CRANBERRY HERB GOAT CHEESE LOG
Delicious cranberry herb goat cheese log that's perfect for the holidays! With pomegranate, parsley, pecans, cranberry sauce, honey and cracked black pepper.

Steps:
- Mix 1 Tbsp. chopped parsley with the pomegranate arils and pecans in a small bowl.
- Smear half of the cranberry sauce on a serving plate.
- Place goat cheese log on serving plate on top of cranberry sauce.
- Pat pomegranate/pecan/parsley mixture onto cheese letting any extra fall around the log onto the plate.
- Spoon remaining cranberry sauce over the top of the log.
- Sprinkle with remaining 1 Tbsp. chopped parsley, drizzle with honey, and then top lightly with fresh cracked pepper.
- Serve immediately with crackers, toasted bread, and/or sliced veggies.

- Let goat cheese soften slightly on the counter while you're preparing the cranberries.
- Roughly chop the dried cranberries. Mix together with the ground cinnamon.
- Place cranberry cinnamon mixture onto a flat plate.
- Carefully roll the goat cheese log into the dried cranberries until all sides are covered. You may have to press some of the cranberries into the goat cheese log with your hands to get it to stick.
- Serve immediately or refrigerate until ready to eat.

GOAT CHEESE AND CRANBERRY PARCELS
Cranberry sauce is not just for winter / Christmas / Thanksgiving! I think an endive and watercress salad goes well as the bitterness contrasts with the sweet cranberry sauce. Alternatively, if you have the time to prepare them, some creamy mashed potatoes and fine green beans go well with the parcels.

- Cut each piece of phyllo into 4 quarters. Cut the cheeses in half width ways.
- To make a parcel, put one of the pieces of phyllo on a work surface and brush with olive oil.
- Put another piece over it at right angles to make a cross and brush with olive oil again. Lay a third piece diagonally, as if you were making a star shape, brush with oil, then top with the final piece, diagonally, to complete the 'star', and brush with oil.
- Place one of the pieces of cheese, cut-side up, in the centre of the pastry and put a heaped teaspoon of cranberry sauce on top of it.
- Fold up the sides of the phyllo and scrunch them at the top so they hold together. Brush all over with olive oil. Make three more parcels in the same way.
- Place all the parcels on a lightly oiled baking sheet and bake in a preheated oven, 400F, for 15-20 minutes, or until crisp and lightly browned.
- Serve at once with a leafy salad dressed with vinaigrette.

- Remove goat cheese logs from packaging and set aside.
- Evenly distribute cranberries on a sheet of parchment paper.
- Roll log into the cranberries and wrap with the parchment paper.
- Firmly roll wrapped log so cranberries adhere to the cheese.
- Place in refrigerator to chill.
- Unwrap log 30 minutes before serving.
- Serve with your favorite breads or crackers.

- Stir together cranberries, red wine, water, agave, pepper jelly (or diced jalapeno) and orange zest in a medium sauce pan, over medium-high heat. Bring to a boil and reduce heat to medium-low. Stirring occasionally, let cranberry mixture simmer until liquid is reduced by ¾. Cranberries will “pop” during this process and break down causing the mixture to thicken. Remove from heat and let cool for approx. 15 min.
- While cranberries are cooking, prepare the goat cheese. Place the sliced almonds on a small plate or in a shallow dish , roll the goat cheese in the nuts, gently pressing to adhere the nuts to the cheese, until all sides of the log are evenly coated.
- Place goat cheese log on a serving plate and drizzle the top with honey. When cranberries are cooled, spoon over cheese log. Garnish with fresh chopped cilantro.

- Add the cranberries, sugar, water, orange zest, and cinnamon to a medium saucepan and heat over medium to medium-high heat, stirring occasionally for about 8 to 10 minutes (or 15 to 20 minutes if your cranberries are frozen). The cranberries will pop, the mixture will foam and subside, and the sauce will get thick as the cranberries break down. Remove from the heat and allow to cool to room temperature.
- Lay a sheet of plastic wrap on the counter. Spread about ½ cup of the thick cranberry sauce onto the plastic wrap, a bit longer and wider than the goat cheese log. Lay the goat cheese log on top of the cranberry sauce and spread more sauce over the top and sides of the goat cheese (much like frosting a cake). There should be about ¼-inch thick layer of cranberry sauce over all the sides of the goat cheese. Wrap the plastic wrap around the cranberry-coated goat cheese log and refrigerate for at least 30 minutes.
- Remove the goat cheese from the refrigerator about 30 minutes before serving to allow the cheese to slightly soften and become easier to spread. Carefully unwrap the plastic wrap and serve the cranberry-cinnamon goat cheese with crackers.
