1 cup sauerkraut, rinsed and well drained
1/2 pound smoked Polish sausage or kielbasa, cut up
1 large tart apple, peeled and cut into eighths
1/4 cup packed brown sugar
1/4 teaspoon caraway seeds, optional
Dash pepper
1/3 cup apple juice

Steps:

  • Place half the sauerkraut in an ungreased 1-1/2-qt. slow cooker. Top with sausage, apples, brown sugar, caraway seeds if desired, and pepper. Top with remaining sauerkraut. Pour apple juice over all., Cover and cook on low until apples are tender, 3-4 hours.

I love all the ingredients in this recipe because together they're perfect for Oktoberfest, a fun festival during my favorite time of the year. Serve the pork and sauerkraut with a hearty dark bread, such as rye or pumpernickel, along with an ice-cold beer. Delicious!-Barbara Lento, Houston, Pennslvania

1/4 pound center-cut bacon strips, chopped
1 cup sliced leeks (white portion only)
1 cup cubed peeled sweet potato
1 tablespoon water
1 can (14 ounces) sauerkraut, rinsed and well drained
1 medium apple, peeled and finely chopped
1/2 cup frozen cranberries
1/2 cup sweet white wine or unsweetened apple juice
1/4 cup packed brown sugar
1 teaspoon caraway seeds
3/4 teaspoon salt, divided
1 pork tenderloin (1 pound)
1/4 teaspoon pepper

Steps:

  • In a large skillet, cook bacon and leeks over medium heat 6-8 minutes or until bacon is crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels., Place sweet potato and water in a large microwave-safe dish. Microwave, covered, on high for 2-3 minutes or until potatoes are almost tender; drain. Stir in bacon mixture, sauerkraut, apple, cranberries, wine, brown sugar, caraway seeds and 1/4 teaspoon salt., Transfer half of the sauerkraut mixture to a greased 4-qt. slow cooker. Sprinkle pork with pepper and remaining salt; place in slow cooker. Top with remaining sauerkraut mixture. Cook, covered, on low 2-3 hours or until pork is tender (a thermometer inserted in pork should read at least 145°)., Remove pork from slow cooker; tent with foil. Let stand 10 minutes before slicing. Serve pork with sauerkraut.

ORANGE APPLE CRANBERRY SAUERKRAUT

Number Of Ingredients 6

1 head of cabbage shredded
2 oranges chopped up, peels left on
1 cup fresh cranberries
4 apples shredded
2 teaspoons ginger grated
1 tablespoon sea salt

Steps:

  • Pull 3 outer leaves off the head of cabbage and set aside. Shred the remaining cabbage in a food processor, mandolin or chop with a knife. Add the remaining cabbage, shredded apples, ginger and sea salt to a big bowl.
  • Massage the cabbage mixture with your hands until it breaks down and becomes soft (about 10 min).
  • Place the cranberries and chopped up orange into a food processor and pulse into small chunks. Add this to the bowl with the cabbage and mix and squeeze the mixture together. The cabbage and fruit will have released all its juices at this point and become very wet.
  • Pack the cabbage in the mason jar tightly, pushing it all the way down until it submerges in its own juices (this is the brine). Leave about 1½ inches of space from the top of the jar. If there is not enough brine to cover the cabbage, add more brine by combining a teaspoon of sea salt with 1 cup of water.
  • Roll up the leaves and place them in the jar to push the cabbage under the brine. Screw on the jar loosely so gas can escape as fermentation takes place. Set on the counter for 7 days in a cool, shaded place. During fermentation the sauerkraut will bubble a little and become cloudy. If scum appears, remove it with a spoon.
  • Remove the rolled up cabbage leaves and toss in the garbage before eating.

2-1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
3 ounces sour cream
1 pound medium potatoes, peeled and cubed (about 2 cups)
1/4 cup butter, cubed
3 medium onions, finely chopped
2 large eggs, lightly beaten, divided
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • For pastry, in a large bowl, combine flour, baking powder and salt. Cut in butter until crumbly. Stir in sour cream, adding 3-4 tablespoons water to form a dough. Shape into a disk, mixture will be crumbly. Wrap and refrigerate at least 2 hours or overnight., Place potatoes in a large saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes., Meanwhile, in a large skillet, melt butter over medium-high heat. Add onions; cook and stir until tender, 8-10 minutes. , Drain potatoes; return to pan and stir over low heat 1 minute to dry. Mash potatoes; stir in onion mixture, salt and pepper. Set aside to cool. Stir in eggs., Preheat oven to 400°. On a lightly floured surface, roll dough into a 10x12 -in. rectangle. Cut into 16 squares. Spoon 1 tablespoon potato filling in the middle of each square. Brush the edges with water. Fold each corner toward the center, meeting in the middle. Arrange, seam side down, on ungreased baking sheets. Bake until lightly browned, 15-20 minutes.

6 ounces bacon strips, chopped
1 medium onion, chopped
1/4 teaspoon liquid smoke, optional
2 pounds red cabbage (about 1 medium head), shredded
3-1/4 cups water
1-1/2 cups white vinegar
1 medium apple, sliced
1 cup sugar
1-1/4 teaspoons salt

Steps:

  • In a Dutch oven, cook bacon over medium heat for 5 minutes. Add onion; cook and stir until tender, 6-8 minutes. If desired, stir in liquid smoke., Add cabbage, water, vinegar, apple, sugar and salt. Bring to a boil; reduce heat. Simmer, covered, until cabbage is crisp tender, about 20 minutes, stirring every 10 minutes. Serve with a slotted spoon.
