White chocolate cranberry cookie bars image

Chunks of white chocolate and dried cranberries make these cranberry cookie bars a festive must-have. The perfect sweet treat for the holidays.

250 g/2 sticks butter (room temperature )
250 g/1 cup soft brown sugar
60 g/1/3 cup caster sugar
2 eggs
1 tsp vanilla extract
375 g/3 cups flour
2 tsp baking powder
1 tsp salt
80 g/½ cup white chocolate (roughly chopped)
1 cup dried cranberries

Steps:

  • In the bowl of a mixer, cream together the butter and sugar until light and creamy.
  • Beat in the vanilla and eggs, one at a time, scraping down the bowl after each addition.
  • Slowly add the flour and baking powder, scraping down the bowl occasionally until all the flour has been incorporated.
  • Add the chocolate chips and cranberries and mix well.
  • Pre-heat the oven to 180ºc and line a brownie pan/casserole dish with baking paper.
  • Press the cookie dough into the prepared pan and place in the oven. Allow to bake for 15-20 minutes until the dough is golden brown and a skewer inserted comes out clean.
  • Remove from the oven and allow to cool before cutting into bars.

1-1/2 cups packed light brown sugar
2 large eggs, room temperature
3/4 teaspoon vanilla extract
2-1/4 cups all-purpose flour

1/8 teaspoon ground cinnamon
1/2 cup dried cranberries
6 ounces white baking chocolate, coarsely chopped
FROSTING:
1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1 tablespoon grated orange zest, optional
6 ounces white baking chocolate, melted
1/2 cup dried cranberries, chopped

Steps:

  • Preheat oven to 350°. In a large microwave-safe bowl, melt the butter; stir in the brown sugar. Cool slightly., Add eggs, 1 egg at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk together flour, baking powder, salt and cinnamon; stir into butter mixture. Stir in cranberries and chopped chocolate (batter will be thick). Spread into a greased 13x9-in. pan., Bake until golden brown and a toothpick inserted in center comes out clean (do not overbake), 18-21 minutes. Cool completely on a wire rack., For frosting, beat cream cheese, confectioners' sugar and, if desired, orange zest until smooth. Gradually beat in half of the melted white chocolate; spread over blondies. Sprinkle with cranberries; drizzle with remaining melted chocolate., Cut into triangles. Store in an airtight container in the refrigerator.

1 ¼ cups light brown sugar
1 cup unsalted butter, softened
3 large eggs
1 ½ teaspoons vanilla extract
1 teaspoon ground ginger
¼ teaspoon salt
1 ½ cups all-purpose flour
¾ cup dried cranberries
½ (12 ounce) package white chocolate chips
Frosting:
½ (8 ounce) package cream cheese, softened
3 cups powdered sugar
4 teaspoons freshly squeezed lemon juice
½ teaspoon vanilla extract
¼ cup dried cranberries, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Generously grease a 9x13-inch baking pan.
  • Prepare cake: Beat brown sugar and butter with an electric mixer until smooth. Add eggs, vanilla, ginger, and salt; beat until well combined. Gradually beat in flour until smooth. Stir in cranberries and white chocolate chips with a spoon. Pour batter into the prepared baking pan and spread evenly.
  • Bake in the preheated oven until light brown, 30 to 35 minutes. Remove from the oven and let cool, about 30 to 45 minutes.
  • Prepare frosting: Beat cream cheese, powdered sugar, lemon juice, and vanilla with an electric mixer until smooth.
  • Spread frosting over cooled cake, then sprinkle chopped cranberries over top. Let sit for 3 hours. Cut in thirds down the length of the pan, then in quarters across the width. Then cut each square diagonally to create 24 triangular pieces.

1/2 cup packed brown sugar
1/2 cup cold butter, cubed
FILLING:
1 large egg
1 can (14 ounces) sweetened condensed milk
1 teaspoon grated orange zest
1 teaspoon orange extract
1-1/2 cups white baking chips
1 cup dried cranberries

Steps:

  • Preheat oven to 350°. Line a 13x9-in. pan with foil, letting ends extend up sides; grease foil. In a bowl, mix flour and brown sugar; cut in butter until crumbly. Press onto bottom of prepared pan. Bake until light golden brown, 10-12 minutes. Cool on a wire rack., For filling, whisk together egg, milk, orange zest and extract until blended; stir in baking chips and cranberries. Spread evenly over crust. Bake until top is golden brown, 20-25 minutes longer. Cool 15 minutes in pan on a wire rack. Lifting with foil, remove bars from pan. Cut into bars. Refrigerate leftovers. Freeze option: Freeze cooled bars in freezer containers, separating layers with waxed paper. To use, thaw before serving.

16 1/2 ounces Pillsbury sugar cookie dough
1/2 cup dried cranberries
1/2 cup chopped hazelnuts
12 ounces white chocolate chips

Steps:

  • Let dough come to room temp and pre-heat oven to 350 degrees.
  • Flatten dough out into a "rectangle" with your hands.
  • Pour the dried cranberries and hazelnuts over dough.
  • Combine the dough into a ball mixing the dried cranberries and hazelnuts into the dough evenly.
  • Once evenly combined make the dough back into a log.
  • Take a sheet of wax paper and place log onto it.
  • Roll dough up in the wax paper making the log about the same size as the orignal one you bought and then tighten the ends closed.
  • Place in freezer for 15 minutes.
  • Cut approximately 16 slices and place 2 inches apart on cookie sheet. Cook for 13-15 minutes, or until cookie are a light golden brown all over.
  • Cool cookies on rack.
  • While cookies cool melt the white chocolate chips in microwave safe dish on 50% power for 90 seconds. Take dish out and stir. Place back in microwave on 50% power for 1 more minute. Take out and stir.
  • Dip cookies in the melted white chocolate covering only 1/2 the cookie. Place on wax paper to dry.

1/4 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt

6 tablespoons half-and-half
1 large egg, beaten
1/2 cup fresh or frozen cranberries or 1/2 cup dried cranberries (craisins)
1/2 cup white chocolate chips (or pieces)

Steps:

  • Preheat oven to 400 degrees F.
  • In a bowl by hand or using an electric mixer, blend together the flour, sugar, baking powder, salt, and butter.
  • Add the half and half, beaten egg, cranberries (I like the dried ones), and the white chocolate chips, and stir until the dough holds together.
  • Turn out onto a lightly floured board and knead for 2 minutes.
  • Form into a 1/2-inch thick round, then cut the round into 8 wedges (you can also make two smaller rounds of smaller wedges, if you like).
  • Spray a baking sheet with vegetable oil, then transfer the wedges to the sheet.

1/3 cup butter, melted
2 tablespoons water
2 eggs
1/2 cup hazelnuts, chopped
1 teaspoon dried orange peel
1 1/2 cups dried cranberries, orange flavored
1 cup vanilla baking chips
3/4 cup powdered sugar
1 -3 teaspoon milk
1/4 teaspoon vanilla extract
12 candied green cherries, cut in half

Steps:

  • Heat oven to 350°. Grease bottom only of 13 x 9" pan with shortening and lightly flour (or spray pan then line bottom with parchment paper) .
  • In large bowl, combine cake mix, butter, water, eggs, hazelnuts and orange peel with spoon until dough forms (some dry mix will remain). Stir in cranberries and baking chips. Spread evenly in pan.
