CRANBERRY SAUCE

One 12-ounce bag fresh cranberries
1 cup cranberry juice
1 cup pure maple syrup
3 tablespoons orange juice
1 tablespoon grated orange rind

Steps:

  • Wash the bag of cranberries under cool water, and then throw them into a medium saucepan. Pour in the cranberry juice and maple syrup. Add the orange juice and orange rind (you could also do lemon rind and lemon juice - anything citrusy). Stir together and turn the heat on high until it reaches a boil and the berries begin to pop. Turn down the heat to medium-low and continue cooking over the lower heat until the juice is thick, about 10 minutes. Turn off the heat. Allow to cool, and then chill in the fridge until Thanksgiving dinner is ready. It should have a nice jelly-like consistency.

  • Using a food processor, pulse the cranberries and oranges. Transfer the chopped fruit to a 1-quart bowl and add 1/2 cup of the sugar, stirring to mix. Add more sugar to taste, as the sweetness of the oranges will vary. Add the chopped pecans and serve.

VERY BERRY CRANBERRY SAUCE

2 bags fresh or frozen cranberries
1 cup orange juice
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/2 cup whiskey
1 cup blueberries
1/2 cup raspberries

Steps:

  • Put the cranberries, orange juice, brown sugar, granulated sugar and whiskey in a large saucepan and bring to a gentle boil over medium-high heat. Reduce the heat to low and simmer for 15 minutes. Add the blueberries and raspberries and cook for another 3 to 4 minutes. Set aside to cool, then transfer to a jar and keep in the fridge until cold and thick.

2 tablespoons maple syrup
1 large orange, zested and juiced, plus extra orange zest, for garnish

  • Combine the cranberry sauce, maple syrup and orange zest and juice in a bowl, then stir to combine. Transfer to a serving dish and garnish with the thyme sprigs and extra zest.

This is my husband's very favorite quick bread I make, a great holiday gift, and is my most-requested at parties, especially around the holidays. It originally came from the Betty Crocker Cookbook, but I usually omit the nuts (although I love pecans with the cranberries) and have added a glaze onto it, which really seemed to give it that extra little zing. When I serve it for parties or brunches, I slice it, then cut the slices in half top to bottom; people seem satified with the smaller pieces (though they often go back for more!) and it serves more that way. I always try to keep a bag of cranberries in the freezer for just this recipe.

2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1/4 cup margarine or 1/4 cup butter, softened
1 tablespoon orange zest
3/4 cup orange juice
1 egg
1 cup cranberries, chopped (fresh or frozen)
1/2 cup nuts (optional)
1 tablespoon orange juice
1 cup sifted powdered sugar
enough extra orange juice, to reach drizzling consistency

Steps:

  • Grease/spray bottom only of a 8x4 or 9x5 loaf pan.
  • Combine flour, sugar, baking powder, salt, and baking soda Add margarine and mix until crumbly.
  • Add peel, 3/4 c orange juice, and egg; stir until moistened Add cranberries and nuts.
  • Pour batter (it will be thick) into pan and bake until a knife comes clean from the center.
  • For a 8" loaf, about 75 min; for a 9" loaf, about 55-65 min at 350F (watch after about 50 min, depending on your oven).
  • Loosen sides from pan, remove& cool completely.
  • When cool, prepare glaze: combine 1 T orange juice, 1 c sifted powdered sugar, and enough extra OJ to drizzle.
  • Drizzle over top of loaf and enjoy!

This is a very refreshing recipe I have used for years. It comes from the bag of Ocean Spray Cranberries bought in the grocery store. This time of year cranberries are plentiful where I live (in fact I have a huge bag 21 pounds in the refrigerator) so right now I try to give new recipes a try before the fresh ones have to go into the freezer. 2 cups cranberries (fresh or frozen, 1 12oz bag is also enough)
1 medium orange, quartered (ends removed)
3/4-1 cup sugar (or eqivalent artificial sweetener)

Steps:

  • Slice unpeeled orange into eighths and remove any seeds. Place half of the cranberries and half of the orange in food processor. Pulse until evenly chopped. Tranfer to a bowl and repeat with the other half of orange and cranberries. Stir in sugar to taste and store in refrigerator of freezer.
  • You can also use a food grinder for the food processor step. The grinder is my preferred method, becaue that's how my Mom made it so many many years ago.

1/2 orange, rind of, ground
2 peeled oranges
3/4 cup walnuts, semi coarsely chopped
2 (3 1/2 ounce) boxes orange Jell-O

Steps:

  • Grind cranberries, oranges, rind and fold in the sugar.
  • Make the Jello with 1/2 the water it calls for. Stir quickly until dissolved.
  • Add to the cranberry mixture, add nuts.
  • Refrigerate overnight.

1 cup apple juice or 1 cup any combination juice
1 cup pure maple syrup

Steps:
