CRAWFISH CHOWDER

Part of my family is from West virginia, so I try to come up with recipes that reflect my roots from the near south! This recipe was an instant hit with famiy that was visiting around Christmas time.

8 c chicken broth
2 lb crawfish
4 medium russet potatoes (cubed with skins on)
2 good size carrots (sliced into rounds)
1 12 ounce bag frozen pepper & onion blend
2 c corn (i buy the 16 ounce frozen corn)
2 c chopped turnip greens (fresh or frozen)
2 c heavy cream
1 c instant potato flakes, dry
1 Tbsp dried parsley
3 tsp old bay seasoning (or more to taste)

Steps:

  • 1. Place chicken broth in a large stock pot (I use a 7 quart cast iron dutch oven) over medium high heat. Add potatoes, carrots, and corn.
  • 2. In a large skillet also over medium high heat, Thaw crawfish and frozen peppers and onions. Once thawed, turn off heat and set skillet to the side. There will also be a lot of liquid in the skillet, save this as well!
  • 3. After carrots and potatoes have been cooked until tender, add the crawfish and peppers and onions with the liquid from the skillet to the stock pot. Stir well.
  • 4. Add the Turnip greens, Parsley and Old Bay seasoning and bring to a gentle boil. Turn heat to low and simmer for 15 minutes, stirring occasionally.
  • 5. Pour in cream and potato flakes. Stir well. Simmer five to ten minutes more. Serve hot with a hearty bread. Leftovers are even better the next day!

2 sticks unsalted butter
1 (4.5 pound) bag Crawfish Crab and Shrimp Boil
5 pounds of #1 red potatoes, cleaned but not peeled
40 to 45 pounds live crawfish, cleaned
24 ears of corn, shucked and cut into halves

Steps:

  • Leaving the crawfish in the broth for a longer time results in more spiciness. Sprinkling additional spice mixture on the crawfish after draining also will increase the spiciness.
  • Crawfish Crab and Shrimp Boil: There are many manufacturers to choose from. This is a spice blend of salt, cayenne pepper, garlic powder, onion powder, lemon juice, and additional spices. Typically a bag of spice mix costs about $5.00. The brand used for the show was Lousiana Fish Fry Products Crawfish Crab and Shrimp Boil.
  • Instructions:
  • Place the cooking pot with its basket on the propane burner and fill with 11 gallons of water, about halfway. This should be about the right amount of water to protect against spillage when the potatoes or crawfish are added later. Add the 2 sticks of butter and 2/3 of the bag of Crawfish Crab and Shrimp Boil, and the 5 pounds of red potatoes. Cover and bring to a boil. Cook potatoes for 15 minutes and, while the potatoes are cooking, rinse the crawfish.
  • Place the bag of crawfish in 1 of the coolers, or, on the ground and hose down the bag until the water runs clear, about 5 minutes. Open the bag and pour the live crawfish into 1 of the coolers. With the drain of the cooler open, continue to rinse the crawfish for 5 minutes or until the water runs clear.
  • After the potatoes have cooked for 15 minutes, add the corn and continue cooking the corn and the potatoes for 15 minutes more. Remove a potato and test for doneness, continuing to cook, if needed. Remove the basket and dump the corn and potatoes into 1 of the coolers. Close the cooler in order to keep the corn and potatoes warm.
  • Pour the crawfish into the cooking basket and lower the basket into the pot. Bring to a boil and cook the crawfish for 15 minutes. Turn the heat off and allow the crawfish to simmer in the liquid for an additional 15 minutes.
  • Remove the crawfish and serve with the potatoes and corn. Traditionally, the crawfish is dumped onto a newspaper covered table (we used a door on 2 sawhorses). Additional spice mix can be sprinkled on the crawfish, if desired.
  • Variation: Some cooks add 1 to 2 pounds of sweet onions, peeled and cut in wedges, and/or the juice from 1 dozen lemons to the cooking liquid.
  • Variation: With proper ventilation, several pounds of shrimp could be cooked with approximately 1/2 to 1 cup of the spice mixture indoors. However, without proper ventilation the spice mixture fumes will overwhelm the typical house.

8 -10 cups water
6 oz. (170 g) Louisiana Crawfish Shrimp & Crab Boil
2 tablespoons McCormick Cajun seasoning
1 tablespoon McCormick Lemon Pepper seasoning
1 head garlic, unpeeled but separated
3 ears corn, cut into 2-inch pieces
12 oz. (340 g) small red potatoes, halved
14 oz. (400 g) smoked sausage, cut into chunky pieces (Hillshire Farms)
1 lemon, sliced into rounds

Steps:

  • Fill a large pot with water. Bring the water to a boil. Add the Louisiana Crawfish Shrimp and Crab Boil, Cajun seasoning and Lemon Pepper seasoning. Stir well to a rolling boil.
  • Add the garlic, corn, potatoes, sausage and lemon slices. Cover the pot with its lid and cook for 10 minutes.
  • Taste the crawfish boil water. If it's too salty, add more water. If it's too bland, add more seasonings to taste. Transfer the crawfish into the pot and cook for 3-4 minutes, with the lid covered.
  • Turn off the heat and let the crawfish soak for 10 minutes. The longer the crawfish soaks, the spicier they will be. Remove all the ingredients using a strainer and serve immediately. Discard the crawfish boil water.

Steps:

A friend's son created this for one of our soup luncheons- delish! Try not to boil the soup, as this will cause it to break and have an unwanted texture. Stir soup periodically to prevent scorching on the bottom of the pan. Additional option: For a non-vegetarian option, fry and crumble ½ lb. bacon. Use the bacon grease instead of the butter for the roux. Add the bacon back to the soup with the salt and pepper. (You will use less salt because of the bacon.)

1/2 cup butter
1 cup flour
4 garlic cloves, minced
1 yellow onion, small dice
3 stalks celery ribs, small dice
2 tablespoons fresh thyme, minced
3 bay leaves
1 gallon whole milk
1/2 lb frozen corn
1/2-1 lb shredded gouda cheese
6 -8 baby red potatoes, cubed
salt and pepper

Steps:

  • Season corn with salt and roast corn in oven on sheet pan until slightly golden brown edges.
  • In large soup pot, using medium heat, sauté onion and celery in butter until onions become tender and translucent.
  • Add garlic and thyme.
  • Add flour to make a thick paste (in pot roux).
  • Cook roux for 1-2 minutes.
  • Reduce heat. Add milk, and whisk together thoroughly to prevent lumps.
  • Add bay leaves and roasted corn.
  • Add cubed potatoes and bring to a simmer.
  • Add shredded Gouda to finish the soup. Note the cheese will help to thicken the chowder-add ½ lb., then more to thicken to your preference.
  • Add salt and pepper to taste.

1/2 lb bacon, fried crisp, drained and crumbled
1/2 c + 2 tbsp. flour
16 oz homemade or low sodium canned chicken broth
2 can(s) creamed corn
1 can(s) whole kernel corn, drained
1 bunch green onions, sliced thin and divided
1 small onion, minced
1 celery stalk, minced
1 tsp garlic, minced
1/2 bell pepper, diced
1 c heavy cream
1 c milk
1/4 c sherry
1/2 tsp lea & perrin worchestershire sauce
1 lb crawfish tails w/fat (louisiana crawfish - don't use chinese)
1 lb lump or special claw crabmeat, picked through for shells
1/2 tsp cayenne pepper (or more to taste)
salt, & white pepper, to taste

Steps:

  • 1. Fry bacon, drain & crumble & set aside. Saute onions, 3/4 of the green onions, bell pepper and celery in the bacon grease (or butter). When onions are clear stir in the garlic and saute for 30 seconds.
  • 2. Over medium heat add flour and make a light roux, stirring constantly for about 5 minutes, or until the roux just starts to slightly darken. Add chicken stock, milk and heavy cream then simmer until desired consistency.
  • 3. Add corn, crawfish, crabmeat, sherry, and worchestershire sauce. Stir well and simmer for 15-20 minutes. Season with salt, pepper to taste.
  • 4. Serve in individual bowls and garnish with bacon crumbles and reserved green onions. Enjoy!
  • 5. *NOTES: Remember - if you can't get Crawfish, use Shrimp instead. Fresh cut corn makes this recipe even better. Use about 2 cups of fresh corn, with the milk from the cob. Hold the shucked corn over a bundt pan and just cut the corn from the cob. Go back over the cob with the dull side of the knife blade to get the extra milk. All of it will fall into the bundt pan for easy clean-up and transfer to your pot. *CHOWDER: Cook 2 lbs. peeled and diced russet potatoes and 1 Tbsp. salt in saucepan, in milk just enough to cover potatoes, then set aside. Coarsley smash potatoes leaving small chunks and add to pot along with the chicken broth, milk and cream. Follow remaining directions through the end of the recipe.

1 Tbsp. olive oil
15 small red potatoes, halved
15 bacon strips
2 cups (8 oz.) shredded smoked Gouda cheese

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with oil. Wrap each bulb in heavy-duty foil. Bake at 425°F for 30 to 35 minutes or until softened. Cool for 10 to 15 minutes. Meanwhile, place potatoes in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 8 to 10 minutes or just until tender. Cut bacon strips in half widthwise. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; keep warm. Place a tablespoonful of cheese on the cut side of a potato half. Wrap with a half-strip of bacon and secure with a toothpick. Place on an ungreased baking sheet. Repeat. Sprinkle appetizers with pepper. Bake at 375°F for 10 to 15 minutes or until bacon is crisp. For sauce, squeeze softened garlic into a food processor.
