Juice of 1/2 a lime
3/4 teaspoon Kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon white or black pepper
1 (15-ounce) can whole-kernel sweet corn, drained
3/4 cup freshly grated Cheddar cheese
1/4 cup finely diced jalapeños ((about 1-2 jalapeños, seeds removed if desired))
1/4 cup sliced green onions
2 tablespoons finely chopped red bell pepper
1 tablespoon finely chopped cilantro

Steps:

  • In a medium-sized mixing bowl, combine the cream cheese, mayonnaise, sour cream, lime juice, salt, garlic powder, and pepper. Use a handheld mixer on medium-high speed to blend until the mixture comes completely together and is smooth in texture.
  • Add the remaining ingredients and stir until evenly coated in the sauce. Serve right away or refrigerate until ready to serve.

1/2 cup sour cream
1/2 cup mayonnaise
Two 10-ounce packages frozen fire-roasted corn
Two 4.5-ounce cans chopped green chiles
1/2 cup jarred jalapenos, chopped
1/2 cup jarred salsa
Kosher salt and freshly ground black pepper
3 cups grated Monterey Jack cheese
1/4 cup fresh cilantro leaves
Corn chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
  • Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
  • Top with the cilantro and serve warm with the corn chips on the side.

16 ounce bag of frozen yellow corn kernels
12 ounces cream cheese ( 1 1/2 blocks or 12-ounce tub)
4 ounces Garlic & Herb goat cheese
1 stick butter
2 ounces diced jalapeno (1/2 of a 4-ounce can)
1/2 teaspoon garlic salt

Steps:

  • Preheat oven to 375 degrees.
  • Place cream cheese, goat cheese and butter into baking dish and place into hot oven. Heat for 20 minutes to soften and melt ingredients.
  • Remove dish and stir in corn, jalapeno, and garlic salt. Combine well and place back into oven.
  • Cook for 30 more minutes stirring occasionally.
  • Dip is done when it's bubbly with melted butter visible around the edge.

15.25 oz canned whole kernel sweet corn, drained
10 oz Rotel diced tomatoes and green chilies, drained
2 cups shredded Mexican cheese blend
1 cup chopped green onions
1 tbsp grated yellow onion

Steps:

  • Dump the softened cream cheese, sour cream and mayo into a large mixing bowl.
  • Add the salt, pepper, garlic powder, onion powder, smoked paprika and granulated sugar to the bowl.
  • Use an electric mixer to whip all of the ingredients together until smooth.
  • Add the corn and Rotel to the bowl.
  • Stir well.
  • Add the shredded cheese, chopped green onions and grated yellow onion to the bowl.
  • Stir well again.
  • Cover the bowl and place it in the refrigerator for at least 2 hours before serving.
  • Serve with chips and/or crackers for dipping.

1 jalapeño, seeded and diced

  • Preheat the oven to 375°F (190°C).
