- Place a large non-stick skillet over medium-high heat with olive oil. Drain chicken and cook in skillet until all the pink is gone (you may have to do this in batches depending on how big your skillet is). Place cooked chicken in large bowl and season with salt and pepper to taste. Cover and refrigerate until cool, about 30 minutes.
- In a small bowl mix together cream, mayonnaise, Greek yogurt, poppy seeds, and orange zest until combined. Pour mixture over chicken and season to taste with salt and pepper. Add chopped celery and mix until combined. Cover and refrigerate for at least 1 hour.
- In a small pan over medium heat, melt butter. Add nuts and cook until toasted, about 2-3 minutes (they should be a little more than lightly browned and you'll begin to smell them).
- Stir in toasted nuts and dried cranberries just before serving. Serve with split croissants.

- In a small bowl, combine cranberries and sugar; set aside. In a large bowl, dissolve gelatin and salt in boiling water. Stir in the cold water, lemon juice, cinnamon and cloves. - Toast the pecans in a medium saucepan over medium-low heat. Once they darken a bit and smell nutty, remove to a cutting board and chop roughly once cool.
- Combine in the same saucepan: the light agave syrup, honey, cranberry juice, orange juice, candied ginger and five-spice powder. Bring this mixture to a boil over medium-high heat, then reduce the heat to maintain a simmer for 5 minutes.
- Add the cranberries to the saucepan, boost the heat to medium and bring to a boil. Reduce the heat to maintain a simmer. Cook for 15 minutes, stirring often, until the cranberries begin to burst open, and the mixture thickens. (I usually use the back of a wooden spoon to pop the berries against the side of the pan.)
- After 15 minutes (no more or the pectin will start to break down) remove from the heat and stir in the pecans. Set aside to cool for 5 minutes.
- Spoon the mixture into a 3 1/2-cup silicone mold of your choice, cover with plastic wrap and cool on the counter for 30 minutes. Place on a sheet pan before refrigerating for at least 6 hours. (Overnight would be better.)
- Turn out of mold and serve as a side or top with whipped cream and serve as dessert.

- 1. Mix these 3 items and let stand: 1 package Cranberries - chopped * ½ cup apples - chopped 2 cups sugar (stir occasionally while fixing other parts of salad)
- 2. Mix and let cool down: 2 small pkg. Lemon Jell-O 1 small pkg. Cherry Jell-O 3 cups hot water - boiling ½ cup pineapple juice
