1/4 Teaspoon Ground Cinnamon
1/2 Cup Granulated Sugar
1/4 Cup Vodka
1/4 Teaspoon Orange Zest

Steps:

  • First, in the Instant Pot, combine the cranberries, orange juice, cinnamon, vodka, and orange zest.
  • Next, set the device to Manual/High Pressure for 5-minutes.
  • After that, preform a natural release for 10-minutes, unseal the pressure cooker, and set it to Saute/Cook.
  • Then, stir in the sugar and let it cook down to your desired thickness.
  • Last, once the sauce is thick enough for you, remove it and serve.

1 cup sugar
1/4 cup water
1 tablespoon red wine vinegar
2 1/2 cups cranberries, fresh (frozen can be used)
1/2 cup port wine
2 cinnamon sticks

Steps:

  • Combine sugar, water and vinegar in a medium stainless steel saucepan.
  • Bring to a boil over high heat, stirring to dissolve sugar.
  • Add cranberries, return to a boil, reduce heat and boil gently, uncovered for 5 minutes, stirring frequently.
  • Stir in port.
  • Place a cinnamon stick in sterilized jar.
  • Ladle sauce into jars to with 1/2 inch of rim.
  • Process 15 minutes in hot water bath for half pint jars.

1 pound cranberries (about 4 cups), thawed if frozen
2 medium oranges
1 1/4 cups sugar
1 teaspoon ground coriander
Kosher salt

Steps:

  • Put all but 1 cup cranberries in a saucepan. Remove wide strips of zest from 1 orange with a peeler; add to the saucepan with the juice of both oranges (about 1/2 cup). Add the sugar, coriander, a pinch of salt and 1/2 cup water. Bring to a simmer over medium heat; cook, stirring occasionally, until the berries burst and the sauce thickens, 15 to 20 minutes.
  • Stir in the remaining 1 cup cranberries; cook until softened, 3 to 4 minutes. Remove from the heat and let cool; remove the orange zest. Transfer to a serving dish and refrigerate at least 3 hours.

4 cups fresh cranberries
1 ½ cups water
5 whole cloves
5 whole allspice berries
3 cinnamon sticks

Steps:

  • Place fresh cranberries and water in a medium saucepan over medium heat.
  • Wrap cloves, allspice berries and cinnamon sticks in a spice bag. Place in the water with cranberries.
  • Cook until cranberries begin to burst, about 10 minutes.

1/2 cup honey
2 -3 tablespoons firmly packed brown sugar (or to taste)
2 cinnamon sticks (3-inch)
6 whole cloves
1/4 teaspoon freshly grated nutmeg (or to taste)
3/4 cup water (I use orange juice instead of water)

Steps:

  • Combine all ingredients in a saucepan and simmer, covered, stirring occasionally for 5 to 10 minutes, or until the cranberries have burst and the mixture has thickened. (I put the cloves in a tea diffuser for easier removal and usually cook the sauce a little longer than the time given.).
  • Transfer the sauce to a bowl and let cool.
  • The sauce may be made 2 days in advance and kept covered and chilled.
  • Serve at room temperature.
