FIRECRACKER SHRIMP ROLL WITH CRAB AIOLI
Inspired by a shrimp po'boy with crab mayo seen on 'Diners, Drive-Ins and Dives,' I decided to do an extra spicy version and give it a 4th of July-friendly name. The result is an explosively flavored combination of hot, crunchy shrimp and cold crabby mayo. This was one of the best things I've had in a long time, and that's after eating it barely warm; for best results, though, be sure to enjoy this just as soon as it's safe to eat, in all its crunchy glory.

Steps:
- Combine mayonnaise, crab, garlic, salt, cayenne, Worcestershire sauce, lemon juice, and tarragon in a bowl for the crab aioli. Stir to combine and refrigerate until needed.
- Remove tails from shrimp and keep chilled until ready to use.
- Preheat the oven to 400 degrees F (200 degrees C).
- Whisk buttermilk, hot sauce, chipotle pepper, cayenne, black pepper, and salt together in a bowl.
- Mix flour, cornmeal, paprika, and salt together in a shallow dish for the breading.
- Slice partway through each sandwich roll, splitting it open. Scoop out some bread from the top to make room for the filling.
- Toast rolls in the preheated oven until crisp, 7 to 10 minutes.
- Soak shrimp in the buttermilk mixture for about 5 minutes.
- Heat oil in a pan over medium-high heat. Spread crab aioli generously over both sides of each roll; top with sliced lettuce.
- Toss shrimp in the breading to coat; shake off any excess. Fry shrimp in the hot oil until golden brown and crispy, about 2 minutes per side. Drain on a paper towel-lined plate and immediately transfer shrimp onto the rolls. Sprinkle cayenne pepper on top.

SHRIMP AND CRAB APPETIZER SALAD RECIPE
Steps:
- Mix the crab and shrimp together in a bowl with the red pepper, celery and spring onions.
- Add the avocado and stir to mix through.
- Stir in the lemon juice.
- Sprinkle with the celery salt and black pepper.
- Gradually add the mayonnaise, if using, a bit at a time, until the mixture just clings together.
- Spoon into pretty bowls and serve. I like to make sure there is a shrimp or two on the very top of the salad, it makes it look pretty. Or use as a sandwich filling or to top crackers or melba toast as hors d'oeuvres.
- Garnish with paprika or chopped, fresh parsley.
- (To prepare ahead of time, prepare to the end of step 4, cover and keep in the fridge until ready to serve. Portion out and garnish just before serving. Best served on the day it is made.)

SHRIMP AND CRAB CAKES

- Roughly chop the raw shrimp and place in a large bowl.
- In a small bowl, whip the egg whites with a fork until frothy. Stir in the cream, salt, pepper, and cumin seeds. Combine with chopped shrimp. Mix well with the jicama, green onion, cilantro, ginger, and kaffir lime leaves.
- Press any excess moisture out of the crab meat in a colander. Combine the crab with the shrimp mixture.
- Pour the panko into a wide, shallow dish. Scoop out a heaping tablespoon of the shrimp and crab mixture and drop it into the panko. Using your hands, shape the shrimp and crab mixture into round cakes and evenly coat with the panko. Repeat with the remaining mixture and place the crab cakes on a parchment-lined baking sheet. Refrigerate for 30 minutes until firm.
- Heat a deep fryer to 350 degrees F or heat 3/4-inch of vegetable oil in a skillet over medium heat, just until the surface of the oil begins to gently ripple. Fry the crab cakes, a few at a time, until crispy and golden, about 2 minutes per side. Remove from the hot oil with a slotted spoon or spider and place on absorbent paper to absorb any excess oil.
- Serve with Ginger-Lime Dipping Sauce on the side.
- Put sugar, water, ginger, and salt in a heavy-bottomed saucepan. Bring to a boil, then lower heat and reduce to a syrupy consistency (about 15 minutes). Strain through a fine sieve, discard ginger, reserve liquid, and let cool.
- In a small food processor, pulse cilantro, lime juice, chile, and green onion (about 30 seconds). Add ginger syrup and pulse until combined.
- Serve at room temperature.

This is from my mother-in-law. She got the recipe from a friend and we have it quite often. It is great served over rice with a nice green vegetable. When I serve it people always ask for seconds (and some for third helpings!).

- Melt stick of butter over low heat, add flour and stir until well blended.
- Remove from heat and gradually stir in milk and return to heat.
- Cook stirring constantly until thick and smooth.
- Stir in cheese whiz and sherry and remove from heat.
- Fold in crab and shrimp and pour into buttered casserole dish.
- Crush the crackers and stir into the 2 tbsp of melted butter.
- Sprinkle the buttered cracker crumbs over the top of the casserole and sprinkle with paprika if desired.
- Bake at 350 degrees until crumbs are lightly browned and casserole is bubbly.
- Note: 3 1/2 lbs raw shrimp= 2 lbs cooked shrimp.
- Also you can make this ahead of time and freeze minus the cracker topping until ready to use and thaw completely before baking.
- Because it makes such a large amount you can also divide in half and use one now and freeze the other dish.

- Spread in a greased casserole.

CRAB AND SHRIMP DIP
Steps:
- Preheat oven to 400 degrees F.
- Combine the first 5 ingredients in a large bowl. Mix on medium speed using a hand mixer until blended. Fold in the crab and shrimp. Transfer to a shallow 2-cup baking dish. Top with Parmesan. Bake for 20 minutes or until top is lightly brown.
- To make the toasted bread slices, place bread slices on a baking sheet. Brush with olive oil on both sides. Bake in oven for 8 minutes while dip is also baking. Serve crab and shrimp dip with toasted bread slices.
CAJUN CRAB STUFFED SHRIMP
Steps:
- Preheat oven 375 degrees. Line a baking sheet with parchment paper and spray with cooking spray.
- Place the crab meat in a bowl. Season with salt and pepper. Add the egg and mayo and mix well. Set aside in fridge.
- Place the butter in a saucepan. Once it melts add the shallot, garlic, green onions, parsley and cajun seasoning. Saute for about 3 minutes then set aside to cool.
- once cool add to the crab meat mixture then crush the crackers and stir into the crab mixture. Add the mascarpone cheese and Parmesan cheese. Season with salt and pepper.
- Peel and devein the shrimp. Cut them down the back to the tail but not all the way through. Place in baking dish then spoon 1 to 2 tbsp of crab meat mixture on top. Spray with cooking spray.
- Bake until golden brown about 20 minutes. Serve with lemon wedges

This is always a favorite during the holidays. Sometimes I add both crab and shrimp to the dip. Serve this on Ritzs crackers or on Waverly type crackers. I never have leftovers!

- Preheat the oven to 375 degrees F. Butter a large baking dish and set aside.
- Place the crabmeat in a large bowl and season with the Essence. Cover and refrigerate until ready to use.
- In a large skillet, melt 4 tablespoons butter over medium-high heat. Add the onions, celery, and bell peppers and cook, stirring, until softened, about 4 minutes. Add the parsley and the garlic, and cook, stirring, for 1 minute. Remove from heat and let cool.
- Add the cooled vegetables to the crabmeat and toss to combine. Add the mayonnaise, egg, lemon juice, Worcestershire and hot sauce and stir gently with a large wooden spoon. Add 1 cup of the cracker crumbs, the salt, and pepper, and stir gently, being careful not to break up the crabmeat.
- Mound about 2 tablespoons of the crabmeat stuffing into each shrimp, press gently to close, and place, stuffed sides up, in the prepared baking dish. Sprinkle the remaining 1/2 cup of the flaky, buttery cracker crumbs over the stuffed shrimp and drizzle with the remaining melted butter. Bake until golden, about 20 minutes.
- While the shrimp are baking, heat a large saute pan over medium-high heat. When the pan is hot, add the olive oil. Add the garlic and crushed red pepper and cook, stirring continuously, for 1 minute. Add the kale and saute until the kale is just wilted, about 3 to 5 minutes. Season with salt and pepper.
- Place the kale on 4 plates. Remove the shrimp from the oven and divide among plates, on top of the kale. Garnish with parsley and lemon wedges. Serve immediately.
- Combine all ingredients thoroughly and store in an airtight jar or container.

CHILI CRAB DIP WITH SHRIMP CHIPS
Inspired by chili crab, an aromatic and spicy Singaporean seafood braise, this crab dip gets sweetness from tomato paste and flavor from shallots and ginger.

- Pulse or blend shallots, lemongrass, ginger, chile, garlic, tomato paste, sugar, 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, and ½ cup water in a food processor or blender until a coarse purée forms.
- Heat oil in a medium skillet over medium-high. Scrape purée into pan and cook, stirring often, until mixture darkens and thickens to the consistency of tomato paste, 12-15 minutes. If it begins to stick and brown, stir in a little water (about 1 Tbsp.), scraping up any browned bits with a wooden spoon. (You should have about ⅔ cup.)
- Transfer mixture to a small bowl and vigorously mix in cream cheese and mayonnaise. Stir in crabmeat, half of the scallions, and half of the cilantro. Taste dip and season with more salt if needed.
- Transfer dip to a serving bowl. Top with remaining scallions and cilantro, then with fried shallots (if using). Serve with shrimp chips.
STUFFED SHRIMP

- Preheat the oven to 400°F and have ready a rimmed baking sheet lined with either parchment paper or aluminum foil.
- Pat the shrimp dry with a paper towel. Then, working with one shrimp at a time, lay it back-side down (a.k.a. leg-side up). Use a paring knife to make a small incision down the shrimp, from the start of the tail, cutting toward the head of the shrimp. Continue doing this until the shrimp is butterflied and can lay flat. Do your best not to cut all the way through the body of the shrimp.
- Transfer the shrimp to a large bowl, drizzle with oil, sprinkle evenly with the salt and pepper, and very gently toss to coat. Transfer to the baking sheet and set aside.
- In a medium-sized mixing bowl, combine the crab, parmesan cheese, plain breadcrumbs, mayonnaise, green onions, beaten egg, pimiento peppers, chopped parsley, Old Bay seasoning, lemon zest, and juice. Gently, fold the mixture together until well combined.
- Add tablespoon-sized spoonfuls of the crab mixture on top of each shrimp, and bring up the tail, tucking it gently into the stuffing.
- Bake for about 16-20 minutes, or until the shrimp are completely opaque and pink in color. Allow to cool slightly, serve and enjoy!

CINDY'S SHRIMP AND CRAB CROQUETTES
Steps:
- Bring 2 cups salted water to a boil in a medium pot. Add the rice, reduce heat to medium-low and cook until done, about 20 to 25 minutes. Remove pot from the heat and add the butter to the warm rice and stir to incorporate. Next, add the shrimp, crab, onions, jalapenos, lemon juice, salt, pepper and Essence and stir to combine. Stir in flour and eggs. Be careful not to break up the crabmeat when mixing the ingredients. Transfer the mixture to a storage container and refrigerate for 2 hours.
- In a large heavy-bottomed sauce pan, pour enough oil to fill the pan about a 1/3 of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F. (If you don't have a thermometer, a cube of bread will brown in about 3 minutes.)
- Remove the croquette mixture from refrigerator and shape into 1/2-inch to 3/4-inch thick patties and coat with white cracker crumbs. Use an ice cream scoop to keep portion sizes the same.
- Fry the croquettes until golden brown on both sides. Drain on paper towels and season with salt. Serve with Garlic Aioli.
