- Preheat oven to 325°. Line a roasting pan with foil. Place ham on a rack in prepared pan. Bake, covered, 1 hour., Meanwhile, in a small saucepan, whisk remaining ingredients until blended. CRANBERRY GLAZED HAM

- Preheat oven to package directions (approx 350 degrees). Line a dutch oven with aluminum foil to wrap your ham. Place the ham cut side down in the dutch oven. Wrap the ham with foil and cover with a lid. Bake according to package directions for HALF the time.
- While the ham is heating, in a medium sauce pan, stir together all other ingredients. (Use all of the zest + juice of the orange.)
- Heat over medium heat, stirring frequently, until the sugar has dissolved. Bring to a low boil, stirring. Reduce heat to a simmer until thickened to desired consistency, about 30 minutes.
- When the ham has heated half the package time, remove from the oven. remove lid and pull back the foil. Generously brush the ham all over with the cranberry sauce. Place back in the oven uncovered for 15 minutes.
- Repeat this process, basting and baking, for 2 - 3 more times until the ham is heated through and the cranberry glaze is rich and thick.
- Remove from heat, let rest for 15 minutes. Slice and serve with additional cranberry glaze.

- 1. Remove and discard glaze packet from ham or reserve for another use. Begin by preparing ham according to package directions.
- 2. Make Honey Glaze: While baking, mix honey, mustard and lemon juice in small bowl until blended. Set aside until the last 30 minutes of baking time.
- 3. Make Cranberry Relish: Combine apples and juice in medium saucepan. Bring to a boil over medium heat. Reduce heat to medium-low; simmer 5 minutes, stirring occasionally. Add cranberries; simmer an additional 5 minutes, or until fruit is tender, stirring occasionally. Remove from heat; stir in marmalade and pecans. Set aside until ready to eat. - Put the ham into a large saucepan and cover with cold water. Bring to a boil and then immediately drain and rinse it in a colander, to remove any excess saltiness. Alternatively, leave the ham soaking in cold water overnight.
- Rinse the saucepan and put the ham back in, and add all remaining ingredients. If the fruit juices do not cover the ham then add some water; it really depends on how snugly your ham fits into the saucepan.
- Bring the pan to a boil and then cook at a fast simmer for about 3 1/2 to 4 hours. Partially cover the ham with a lid if the liquid is boiling away too much and the top of the ham is getting dry.
- Once the ham is cooked, remove it from the hot and now salty juice, and sit it on a board. If you want, you can actually cook this far ahead of schedule and then let it get entirely cold before glazing and roasting it. If that's the case, then cook it for about 1/2 hour less and then just let it get cold in the cooking liquid.
- On the day of cooking, preheat the oven to 425 degrees F.
- When the ham is cool enough to touch then cut and peel the rind off the cooked ham, making sure to leave a thin coating of the white fat on the ham. Score the fat into a diamond pattern with a sharp knife, and stud the points of each diamond with a clove.
- Heat the remaining glaze ingredients together in a saucepan until the jelly or sauce melts into the honey, mustard, and cinnamon to make a smooth but syrupy glaze; it needs to be thick enough not to run off the ham completely as it cooks in the oven.
- Sit the ham on a piece of foil in a roasting tin, which will give you an easier time later washing up, as the sugary glaze will burn as bits of it do inevitably dribble down the ham. Pour the glaze over the clove studded ham so that all of the scored fat is covered. Cook the ham for 15 minutes or until the fat is colored and burnished by the sugary glaze.
- If the ham is completely cold prior to glazing, then cook for 40 minutes at 350 degrees F, and turn up the heat to 425 degrees F for another 15 minutes. These timings are based on the ham being cold at room temperature, not refrigerator cold.

- Combine cranberries, water, and honey in a medium saucepan. Set over medium heat.
- Stir occasionally for about 4-5 minutes, until most of the cranberries have popped.
- Add dijon mustard, vinegar, brown sugar, and cayenne pepper.
- Continue to cook for another 3-5 minutes until the sauce has thickened some and is syrupy. Remove from heat.
- If you have an immersion blender, use it to puree the sauce. (If you don't, transfer the mixture to a regular blender. Leave the top of the blender vented (to allow steam to escape) and cover with a towel. Blend it up until smooth.)
- Preheat your oven to 325 degrees F. Prepare a roasting pan with a roasting rack so that the ham doesn't cook in it's own juices (you want a nice crispy bottom, no soggy ham bottoms please.)
- Place the ham on the roasting rack and use a sharp serrated knife to score the ham diagonally.
- Use a brush to coat the ham all over with the cranberry sauce. (You will repeat this process once more about 20 minutes before the ham is done.)
- Place the pan in the oven and roast for 1 and 1/2 to 2 and 1/4 hours, or until a thermometer registers 135 degrees F. (About 20-25 minutes per pound). (You don't need to worry about the temperature too much since the ham is already cooked. You just want to make sure it's hot all the way through.
- 20 minutes before you think it will be done, brush with sauce one more time.
- Serve the ham with the remaining glaze (Warm it up in the microwave or on the stove since it will be cool by now.)

- Remove your ham from the refrigerator and allow to sit at room temperature for 2-3 hours so it can warm up.
- Preheat oven to 325°F. Make sure oven racked is at the bottom. Remove the rack from the roasting pan and add the star anise and a handful of whole cloves to the pan. Fill with an inch of water. Place rack back in.
- If ham is wet and slimy, gently pat dry with a paper towel. Using a sharp knife, score the ham diagonally. Place ham flat face down onto the rack and tightly cover with a sheet of aluminum foil.
- Bake in preheated oven for 30 minutes. Meanwhile, prepare the glaze.
- Add cranberries, honey, water and orange juice to a saucepan over medium heat and cook, stirring occasionally until most cranberries pop and mixture begins to boil, about 5-6 mins.
- Add orange zest (optional), cayenne, mustard, vinegar and brown sugar and stir until smooth.
- Allow to cook for another 3-5 mins or until sauce thickens up. Either using an immersion blender, a regular blender or a food processor, blend sauce until it's nice and smooth. Set aside.
- Once the ham has finished pre-baking, remove from the oven and remove the foil. Brush the entire ham with a coat of glaze, return to the oven and bake for another 20 minutes.
- Continue to re-glaze the ham every 20 minutes until it's finished baking. Make sure the internal temperature is around 130°F - 140°F. The baking time is 18-20 minutes per pound, so baking times may vary. See information in post above for more details.
- For the last 20 minutes of baking, glaze the ham one final time, and spoon some of the fat and clove flavoured water over the ham.
- Once ham has finished baking, remove from oven and spoon more of the juices on top and brush with more glaze.
- Loosely cover the ham with aluminum foil and allow to rest for 15-20 minutes.
- Spoon some more juices on top and brush with a final coat of glaze. Transfer ham to a serving platter with a bed of kale and fresh cranberries. Serve and enjoy!

- Soak the gammon joint in cold water overnight, then drain it, discarding the water. Weigh the gammon to calculate the cooking time - it will take 25 mins per 500g, plus 20 mins (so a 2kg joint will take 2 hours).
- Place the gammon in a large saucepan and add the bay leaves, onion, celery and carrots to the pan, then cover the gammon with cold water. Bring to the boil, then reduce the heat and cover the pan. Start the timing from the moment the gammon comes to the boil. Simmer the gammon for the calculated time.
- Remove pan from the heat and carefully lift out the gammon, reserving cooking liquor. Remove the string. Cut the skin off the gammon, leaving just a thin layer of fat. Score through the fat in a diamond pattern using a small, sharp knife. Press cloves, if using, into the fat and the gammon.
- Mix together the cranberry sauce, Demerara sugar and vinegar. Spread mixture over the top of gammon. Place gammon in a roasting tin and spoon some of the cooking liquor around it.
- Set the oven to 190°C (375°F, gas mark 5). Bake the gammon in the centre of the oven for about 20-30 mins, or until the topping is bubbling and has started to crisp. Remove it from the oven, transfer to a warmed serving plate and keep it warm until serving.

PEPPER JELLY CRANBERRY GLAZED HAM
This Pepper Jelly Cranberry Glazed Ham has to be one of my favourite glazed ham recipes. The little kick from the pepper jelly and sweetness from the cranberry sauce and brown sugar make the glaze for this ham ridiculously delicious!

Steps:
- Preheat oven to 350 degrees.
- Place ham in a shallow roasting pan or baking dish.
- In a saucepan over medium heat combine the brown sugar, cranberry sauce and pepper jelly.
- Stir until combined.
- Continue to stirring over medium heat until the mixture comes to a bubble. Let simmer for 2-3 minutes.
- Spoon half of the glaze over the ham.
- Bake, uncovered, at 350 for 1 hour.
- Spoon the remaining glaze over the ham and bake another 15-30 minutes longer or until a thermometer reads 140° and ham is heated through.
- Serve!

- Combine cranberries, 1/2 cup water, sugar, vinegar, zest and salt in a large pan. Bring to a boil. Reduce heat to medium-low; simmer until berries have burst, about 10 minutes. Strain into a large bowl, pressing against solids to extract as much liquid as possible (you should have about 2/3 cup). Discard solids.
- Melt butter over medium-high heat in a skillet large enough to hold ham flat. Pat ham dry and cook until lightly browned, about 5 minutes per side. Transfer to a large plate and pour off all but 1 Tbsp. liquid in skillet.
- Pour strained cranberry mixture into skillet, add 1 Tbsp. water and stir over low heat until smooth, scraping up any browned bits from bottom of skillet. Whisk in mustard. Return ham to skillet and turn a few times to coat and warm through. Transfer to a platter and drizzle with any extra glaze. Serve warm.

- In a pan of a roasting rack, add about 2 cups of orange juice (cover about 3/4 inches of pan)1 and orange slices from 1 orange. Place foil over the rack and place ham on top. Seal roasting pan tightly with aluminum foil, and bake for about 1 to 1 ½ hours (about 10 minutes per pound), until the center registers 110 degrees F.
- Make the glaze: in a saucepan, combine all ingredients and stir until it boils. Simmer for 10 minutes, until thickened. If too thick, add more orange juice. I you want it sweeter, add 1 to 2 more tablespoons brown sugar. Reserve half for serving.
- Carefully, remove foil. Increase temperature to 400 degrees F. Baste with juices from the pan and brush with glaze, and then bake for 10 minutes, uncovered. Then, baste and brush with glaze and bake again for another ten minutes, until internal temperature reaches 140 degrees F.
