1 large egg
1/4 cup mayonnaise
2 tablespoons chopped fresh parsley
1 1/2 teaspoons seafood seasoning, such as Old Bay
1 teaspoon Dijon mustard
1 lemon, zested, plus lemon wedges, for serving
1 pound lump crabmeat
1/2 cup panko breadcrumbs
2 tablespoons salted butter, melted, plus more for greasing the baking sheet
5-Ingredient Remoulade, recipe follows
1 cup mayonnaise
1 tablespoon capers, drained and chopped
1/2 teaspoon garlic salt
1/4 teaspoon freshly ground black pepper
Juice of 1 lemon

Steps:

  • In a medium bowl, beat the egg. Add the mayonnaise, parsley, seafood seasoning, Dijon mustard and lemon zest, then mix well to combine. Add the crabmeat and panko and mix gently but thoroughly to combine. Form 8 crab cakes by pressing them into shape with a 1/3-cup measure. Place on a buttered baking sheet.
  • Place an oven rack 8 inches from the broiler element. Heat the broiler to a high setting. Brush the tops of the crab cakes with the melted butter. Broil until golden on top and heated through, 4 to 5 minutes. Serve immediately with the lemon wedges and Remoulade.
  • Add the mayonnaise, capers, garlic salt, pepper and lemon juice to a bowl and whisk.

When we set out to make the "best" crab cakes, opinions in the test kitchen were strong and varied. But we could all agree on plenty of fresh, high-quality crabmeat with very little filler. After some tinkering, we created these decadent cakes-generously sized and highly seasoned-with plenty of lemon juice, fresh herbs and spices. The jumbo lump crabmeat is front and center, so splurge on the best and freshest you can find.

2 pounds fresh jumbo lump crabmeat, picked over for shells and cartilage
1 1/2 cups panko
1/2 cup mayonnaise
1/4 cup chopped chives
1 tablespoon Dijon mustard
2 teaspoons seafood seasoning, such as Old Bay
Kosher salt and freshly ground black pepper
Juice and zest of 1 lemon, plus more lemon wedges for serving
3 tablespoons unsalted butter
3 tablespoons olive oil
1 cup mayonnaise
1/2 cup chopped dill pickles (about 2 whole pickles)
1 tablespoon capers, chopped
1 tablespoon minced chives
Juice and zest of 1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • For the crab cakes: Gently fold together the crabmeat, breadcrumbs, mayonnaise, chives, Dijon mustard, seafood seasoning, 1 teaspoon kosher salt, 1 teaspoon freshly ground pepper and the juice and zest of one lemon in a large bowl. Refrigerate the crab mixture for 15 minutes to firm up; this allows the breadcrumbs to absorb some of the liquid, helping the crab cakes bind together.
  • Meanwhile, make the tartar sauce: Combine the mayonnaise, dill pickles, capers, chives, zest and juice of 1 lemon in a medium bowl and mix until combined. Season to taste with salt and pepper. Cover and refrigerate until ready to use.
  • Scoop heaping half cups of the crab mixture and pat into 2 1/2-inch wide patties. Lightly press them together so they do not fall apart while cooking. You should have 8 patties.
  • Heat 3 tablespoons unsalted butter and 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add the crab cakes to the pan and cook until golden, about 2 minutes, then flip using a flat metal spatula. Continue to cook until lightly golden, about 1 1/2 minutes then transfer the pan to the oven. Cook until the crab cakes are completely heated through, about 10 minutes.
  • Serve the crab cakes with the tartar sauce and lemon wedges.

1½ Cups panko (Japanese-style bread crumbs) * *

2 celery ribs, chopped, set aside
1 small onion, chopped, set aside
1 garlic clove, peeled, smashed, set aside
1 Tablespoon unsalted butter
4 Ounces shrimp, Peeled, deveined, tails removed, set aside.
¼ Cup heavy cream
2 Teaspoons Dijon mustard
½ Teaspoon hot sauce
1 Teaspoon lemon juice
½ Teaspoon Old Bay seasoning
4 Tablespoons vegetable oil
Line a rimmed baking sheet with parchment paper. Set aside.
Place crabmeat and milk in bowl, making sure crab is totally submerged. Cover and refrigerate for at least 20 minutes.
Meanwhile, place ¾ cup panko in small zipper-lock bag and finely crush with rolling pin. Transfer crushed panko to 10-inch nonstick skillet and add remaining ¾ cup panko. Toast over medium-high heat, stirring constantly, until golden brown, about 5 minutes. Transfer panko to shallow dish and stir in ¼ teaspoon salt and pepper to taste. Wipe out skillet.
Pulse celery, onion, and garlic in food processor until finely chopped, 5 to 8 pulses, scraping down bowl as needed. Transfer vegetables to large bowl. Rinse processor bowl and blade and reserve. Melt butter in now-empty skillet over medium heat. Add chopped vegetables, 1/2 teaspoon salt, and 1/8 teaspoon pepper; cook, stirring frequently, until vegetables are softened and all moisture has evaporated, 4 to 6 minutes. Return vegetables to large bowl and let cool to room temperature. Rinse out pan and wipe clean.

These are the best crab cakes I've ever eaten. I got the recipe from Cuisine magazine. Every time I make them I hear alot of oohs and ahhs and requests for the recipe. There's a local family-owned restaurant in town known for their crabcakes. My teenage niece said they were the only crabcakes she likes, until she tried these. These are even better.

3 tablespoons butter
1/3 cup red pepper, diced
1/3 cup celery, diced
1/3 cup yellow onion, diced
1/2 cup dried breadcrumbs
1/4 cup scallion, minced
1/4 cup mayonnaise
1 egg
2 tablespoons minced parsley
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
2 teaspoons Old Bay Seasoning
1 teaspoon dry mustard
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1/4 teaspoon Tabasco sauce
1 lb lump crabmeat

Steps:

  • Sautee the red pepper, celery, and onion in the butter 5 minute.
  • or until tender.
  • Cool slightly.
  • In a bowl, combine all the rest of the ingredients EXCEPT crabmeat.
  • Combine sauteed vegetables with mixture.
  • Pick through crabmeat for shells or cartlidge.
  • Using your fingers, gently blend the crab into the mixture.
  • This helps preserve the large pieces of crab.
  • Shape crab mixture into cakes.
  • Chill in the refrigerator for at least 1 hour.
  • I've made the the day before and left in frig overnight.
  • Broil cakes for 3-4 minute.
  • or until browned.
  • Turn them over carefully.
  • I use a spatula and my fingers so they don't fall apart.
  • Broil other side for 3-4 minute.
  • I place them on a platter and garnish with parsley and lemon.
  • I serve cocktail sauce and tartar sauce with them.
  • I've also made the cakes much smaller and served them as appetizers.

This recipe is slightly altered from Amanda Hesser's Grandmother's Crab Cake recipe. It is featured in her book "Cooking for Mr. Latte". She doesn't suggest any sauces to be served with this, as 'she likes them plain so you can taste the crab meat'. My first ever batch of crab cakes, from this recipe, were absolutely fantastic. Prep time includes sitting time.

1 lb crabmeat
4 -5 ounces white bread, grated
1 1/2 tablespoons chopped fresh herbs (I use parsley, chives, and a bit of cilantro)
1/2 teaspoon cayenne
1 tablespoon mayonnaise
1 tablespoon spicy horseradish mustard
1 egg
1 egg yolk
freshly cracked pepper
1/2 cup superfine cracker crumb
1/2 cup superfine breadcrumbs
2 tablespoons unsalted butter
1 lemon, cut into rings or wedges

Steps:

  • Place crab meat, bread, cayenne and herbs into bowl and combine.
  • In another bowl, whisk together the mayo, mustard, egg and additional yolk.
  • Season with pepper to taste.
  • Slowly pour dressing into the crab meat mixture, using a fork to gently lift and fluff the texture.
  • Use only enough liquid to cause the mixture to just cling together; don't overwork.
  • Form into cake about 3 inches in diameter and 3/4 inch high.
  • Lay onto plate, cover, and refrigerate for at least one hour, until firmed up.
  • To get superfine cracker crumbs and breadcrumbs, whir everything up in a food processor.
  • Before cooking, dip cakes into cracker crumbs to coat.
  • This prevents the crab meat edges from getting tough and chewy when sauteeing.
  • Heat butter in frying pan until foamy.
  • Add crab cakes, and let saute until browned on the bottom.
  • Turn them just once, and brown the other side.
  • Keep warm until all cakes have been sauteed.
  • Arrange on platter with wedges of lemon.
  • Please note that I served these on top of a bed of MEAN CHEF's Texas Caviar from the Cowgirl Hall of Fame Restaurant (#27742).
  • the flavors melded together perfectly, although you may want to make sure to not go overboard on the jalapenos, so as not to overwhelm the crabcake.

8 hand-cut slices best-quality brown or granary bread
unsalted butter , for spreading
1 lemon , cut into 4 wedges, to serve
brown crabmeat from 1 large brown crab, about 1.5 kg in its shell (reserve the white meat, see below)
1 tbsp mayonnaise
1 tsp tomato ketchup
juice 1/2 lemon
1 tsp Dijon mustard
big pinch cayenne pepper
few drops brandy (optional)
picked white meat from the same crab
small handful chopped mixed herbs such as parsley, dill, tarragon, chervil and chives
juice 1/2 lemon
2 tbsp olive oil

Steps:

  • Make the crab paste: mix the ingredients together in a bowl and season, then set aside. In a separate bowl, mix the white meat with the herbs, lemon juice, oil and seasoning.
  • Spread the bread lightly with butter, then spoon and spread the crab paste over 4 of the slices. Pile the white meat over, then top with the remaining bread. Cut the crusts off, if you like, and serve halved or in small triangles or squares with lemon wedges on the side.
