1 cup whole fresh cranberries (chopped)
1 egg
1/2 milk
1/4 cup melted butter
1/2 cup crushed pineapple (drained)
1 1/2 cups flour
2/3 cup sugar
2 tsp baking powder
3/4 tsp salt
1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 cup brown sugar

Steps:

  • Preheat oven to 375
  • Combine together the cranberries, egg, milk, butter and pineapple
  • In a separate bowl add flour, sugar, baking powder, salt, cinnamon and nutmeg
  • Add the flour mixture into the egg mixture and stir just until moistened - do not over stir
  • Grease muffin tins or use liners
  • Add batter, filling about 2/3 full
  • Sprinkle top with brown sugar
  • Bake for 20-25 minutes or until toothpick comes out clean

1 cup dried cranberries
1/4 cup fresh orange juice
2 cups unbleached all-purpose flour
2 teaspoons baking powder
1/4 teaspoon fine salt
1/2 cup unsalted butter, softened, plus more for preparing the muffin tin
1 teaspoon grated orange zest
2/3 cup granulated sugar, plus up to 1 tablespoon for topping the muffins, if desired
2 large eggs, at room temperature
1/2 cup milk

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the cranberries and orange juice in a small saucepan, and bring just to a simmer over medium heat. Remove berries from the heat, and set aside to cool and plump. Drain off any excess liquid and set aside.
  • Lightly brush a 12-muffin tin with butter. Sift the flour, baking powder, and salt into a medium bowl and set aside.
  • In a standing mixer fitted with the paddle attachment, or with an electric hand-held mixer in a large bowl, cream the butter, orange zest, and 2/3 cup sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the eggs, one at a time, beating well after each addition. Remove the bowl from the mixer.
  • Fold the flour in 3 parts into the butter mixture, alternating with the milk in 2 parts, until just combined. Fold in the cranberries. Do not over mix. Divide the batter evenly into the muffin tin and sprinkle the tops with sugar. Bake until golden brown, about 25 minutes. Cool muffins in the pan on a rack. Serve warm.

  • Stir in pineapple, cranberry sauce, nuts and apples. Spoon into 24 paper-lined muffin cups.

1 teaspoon baking soda
½ teaspoon ground nutmeg

½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease 24 muffin cups or line with paper liners.
  • Beat butter, applesauce, 1 cup white sugar, and brown sugar in a large mixing bowl until smooth and creamy. Steps:

3 ounces cream cheese, softened
1 cup sugar
1 large egg
2 teaspoons vanilla extract

1 teaspoon baking soda
1 teaspoon salt
1/2 cup sour cream
1/2 cup confectioners' sugar
1-1/2 teaspoons butter, softened

Steps:

  • Preheat oven to 350°. Drain pineapple, reserving 1-2 tablespoons syrup. , In a large bowl, beat cream cheese and sugar until blended. Add egg and vanilla; beat well. In another bowl, whisk flour, baking soda and salt. Add to cream cheese mixture alternately with sour cream, beating well after each addition. Fold in pineapple. , Fill greased or paper-lined muffin cups two-thirds full. Bake 20-25 minutes or until a toothpick inserted in center comes out clean.
