loaf comes out clean, 25 to 30 minutes.

PARTY SANDWICH LOAF
This sandwich loaf will be the talk of the party. Lots can be said about the delicious shrimp, olive and ham fillings!

- In medium bowl, mix all shrimp salad spread ingredients until well blended. In second medium bowl, mix all olive-nut spread ingredients until well blended. In third medium bowl, mix all deviled ham spread ingredients until well blended.
- Trim crusts from bread loaves. Cut each loaf horizontally into 4 equal slices. Lightly spread butter over 3 slices. Place 1 buttered slice on each of 2 serving plates or trays; spread each evenly with half of the shrimp salad spread. Top with second buttered slices; spread each evenly with half of the olive-nut spread. Top with third buttered slices; spread each evenly with half of the deviled ham spread. Top with unbuttered slices. Lightly press each loaf together.
- In medium bowl, mix 4 packages cream cheese, half-and-half and food color. Spread half of mixture over sides and top of each loaf. Refrigerate about 30 minutes or until cream cheese mixture has set. Cover tightly; refrigerate at least 2 1/2 hours but no longer than 24 hours. To serve, remove from refrigerator, cut into slices. Store covered in refrigerator.

- In a small bowl, mix together the ground ham, 1/2 cup of salad dressing, 3 tablespoons of relish, and onion. Set aside in the refrigerator.
- In another bowl, mix together the ground bologna, 3 tablespoons of relish, and 1/2 cup of salad dressing. Set aside in the refrigerator.
- In a third bowl, stir together 1 package of cream cheese, walnuts, green olives, and 2 tablespoons of milk. Set aside in the refrigerator.
- In a fourth bowl, mix together the Cheddar cheese, 1 package of cream cheese, 3 tablespoons of salad dressing, onion salt, garlic salt, and celery salt. Set aside in the refrigerator.
- Spread the ham spread onto the bottom slice of bread, then top with another slice. Cover the next slice with bologna spread, and top with another slice. Spread the next slice with the nut spread, and then top with another slice of bread. Top this slice with the Cheddar cheese spread. Top with one more slice of the bread. Smooth the sides with a large spatula or knife, and refrigerate for about 30 minutes before 'frosting' to make it easier.
- Mix together the 2 remaining packages of cream cheese, and enough milk to make it spreadable. Frost the sides of the loaf first, then the top. Decorate with sweet pickles and pimentos to your liking.

- 1. Note about the tuna. I used 3 cans, drained well. Weight listed on each can was 185 grams net, 140 grams drained. For fresh cooked, go with 425 grams (15 oz).
- 2. Preheat your oven to 180 C (350 F). Grease with butter or olive oil with an oil sprayer, a loaf pan.
- 3. In a large mixing bowl, add all the ingredients, seasoning with salt and pepper as desired, as well as Tabasco sauce if desired.
- 4. Use a large spoon and mix together.
- 5. Pack mixture into the prepared loaf pan.
- 6. Place in the oven and bake for about 45 to 50 minutes or until the top is golden brown.
- 7. Cool for 10 minutes before slicing. Serve with sides of your choice and enjoy.

- Mix cream cheese, 2 Tbsp. milk and garlic powder until blended. Combine noodles, tuna, peas, mushrooms and remaining milk in large bowl. Add cream cheese mixture; mix lightly. Spoon into 1-1/2-qt. casserole sprayed with cooking spray; cover.

- With serrated knife, trim off 1-inch from each end of loaf; set aside. Cut loaf in half, vertically. Hollow out each half, leaving 1/2-inch border (reserve bread pieces). - Preheat the oven to 350ºF. Grease two clean tuna cans and one 9x5 loaf pan. Line the sides and bottom of the tuna cans with parchment and grease again.
- In the bowl of a stand mixer fitted with the paddle attachment, cream brown sugar and butter. Add the maple syrup and mix until incorporated. Add the eggs and beat well.
- In a medium bowl, combine flour, baking soda, baking powder, cinnamon, and cloves.
- Alternately add the dry ingredients and the applesauce to the butter mixture, mixing just until incorporated.
- Pour the batter evenly into the prepared pans, filling the tuna cans about 3/4 full. Bake about 27 minutes or until a toothpick inserted in the center of a cake comes out clean. Allow the cakes to cool in the pans for 15 minutes before carefully inverting onto a wire rack to cool completely before frosting.
- Place cream cheese in the bowl of a stand mixer fitted with the paddle attachment. Beat on low about one minute, ensuring that it is soft and pliable. Stop the mixer and scrape down the bowl. Add the butter and beat on medium speed for one minute, until thoroughly combined.
- Turn the mixer on low and add the powdered sugar, followed by the vanilla extract. Beat until almost incorporated.
- Stop the mixer and scrape down the bowl and beater. Beat on medium speed until the frosting is velvety soft.
- To frost the cake, spread frosting on top of one of the small cakes, top with the other, and spread frosting all around the outside. Use any remaining frosting to top the loaf cake, or drizzle the loaf with vanilla glaze.

I was looking for a tuna loaf recipe and found Carol Junkins 'Tuna Cakes~Flavors of Cape Cod.' I made few changes and additions, and on Carol's suggestion, here it is. Loaf will be on the dry side, since it's tuna and therefore, no fat, so you may want to serve with tartar sauce, a dill mayo, or any of your choice.
