The original recipe for these delightful cookies called for raisins. Since we aren't raisin fans, I added dried cranberries instead. The results? Incredible! -Theresa Smith of Rome, Georgia

Steps:
- In a large bowl, cream butter and brown sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine the flour, cinnamon, salt, baking soda and nutmeg; gradually add to creamed mixture and mix well. Stir in the oats, cranberries, apple and walnuts., Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Bake at 375° for 12-15 minutes or until lightly browned. Cool for 2 minutes before removing to wire racks.

This Cranberry Apple Oatmeal is a healthy holiday breakfast that combines seasonal fruits and whole grains. It's the perfect weekday breakfast to get you in the holiday spirit, but can be enjoyed all winter long!

Steps:
- Add chopped apples, cranberries, brown sugar, butter, cinnamon, ginger, nutmeg, salt, and 2 Tbsp water to a large saucepan over medium-high heat.
- Once simmering, let cook for 3-5 minutes, stirring occasionally, until apples are tender and cranberries are just starting to burst. Remove 3 Tbsp mixture to separate bowl (you'll use this as a topping).
- Add remaining 1 3/4 cups water to saucepan and let come to a simmer. Add oats and cook for about 5 minutes, stirring occasionally, until oats are cooked and mixture is creamy.
- Serve in bowls and top with reserved apple/cranberry mixture.
CRAN-APPLE BAKED OATMEAL

Steps:
- Cream butter or margarine, cinnamon, cardamom, baking soda, and brown sugar. Mix in applesauce. Gradually blend in flour, and then oats. Stir in dried. Let dough sit for one hour.
- Drop by teaspoonful onto ungreased baking sheet.
- Bake at 350 degrees F (175 degrees C) for 10 to 12 minutes, or until edges are slightly browned. Cool on wire rack.

- Combine first seven ingredients (flour through cinnamon) in large bowl.
- Add ½ cups applesauce and butter; cut in with pastry blender until mixture resembles coarse crumbs.
- Stir in cranberries and apple.
- In small bowl combine milk and ¼ cups honey; add to flour mixture and stir until dough forms ball.
- Knead dough 10-12 times on floured surface; pat into 8-inch circle and place on sprayed baking sheet.
- Use sharp knife to cut dough into 12 wedges, and separate wedges slightly.
- Combine remaining applesauce and honey, and brush over top of dough.
- Bake 12-15 minutes at 425 degrees, or until lightly browned; remove from baking sheet and cool on wire rack.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking pan.
- For the topping: Mix the flour, oats and brown sugar together until well combined.
- Add in the cold butter and mix with fingers until it resembles coarse meal; place in the refrigerator while preparing the fruit layer.
- To make the fruit: mix apples, cranberries, sugar, flour and cinnamon in a large bowl.
- Add in the 7 tablespoons cold butter pieces and toss to combine.
- Transfer to prepared baking dish.
- Crumble the topping over fruit.
- Bake for about 1 hour, or until apples are desired tenderness.

- Preheat the oven to 180 degrees Celsius.
- Spray a few baking sheets with nonstick spray or smear with butter lightly.
- Mix the dry ingredients together: Sift the cake flour, salt and cinnamon and then stir in the oats, muesli and cranberries.
- Mix well.
- Beat the butter and brown sugar together until light and fluffy.
- Add the egg, then add the golden syrup and vanilla and blend well.
- Add the remaining wet ingredients: grated apple, bicarbonate of soda (dissolved in milk) and mix with the dry.
- Mix well and knead the dough throughly.
- Shape into small palm sized balls and place on the pre-greased baking sheets.
- Flatten with a fork to create a pattern on the top and bake for 12-15 minutes or until golden brown.
- Allow a few minutes for the cookies to cool on the baking sheets then transfer to wire racks to rest.
- Store in airtight containers.

CRANBERRY APPLE OATMEAL
I made this one morning in an effort to use up leftover cranberries from Thanksgiving. It's filling, healthy, and delicious! If you generally make oatmeal with milk instead of water, don't! The acid in the cranberries will make the milk separate. I tried it. It will still taste okay, but it won't look very pretty.
