CRANBERRY-LIME MOCKTAIL

This mocktail with homemade cranberry syrup and fresh lime juice is tart, slightly sweet and completely refreshing.

Number Of Ingredients 5

2 cups fresh or frozen cranberries, plus more, for serving
1 1/4 cups sugar
3/4 cup frozen limeade concentrate (half of a 12-ounce can)
1/2 cup fresh lime juice, plus lime slices, for serving
Seltzer, for serving

Steps:

  • Combine the cranberries, sugar and 1 cup water in a medium saucepan over high heat. Bring to a boil and reduce to a simmer. Carefully smash the cranberries with a potato masher, then simmer the mixture until slightly reduced and dark red, about 10 minutes. Let cool for 10 minutes.
  • Strain the mixture through a strainer into a heatsafe container, pressing on the cranberry solids to extract all the juice. Let cool for 30 minutes.
  • Combine the cranberry syrup with the limeade and lime juice in a pitcher and stir well.
  • Mix equal parts of the drink mix and seltzer. Serve over ice with cranberries and a lime slice.

  • Bring 1-1/2 cups water and sugar to a boil. Remove from heat; stir in juices, lime zest and remaining water. Cover; refrigerate at least 1 hour. Serve over ice and, if desired, with lime slices.

2 tablespoons extra-virgin olive oil
2 large eggs
2 tablespoons finely chopped cilantro
Coarse salt
Juice of 1 lime

Steps:

  • Combine oils in a glass measuring cup. Place eggs, cilantro, and a pinch of salt in the bowl of a food processor. Blend until mixture is foamy and pale, about 1 1/2 minutes.
  • With machine running, add oil, drop by drop, through feed tube, until mixutre starts to thicken; do not stop machine at this point or mayonnaise may not come together. Add remaining oil in a slow, steady stream. When all oil has been incorporated, slowly add lime juice. Store, refrigerated, in an airtight container for up to 3 days.

1 cup cranberries, fresh or frozen
1/3 cup water
1/2 teaspoon lime zest
1/2 lime, juice of
1/3-1/2 cup Splenda sugar substitute, to taste (I use 1/3 cup)
1 pinch salt
1 teaspoon cold water
1/2 teaspoon cornstarch

Steps:

  • Add to a medium saucepan, cranberries, 1/3 cup water, lime zest, lime juice, splenda and the pinch of salt.
  • Bring to boil, reduce heat and simmer until the cranberries start to burst, 3 or 4 minutes.
  • Make a slurry with the teaspoon of water and cornstarch.
  • Add the slurry to the saucepan, stir and simmer 1 minute longer or until thickened.
  • Cool and serve with poultry.
