CRANBERRY BRIE BITES
Baked Brie gets dressed up for the holidays, stuffed into little golden parcels of puff pastry, along with a hit of cranberry sauce and the crunch of walnuts.

- Preheat the oven to 425 degrees F and line 2 baking sheets with parchment paper.
- Whisk together the egg with 1 tablespoon of water in a small bowl for an egg wash. Cut the side rind off the Brie, then cut the Brie into 32 even pieces. Set aside.
- Unfold a puff pastry sheet on a lightly floured surface. Roll out into a 13-inch square. Cut into 16 squares. Repeat with the second sheet so you have 32 squares total.
- Top a pastry square with about 1/2 teaspoon cranberry sauce, 1/4 teaspoon walnuts, a piece of Brie and a pinch of thyme.
- Use your finger or a pastry brush to brush the edges of the pastry square with egg wash until lightly coated and tacky. Pinch 2 opposite points together, then pinch the remaining 2 points together so that you have a little package. Repeat with the remaining pastry squares and filling.
- Transfer the pouches to the prepared baking sheets and brush with the remaining egg wash. Bake until puffed and golden brown, 15 to 20 minutes.
CRANBERRY-BRIE AREPA
Chef Mauro says you shouldn't be intimidated by this vegetarian version of the popular Venezuelan sandwich. Masarepa blanca is a precooked corn flour and can be found in Latin markets as well as some larger grocery stores or ordered online. (Don't be tempted to substitute with another traditional Mexican flour, masa harina.) "Frying that bread seems like a lot of work, but it's a simple two-step process," says Chef Mauro. "The sweetness from the cranberry and earthiness of the Brie, tangy mustard and tartness of the apple - it's really amazing. Even my 3-year-old enjoyed it."

- Preheat oven to 400 degrees, with a rack set in the middle position.
- Whisk masarepa, salt and baking powder until combined. Slowly add warm water and stir until a dough forms. Form 6 3-inch rounds, about 1/2-inch thick.
- Heat 2 tablespoons of oil in a 12-inch nonstick skillet over medium-high heat until shimmering. Add half the cakes, and cook 4 minutes on each side, until golden. Transfer to parchment-lined sheet pan and repeat with remaining cakes.
- Finish in oven for 10 minutes, or until the cakes sound hollow when tapped on the bottom. Immediately split cakes horizontally with fork, and stuff with a couple slices of Brie. Close and let the residual heat melt the Brie.
- Reopen and schmear some of the cranberry on the bottom slice, along with a couple slices of apple and a bit of arugula. Serve with a small side of Dijon to dip the sandwich in.
CRANBERRY-BRIE KNOTS
Two of the holiday season's most popular ingredients-cranberries and Brie-team up in this easy appetizer. Twist them with fluffy pizza dough and bake until golden for the ideal handheld starter.

- Brush the bottom of a rimmed baking sheet with 1 tablespoon olive oil and place the pizza dough on top. Brush the top of the dough with the remaining 1 tablespoon olive oil and cover lightly with plastic wrap. Let rest at room temperature until just about doubled in size, 1 hour.
- Cut off the rind from the sides of the Brie wheel, then cut the Brie into 18 equal-sized cubes. Set aside.
- Lightly flour a work surface. Using floured hands, shape the dough into an 18-by-4-inch-rectangle. Using a pizza cutter or sharp knife, cut the dough into eighteen 1-inch-wide strips.
- Shape each strip into a 10-inch-long rope and tie into a knot, tucking the two ends of the rope underneath it. Divide the knots between two baking sheets and let rest until slightly puffed, 40 to 45 minutes.
- Meanwhile, position the oven racks in the upper and lower thirds of the oven and preheat to 425 degrees F.
- Cut a small slit in the top of each knot with a sharp paring knife and use your fingers to create a small well. Spoon a heaping 1/4 teaspoon cranberry sauce into each well and top with 1 piece of Brie. Reserve the remaining cranberry sauce for serving.
- Brush the tops of the knots with 4 tablespoons of the butter. Sprinkle with the Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper. Bake until the cheese is melted, and the dough is fully cooked and turning light golden, 20 to 25 minutes. Let rest for 10 minutes before serving.
- Meanwhile, stir together the remaining cranberry sauce and 2 tablespoons butter in a small bowl. Serve with the knots for dipping.
CRANBERRY BRIE BITES

- Place Brie cheese in the freezer for 20 minutes. Oil a mini muffin pan with cooking spray.
- Roll 1 puff pastry sheet out into a 10x14-inch rectangle. Cut the sheet lengthwise into 4 even strips and crosswise into 6 even strips; there should be 24 squares. Separate and press them gently into the muffin cups.
- Cut chilled Brie cheese into 24 pieces approximately 3/4-inch in size. Add 1 teaspoon cranberry sauce to each pastry-lined muffin cup; press in 1 piece of Brie and top with 1 teaspoon of chopped walnuts. Sprinkle bites with sea salt. Chill for at least 30 minutes and up to 3 days.

- Thaw the puff pastry according to package directions.
- Preheat the oven to 400°F. Spray a 24-well mini muffin pan with non-stick cooking spray. Place the brie in the freezer for 20 minutes or until firm to the touch.
- On a well floured surface, roll the sheet of puff pastry into a 10x15-inch rectangle. Cut the pastry into 4 strips lengthwise. Then, cut the pastry crosswise into 6 strips, creating 24 squares. Press the pastry squares into each well of the muffin pan, letting the excess stick up over the edges.
- Cut the firm brie into 24 (½-inch) slices. Place a piece in the center of each pastry square. Top each with about 1 teaspoon of cranberry sauce. Sprinkle with chopped pistachios.
- Bake for 15 minutes or until the puff pastry is golden brown on the edges and the cheese is bubbly. Let cool in the pan for 5 minutes. Remove the bites from the pan and garnish with sea salt and pepper, if desired.
