CRANBERRY-WALNUT GRANOLA
Based on a recipe from The Wholesome Junk Food Cookbook by Laura Trice. She says of this recipe, "I grew up eating homemade granola that my mom made for us and have found that having a tart fruit in the granola gives it extra pizzazz. I enjoy the cranberry-walnut combination. Walnuts have healthy oils and are so good for us. The protein and fat combination of the nut helps to make the granola more filling, providing lasting energy. Granola takes a little while to bake and makes your entire house smell good. This is a good granola for breakfast." NOTE: Add fruit to granola only after the baking is done to avoid drying out the fruit and avoid making it tough to chew and less flavorful.

- Preheat oven to 325°F Prepare a shallow 14x11-inch pan by greasing with cooking spray or butter.
- In large bowl, thoroughly mix together oats, walnuts, sesame seeds, orange zest, sugar, and salt.
- In a separate bowl combine the honey and oil. Pour over the dry ingredients. Thoroughly mix together and spoon into the prepared pan.
- Bake for 30 minutes, turning the pan and stirring every 10 minutes, or until golden brown.
- Remove from oven. Mix in the dried cranberries and blueberries, if using, and allow to cool.
CRANBERRY APPLE COBBLER
This is an awesome autumn or holiday dessert and simple to prepare. The cobbler is outstanding served with vanilla ice cream. When ready to serve, put a big scoop on top of each bowl of warm cobbler. Yum!

- Preheat oven to 400°. Spray the bottom and sides of a 9"X13" baking dish with cooking spray.
- In a small bowl combine cornstarch, brown sugar, cinnamon, cloves, and ginger.
- Using 1/2 a can of biscuits, pull apart the layers and haphazardly distribute a single layer across the bottom of the baking dish.
- In a large bowl, combine cranberries, apples, vanilla, and the brown sugar mixture. Mix evenly and pour half the mixture onto the biscuits in the baking dish.
- Create another thin layer of biscuits on top of the cranberries/apples with the other 1/2 can of biscuits. Then pour the remainder of cranberries and apples into the dish.
- Create a top crust by laying on the remaining can of biscuits that have been separated into layers.
- Sprinkle with sugar, dot generously with butter bits, and bake for 20 to 30 minutes on middle rack until top is golden. Check the center, going all the way to the bottom for doughy spots. If the center is not done, cover the top with a loose sheet of aluminum foil and bake an additional 10 to 15 minutes on 350°.
- If you don't like a lot of dough in the cobbler, use only one can of biscuits to create a top crust only. Or create a bottom and top crust, be creative and make it your own.

- In a large bowl, combine sugar and flour; stir in cranberry sauce. Add apples; toss to coat. Transfer to a greased 13x9-in. baking dish. , In a small bowl, combine the oats, flour, brown sugar, walnuts and cinnamon; cut in butter until mixture resembles coarse crumbs. Sprinkle over apple mixture. , Bake at 375° for 35-40 minutes or until filling is bubbly and topping is golden brown. Serve warm with ice cream if desired.

- Heat oven to 325 degrees.
- Combine oats, walnuts, cinnamon, nutmeg, and salt together in a large bowl.
- In a separate bowl,mix maple syrup, vanilla, and oil.
- Pour syrup mixture over oat mixture and combine until all ingredients are well incorporated.
- Spread mixture onto parchment paper lined baking sheet and bake 15 minutes.
- Stir and return to the oven 10 minutes longer.
- Remove from oven and allow to cool completely.
- Granola may be stored up to 2 weeks in an airtight container.
CRANBERRY MAPLE WALNUT GRANOLA
I made this for holiday gifts and to have on hand for a healthier holiday snack, it is a nice way to lighten up granola using egg whites. I found the recipe in a recent 11/07 Bon Appetit Magazine and was pleasantly surprised to see the kids eating it by the handful:)

Steps:
- Preheat 325 degrees.
- position rack in bottom third of oven.
- Spray a large jelly roll pan with non stick cooking spray.
- Stir 1/2 cup sugar and syrup in heavy small saucepan over low heat until sugar dissolves,occasionlly brush down sides with wet pasty brush.
- Pour into large bowl,cool to luke warm.
- Whisk in egg whites, extracts and spices.
- Add oats,nuts and remaining quarter cup of sugar,mix well.
- Spread mix in even layer on jelly roll.
- Bake 35 minutes.
- Using spatula turn granola over-bottom will be browned.
- Bake 10 minutes.
- Sprinkle cranberries over and continue to bake 10 more minutes or till dry.

- Heat oven to 400 degrees.
- Peel, core, and slice 4 medium tart cooking apples into 1/4 inch slices.
- In large bowl, combine all cobbler ingredients except apples and cranberries.
- Add apples and cranberries; toss to coat with flour mixture.

- Preheat oven to 350 degrees F. Coat a 2-quart casserole dish with baking spray.
- In a food processor, pulse the walnuts, 3 tablespoons butter and 3 tablespoons sugar until finely crumbled.
- Press crumbs into the bottom of the casserole dish. Bake for 8 minutes.
