CRAB PUFFS
An appetizer so elegant, no one will believe it's homemade! With just a handful of everyday ingredients, these Crab Puffs are sure to win everyone over.

Steps:
- Preheat the oven to 375°F. Grease a mini muffin tin all over, even the top, set aside.
- Place the crab, mayonnaise, dijon, garlic, paprika, parsley, salt, and pepper in a medium-sized bowl. Gently mixed together until combined, set aside.
- Unroll the dough onto a clean work surface and cut as evenly as you can into 24 equal square pieces. Press each piece into a section of the mini muffin tin, pressing down to form into the tin.
- Fill the cups with the crab mixture evenly. Bake for 11-13 minutes until golden brown.
- Let cool for a couple minutes in the tin, then transfer to a wire rack to cool until ready to eat.
- Garnish with more chopped parsley if desired.

CRAB PUFFS
These homemade Crab Puffs are absolutely addicting, filled with an unbelievably delicious creamy crab mixture that's made with lump crab meat, like cream cheese, parmesan cheese, veggies, and SO much more.

- Make sure to thaw puff pastry before starting. Carefully unfold the puff pastry sheets as soon as they are thawed. (If puff pastry has to wait for you to make the filling, cover it with a couple of sheets of damp paper towel to keep from drying out.)
- Preheat the oven to 400° and lightly grease a mini muffin pan.
- Dice onion, bell pepper, and mince garlic. Preheat a small cooking pan over medium heat and sauté onion and bell pepper with a little bit of olive oil.
- When the veggies are completely softened, mix in garlic, and let it cook until fragrant. Transfer cooked veggies into a mixing bowl.
- Add remaining ingredients for the filling to the mixing bowl with veggies and use a spatula or a fork to mix everything thoroughly.
- Roll out the puff pastry sheets to about 12x12 size squares. Use a pizza cutter or a knife to cut each puff pastry sheet into 16 squares each.
- Fit each square into the cup of the prepared mini muffin pan, forming a little cup out of the pastry square. (You will need to work in batches, so make sure to cover the pastry with damp paper towel in between batches to prevent it from drying out.)
- Fill each pastry square with slightly less than 1 1/2 tablespoons of crab mixture. (I use a #40 cookie scoop to get even amount each time and fill it slightly less than full.)
- Bake for about 17 minutes, until pastry is golden brown. (Repeat with remaining pastry and filling.)

- Preheat oven to 400 degrees F (200 degrees C).
- In a medium-size mixing bowl, combine crabmeat, cheese spread, butter or margarine, mayonnaise, garlic salt, and parsley. Mix well, and spread on English muffins. Cut the muffins into quarters and arrange them on a cookie sheet.

I catered my brother's wedding and he personally requested these, he was on a very small budget and there was no way I could make them for the huge wedding he had. - 1. Soften butter and cheese spread to room temperature, beat well with mixer with the garlic powder, Mayo & season salt.
- 2. Gently fold in picked over crab meat, spread over English muffins halves. Cut with a sharp knife in to four sections and freeze they do cut easier if they are slightly frozen.
- 3. Place on a sheet pan, cookie sheet whatever will fit in your freezer freeze till completely frozen. Sometimes I will put a sheet of wax or parchment paper on the pan but it is not necessary. Package in freezer bags and store.
- 4. Preheat oven to 400 degrees, take out as many as you are in the mood for and heat for 10-15 minutes until hot & bubbly and as brown as you like.
- 5. Tips: you see here it says to make your own season salt, there are many variations of season salt personally I skipped this step altogether as most call for garlic powder so it just depends on what mood I am in if I want some onion powder or salt I just toss in a bit so on and so forth most of the time all I add is the garlic powder feel free as always to tailor it to your liking I will post some salt recipes I have found. This season blend can also but used on chicken, fish, pork ect.
- 6. Season Salt recipes:Combine. Blend thoroughly, put into a shaker and use in place on other seasonings #1- Lawrys #2- 6 tablespoons salt 1/2 teaspoon dried thyme leaves 1/2 teaspoon marjoram 1/2 teaspoon garlic salt or garlic powder 2 1/4 teaspoons paprika 1/4 teaspoon curry powder 1 teaspoon dry mustard 1/4 teaspoon onion powder 1/8 teaspoon dill weed 1/2 teaspoon celery salt #3- 2 tbsp. salt 2 tbsp. paprika 1 tsp. ground pepper 1 tsp. onion salt 1 tsp. garlic salt

- 1. Mix the first 4 ingredients at room temperature. Add crab meat and blend well.
- 2. Spread mixture onto untoasted, split English Muffins. Cut into 4ths. At this point you can either bake on a cookie sheet at 350 for 10-15 minutes. Broil the last 5 minutes until golden brown and serve hot.
