2 packages (12 ounces each) fresh or frozen cranberries
1-1/2 cups water
1-1/3 cups sugar
2 teaspoons minced fresh gingerroot
4 teaspoons grated orange zest
CUSTARD:
1 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
3 cups 2% milk
6 large egg yolks
2 teaspoons vanilla extract
TRIFLE:
1 loaf (16 ounces) frozen pound cake, thawed and cut into 1-inch cubes
1/4 cup orange liqueur
1/2 cup slivered almonds, toasted
Sweetened whipped cream and orange sections

Steps:

  • In a large saucepan, combine the first 5 ingredients; bring to a boil, stirring to dissolve sugar. Reduce heat to medium; cook, uncovered, until berries pop and mixture is thickened, about 15 minutes. Remove from the heat; cool completely., For custard, in a large saucepan, mix the sugar, cornstarch and salt. Whisk in milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from the heat. , In a small bowl, whisk a small amount of hot milk mixture into egg yolks; return all to the pan, whisking constantly. Bring to a gentle boil; cook and stir for 2 minutes. Immediately transfer to a clean bowl; stir in vanilla. Cool for 30 minutes. Press waxed paper onto surface of filling; refrigerate until cold, about 1 hour., To assemble, place half of the cake on the bottom of a 4-qt. trifle bowl or glass bowl; drizzle with 2 tablespoons orange liqueur. Layer with half of the cranberry mixture, 1/4 cup almonds and half of the custard. Repeat layers. Refrigerate, covered, until serving. Top with whipped cream and orange sections.

12 ounces bittersweet chocolate, chopped
1/2 cup unsalted butter, cubed
4 large egg yolks, beaten
1 cup dried cranberries, chopped
3 tablespoons thawed orange juice concentrate
1 teaspoon almond extract
COATING:
12 ounces white candy coating, chopped
1 ounce bittersweet chocolate, melted

Steps:

  • In a double boiler or metal bowl over simmering water, heat chocolate and butter until melted, stirring frequently. Whisk a small amount of mixture into egg yolks. Return all to the heat, whisking constantly. Cook and stir until mixture reaches at least 160° and coats the back of a metal spoon., Remove from the heat; stir in the cranberries, orange juice concentrate and extract. Cool to room temperature, stirring occasionally. Refrigerate for 1 hour or until easy to handle. Shape into 1-in. balls., In a microwave, melt candy coating; stir until smooth. Dip truffles in coating; allow excess to drip off. Place on waxed paper-lined baking sheets and drizzle with bittersweet chocolate. Refrigerate for 2 hours or until firm. Store in an airtight container in the refrigerator.

2 packages (8 ounces each) cream cheese, softened
2 cups confectioners' sugar
1 cup sour cream
1 teaspoon vanilla extract
1 carton (12 ounces) frozen whipped topping, thawed
2 cans (16 ounces each) whole-berry cranberry sauce
2 tablespoons sugar
2 to 3 teaspoons grated orange zest
Fresh cranberries or mint, optional

Steps:

  • Prepare, bake and cool angel food cake according to package directions. Cut into 1-in. cubes; set aside. In a large bowl, combine cream cheese, confectioners' sugar, sour cream and vanilla; beat until smooth. Fold in whipped topping. In a bowl, combine the cranberry sauce, sugar and orange zest. , In individual parfait glasses or a 3-qt. trifle bowl, layer half of the cake cubes, cranberry mixture and whipped topping mixture. Repeat layers. Refrigerate until serving. Garnish with cranberries and mint if desired.

Then simply assemble and refrigerate the trifle up to 24 hours before you plan to serve it. Prep time does not include cooling time for custard.

3/4 cup sugar
3/4 cup fresh orange juice
1/4 cup Grand Marnier (or other orange liqueur)
1 (12 ounce) package fresh cranberries
1/2 cup sugar
5 tablespoons cornstarch
2 1/2 cups 2% low-fat milk
2 large eggs, lightly beaten
2 teaspoons vanilla extract
1/8 teaspoon salt
1 loaf cake (pound cake such as Sara Lee cut into 1/2 inch cubes)
1 teaspoon orange rind

Steps:

  • To prepare cranberries, combine 3/4 cup sugar, orange juice and Grand Marnier in a medium saucepan over medium-high heat, cook 3 minutes or until sugar dissolves, stirring occasionally. Add cranberries to pan; bring to a boil. Reduce heat, simmer 8 minutes or until cranberries pop. Spoon mixture into a bowl; cover and chill.
  • To prepare pastry cream, combine 1/2 cup sugar and cornstarch in a medium, heavy saucepan over medium heat. Gradually add milk to pan, stirring with a whisk until blended; bring to a boil. Cook 1 minute, stirring constantly. Remove from heat. Gradually add half of hot milk mixture to eggs, stirring constantly with a whisk. Return milk mixture to pan; cook over medium heat 1 minute or until thick, stirring constantly. Remove from heat. Stir in vanilla and salt. Place pan in a large ice-filled bowl until custard cools to room temperature (about 25 minutes); stirring occasionally.
  • Arrange half of cake cubes in the bottom of a 2-quart trifle dish. Spoon 1 1/2 cups cranberry mixture over cake; top with 1 1/2 cups pastry cream. Repeat layers. Garnish with rind. Cover loosely with plastic wrap, and chill at least 4 hours.

2 cups milk
2 (113 g) packages jell-o instant vanilla pudding
3 cups Cool Whip Topping, thawed
1 (298 g) package frozen pound cake, thawed, cut into small cubes
1 (284 ml) can mandarin orange segments, drained

Steps:

  • Dissolve jelly powder in boiling water. Stir in cold water. Pour into 13x9-inch pan. Refrigerate 3 hours or until firm.
  • Pour milk into large bowl. Add dry pudding mixes,. Beat with wire whisk 2 minutes or until lwell blended. Gently stir in the whipped topping.
  • Cut jelly into cubes. Remove 1 cup of the jelly cubes; set aside. Layer half each of the remaining jelly cubes, cake cubes, oranges and pudding in a 3L serving bowl; repeat layers. Top with reserved jelly cubes. Refrigerate at least 1 hour or until ready to serve.

1 cup boiling water
1 (10 ounce) can mandarin oranges
300 g angel food cake, cut into 1 inch cubes
1 1/2 cups cold milk
1 (30 g) package jell-o light vanilla instant pudding mix
1 (1 liter) container Cool Whip Topping, thawed
1 orange zest, from
fresh cranberries (to garnish)

Steps:

  • Dissolve jelly powder in boiling water.
  • Drain oranges, reserving liquid; add cold water to measure 1 cup; stir into jelly.

1/2 tsp. ground cinnamon
2 cups cold fat-free milk
1 tub (8 oz.) COOL WHIP LITE Whipped Topping, thawed
1 pkg. (13.6 oz.) prepared fat-free pound cake, cut into 1/2-inch cubes
1 can (11 oz.) mandarin oranges, drained

Steps:
