It's called Creeping Crust because the CRUST WILL RISE TO THE TOP AND CREEP OVER THE FRUIT. My family loves cobblers and this recipes adapts to any fruit and is the best I've made or eatten. Serve warm or cold and don't forget the ice cream.

1/2 cup butter
1 cup flour (all purpose)
1 cup sugar
1 tablespoon baking powder
1/2 cup milk
2 cups fresh fruit or 2 cups fruit filling

Steps:

  • Melt BUTTER in 10 inch baking dish and set aside.
  • Mix FLOUR, SUGAR, BAKING POWDER together in bowl.
  • Add MILK to flour mixture and GENTLY STIR BY HAND until all flour is wet. DO NOT OVER MIX DOUGH - overmixing makes the crust tough.
  • Evenly Spoon DOUGH over the butter in your baking dish (do not mix or blend, just let the butter go where it wants to go).
  • Place FRUIT over dough. - You can always use more or less fruit.
  • BAKE at 350 degrees for about 30 minutes depending on your oven.
  • CRUST WILL RISE TO THE TOP AND CREEP OVER THE FRUIT.

2 1/2 cups all-purpose flour, plus more for shaping and rolling
1 tablespoon sugar
1/2 teaspoon salt
12 tablespoons cold unsalted butter, cut into small pieces
4 to 6 tablespoons ice water
4 tablespoons unsalted butter
1/2 cup sugar, plus more for sprinkling
1/2 cup water
1/4 teaspoon freshly grated nutmeg
Pinch salt
10 ripe peaches, peeled, pitted, and cut into 1/4-inch thick slices (if peaches are out of season, use thawed frozen peaches)
3 tablespoons all-purpose flour
2 tablespoons heavy cream

Steps:

  • Crust:
  • Place flour, sugar, and salt in a food processor and process for 5 seconds. Add butter and process until the mixture resembles coarse meal. Add water, a few tablespoons at a time, until the dough just comes together.
  • Remove dough and knead lightly on a lightly floured surface until it just comes together. Divide the dough in half and form into disks. Wrap each disk in plastic wrap and refrigerate for at least 30 minutes.
  • Once dough is chilled, remove from the refrigerator and roll each disk into a 9-inch square approximately 1/4-inch thick. Place on parchment paper-lined baking sheets and return to the refrigerator to chill until ready to assemble.
  • Filling:
  • Melt butter in a large high-sided saute pan over medium heat. Add the sugar and water and cook until sugar is dissolved. Add nutmeg, salt, peaches, and flour and cook for 5 minutes.
  • Preheat oven to 375 degrees F.
  • Place half of the peach mixture in the bottom of a 9-inch square buttered baking dish using a slotted spoon. Top the peaches with 1 layer of dough. Place on a baking sheet and bake until the crust is light golden brown. Remove from the oven and top the crust with the remaining peaches and cover with the other crust. Brush the top crust with heavy cream, sprinkle with sugar, and return to the oven. Bake until the crust is golden brown and the juices are bubbly. Let cool for at least 30 minutes before cutting and serving.

This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (20 ounce) can canned peaches, with fruit and juice divided

Steps:

  • Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
  • Mix flour, sugar, and milk.
  • When your butter is melted pour your mixture into pan directly on top of butter.
  • Place peach/fruit slices into pan on top of cobbler.
  • Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
  • Serve hot with ice cream if you wish.
  • I put 8-10 on the servings it depends on the size of the servings.

I was at the market today, and the smell coming from the fresh peaches was driving me crazy! So I had to run home and make my Mom's peach cobbler. I was surprised to find that this variation has not been posted here. Serve with homemade vanilla ice cream. (If peaches aren't in season where you are, use 2 20 oz packages of frozen sliced peaches, thawed).

5 lbs peaches, sliced
2 cups sugar (adjust the amount based on the sweetness of your peaches...you may need more if you use the frozen p)
3 tablespoons all-purpose flour
1/2 teaspoon nutmeg, ground
1 teaspoon almond extract
1/3 cup butter
2 cups all-purpose flour
1 teaspoon salt
2/3 cup shortening
4 -6 tablespoons ice water
vanilla ice cream

Steps:

  • FOR THE FILLING:.
  • In a dutch oven stir together the sliced peaches, 2 cups sugar, 3 tbsp all purpose flour, and 1/2 tsp ground nutmeg. Set aside until a syrup forms. Once it does, bring the peach mixture to a boil; reduce the heat to low, and cook 10 minutes or until tender. Remove from the heat; add almond extract and 1/3 cup butter, stirring until butter melts.
  • Roll half of the Double Crust Pastry to 1/8 inch thickness on a lightly floured surface; cut into a 9 inch square. Spoon half of the peaches into a lightly buttered 9 inch square pan; top with the pastry square. Bake at 475 degrees for 12 minutes or until lightly browned. Spoon remaining peaches over baked pastry square.
  • Roll remaining pastry to 1/8 inch thickness, and cut into 1 inch strips; arrange in a lattice design over peaches. Bake 15 to 18 more minutes or until browned. Serve with vanilla ice cream.
  • FOR THE DOUBLE-CRUST PASTRY.
  • Combine flour and salt; cut in shortening with a pastry blender until mixture resembles small peas. Sprinkle with ice water, 1 tbsp at a time, stirring with a fork until the dry ingredients are moistened. Shape into a ball. Wrap in plastic wrap and chill until ready to use.
