TOASTED GRUYERE AND CRANBERRY CUPS

One 10-ounce bag frozen or fresh cranberries
1/4 cup sugar
1/2 teaspoon orange zest plus 1/4 cup orange juice
4 ounces cream cheese, at room temperature
1 cup grated Gruyere cheese
48 frozen prebaked phyllo cups or hors d'oeuvre cups
2 tablespoons chopped chives

Steps:

  • Preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment.
  • Mix the cranberries, sugar and orange zest and juice in a small saucepan. Place over medium heat and cook until the cranberries soften and start to burst, 8 to 10 minutes. Set aside.
  • Combine the cream cheese and Gruyere in a large bowl with a wooden spoon or rubber spatula until smooth.
  • Place the phyllo cups on the parchment-lined baking sheet. Spoon about 1 teaspoon of the cranberry sauce into each cup. Spoon about 1 teaspoon of the cheese mixture on top of the cranberry sauce. Bake until the cups are crisp and the cheese is melted and bubbling, 10 to 12 minutes. Sprinkle with chives before serving.

6 skinless, boneless chicken breasts
1 ½ (1 ounce) packages dry onion soup mix
1 (16 ounce) can jellied cranberry sauce
1 cup French dressing

Steps:

  • Place the chicken breasts in a glass or non-reactive baking dish.
  • Stir the onion soup mix, cranberry sauce, and French dressing together in a bowl until well blended. Pour over the chicken breasts. Cover the baking dish with plastic wrap, and refrigerate at least 8 hours.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove plastic wrap from the baking dish, and cover loosely with aluminum foil.
  • Bake chicken in preheated oven until top is bubbly and slightly browned, about 1 hour and 15 minutes.

1/4 cup chopped dried cranberries
3/4 cup finely chopped cooked chicken breast
1 container (6 oz) Greek Fat Free plain yogurt
1 tablespoon fresh lemon juice
3 tablespoons chopped walnuts, toasted
2 green onions, chopped (2 medium)
1 teaspoon chopped fresh rosemary leaves
1/2 teaspoon salt

Steps:

  • Thaw phyllo shells as directed on package.
  • In medium bowl, mix 2 tablespoons of the cranberries and the remaining ingredients.
  • Spoon generous teaspoonfuls mixture into shells. Garnish with remaining 2 tablespoons cranberries and, if desired, rosemary sprigs.

Apple Cranberry Phyllo Turnovers image

4 Granny Smith apples, peeled, cored and cut into 1/4-inch slices (about 1 1/2 pounds)
1/3 cup dried cranberries
1/3 cup packed light brown sugar
1/2 teaspoon ground cinnamon
1 pinch ground nutmeg
1 teaspoon cornstarch dissolved in 1 tablespoon cold water
6 sheets phyllo dough, thawed
3 tablespoons canola oil
4 ladyfinger cookies, crushed, divided
Cooking spray

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large nonstick pan cook the apples, cranberries, sugar, cinnamon and nutmeg over medium heat stirring occasionally until the fruit is tender, about 10 minutes. Stir in the cornstarch mixture and cook for another 2 to 3 minutes, until the juices in the pan thicken. Set aside to cool.
  • Lay a sheet of phyllo onto a large cutting board and brush the dough with oil. Top with a second sheet and brush with oil. Sprinkle half the crushed cookies on top. Add another sheet of phyllo and brush with oil. Cut the phyllo into 4 long pieces. Put a small mound of the apple mixture about 1-inch from the bottom of 1 section and fold the phyllo over the mixture into a triangle-shaped pocket. Continue to fold to maintain the triangle shape so a turnover is formed. Repeat with the other 3 sections. Repeat the whole process again with 3 more sheets of phyllo so that you wind up with 8 turnovers. Be sure to reserve a little oil to brush the top of each turnover.
  • Spray a baking sheet with cooking spray, place the turnovers on the sheet, brush the tops with the remaining oil and bake for 20 to 25 minutes or until nicely browned. Serve warm.

1 1/4 cups 2% evaporated milk
4 teaspoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground
1/4 teaspoon nutmeg, grated
2 (300 g) packages frozen chopped spinach, thawed
2 tablespoons butter
2 garlic cloves, minced
1/4 cup pine nuts or 1/4 cup sunflower seeds
1/4 cup dried cranberries
1 egg
2 cups cooked chicken, cubed (see tip in recipe description)
4 sheets phyllo pastry
nonstick cooking spray

Steps:

  • Whisk milk with flour in a small saucepan and bring to a simmer over medium-high heat, stirring, until thickened.
  • Stir in salt, pepper and nutmeg; let cool slightly.
  • Drain spinach and squeeze out water.
  • Using a nonstick skillet, melt 1 tbsp of the butter over medium-high heat and cook the spinach, garlic, pine nuts & cranberries, stirring, until garlic begins to colour (about 5 minutes).
  • Stir egg into milk mixture then stir into spinach mixture along with the chicken.
  • Melt remaining butter.
  • Spray pie plate with nonstick spray.
  • Cut phyllo in half crosswise and drape across pie plate so 1/3 overhangs the plate.
  • Brush lightly with butter and press into plate.
  • Repeat with each sheet, layering and fanning sheets to overlap slightly and evenly cover pie plate.
  • Spoon filling into pastry then fold edges over filling to form 2 1/2 inch border.(if making ahead pie can be covered and refrigerated for up to 3 hours at this point).
  • Place pie on baking sheet, cover lightly with foil and bake in 375F oven for 35 to 40 minutes or until pastry is golden.
  • Let stand 5 minutes before serving.

  • Preheat oven to 375°. Unroll one tube of crescent dough into one long rectangle; press perforations to seal. Cut into 24 pieces; lightly press each piece onto the bottom and up sides of an ungreased mini-muffin cup. 1/2 cup chopped fresh or frozen cranberries
3 tablespoons sugar
2 tablespoons raisins
2 tablespoons chopped pecans
1 tablespoon honey
1/4 teaspoon shredded orange peel
20 sheets phyllo dough (14 inches x 9 inches)
1/2 cup butter, melted
Confectioners' sugar

Steps:

  • In a saucepan, combine the cranberries, sugar, raisins, pecans, honey and orange peel; bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes, stirring occasionally. Drain and discard any juice. Cool to room temperature., Lightly brush one sheet of phyllo with butter; place another sheet of phyllo on top and brush with butter. Keep remaining phyllo covered with plastic wrap and a damp towel to prevent drying. Cut the two layered sheets into three 14x3-in. strips. Place a teaspoon of cranberry filling in lower corner on each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. Brush end of dough with butter and press onto triangle to seal. Turn triangle and brush top with melted butter. Repeat with remaining strips of dough and remaining sheets of phyllo., Place triangles on a greased baking sheet. Bake at 375° for 15-17 minutes or until golden brown. Cool on a wire rack. Sprinkle with confectioners' sugar.
