EASY YOGURT BREAD

Easy Yogurt bread image

This white yogurt bread recipe makes the lightest, fluffiest loaf; it slices thinly, perfect for sandwiches & toast. You won't believe it is homemade! Use either cup or gram measurements - don't mix and match!

Provided by Helen Best-Shaw

Categories     Baking     Bread

Time 1h40m

Number Of Ingredients 5

7 fl oz warm water (200 ml)
1 tsp yeast ((7g sachet) dried active for hand baking)
1/4 cup + 3 tbsp low fat natural yogurt (100 g )
3 cups + 6 tbsp strong white bread flour (425 g)
1 tsp salt (1 tsp)

Steps:

  • Pour the water into the bowl of a stand mixer, if you have one. Don't worry if you don't, just use a large mixing bowl. Add the yeast and swirl to dissolve.
  • Add the yogurt and mix into the water, then add the flour and salt. If using a stand mixer, mix using the dough hook on a low speed for about 5 minutes, until smooth and stretchy. If you're not using a stand mixer, mix with your hand in the bowl until the dough has come together, then turn out and knead on the work surface until it has become a smooth, pliable, stretchy dough. This will take about 8 to 10 minutes.
  • If kneading by hand put the dough back in the bowl then cover with cling film (or a plastic shower cap) and leave to prove until doubled in size (in a warm place for about 35 mins)
  • Turn the dough out onto a floured work surface. Butter a 1lb loaf tin - I find that butter works much better than oil and the loaf comes out of the tin much easier. Fold the dough into thirds, and then roll into a tube as long as the loaf tin.
  • Cover again with the shower cap (if you have one), pulling it up to give the dough space to rise. If you don't have a shower cap, place the tin in a plastic bag and tie shut. Place the tin in the warm location used in step three above.
  • After about 15 minutes rising time, heat the oven to GM7 / 220C / 425F. Leave the dough to rise for about a further 15 to 20 minutes, until it's just springing back when pressed.
  • Bake for about 35 minutes.
  • When it is done it should turn out of the tin and sound hollow when tapped. It always takes longer to bake than you think it will, so my general rule of thumb is that if you are unsure give it another 5 mins.

NO-KNEAD COUNTRY BREAD

No-Knead Country Bread image

This delicious and gorgeous loaf is part recipe, part science experiment, and part fun family project when you're all stuck in the house together looking for things to do. Even though it takes many, many hours, the texture you get is just incredible. Spread with butter and jam, if desired.

Categories     Bread     Yeast Bread Recipes

Time 20h50m

Yield 12

Number Of Ingredients 5

3 ½ cups white bread flour
½ cup sprouted spelt flour
¼ teaspoon active dry yeast
2 cups cold water
1 ½ teaspoons fine kosher salt

Steps:

  • Place white bread flour, whole wheat bread flour, and yeast into a large mixing bowl and stir with a wooden spoon. Pour in cold water and mix with a wooden spoon or spatula until a very wet, sticky dough comes together, about 3 minutes. Add the salt and mix another 2 to 3 minutes. Scrape down the sides of the bowl. Cover with foil. Allow dough to rise at room temperature for 18 hours.
  • Deflate the bubbly dough with a spatula by scraping down the sides of the bowl and folding the dough over itself, turning the bowl as you go around in a circular motion, about 12 times or so.
  • Scrape the dough onto a very well-floured surface with a spatula. Sprinkle the surface of dough generously with flour. Generously flour hands and then roll and fold dough on the table until you've formed a round or oval loaf shape that has a smooth surface, 1 to 2 minutes. The dough is very sticky, so add more flour if you need. The shape doesn't really matter, but a smooth surface is the goal.
  • Transfer to a Silpat®-lined baking sheet and let rise, uncovered, until doubled in size, about 2 hours. The dough will spread out more than rise up, but this is normal.
  • Preheat the oven to 450 degrees F (230 degrees C).
  • Make 1 shallow slash down the middle of the dough with a very sharp knife or razor, being careful not to deflate the dough too much; the slash is optional. Spray the surface of the loaf very lightly with plain water to help the crust form.
  • Bake in the center of the preheated oven until nicely browned, about 30 minutes. Let cool on a rack before cutting.

Categories     Yeast Breads

Time 40m

Yield 2 loaves, 20 serving(s)

Number Of Ingredients 8

4 1/2 cups flour
1/3 cup dry milk
2 (1/4 ounce) packages yeast
1 1/2 teaspoons salt
1 1/4 cups water
1/2 cup plain yogurt
3 tablespoons oil
1/4 cup wheat germ (optional)

Steps:

  • The flour amount is approximate, add more or less to form a nice dough.
  • Make the bread dough using your favorite method. I just dump it all in my bread machine and set to the dough cycle. You can also mix the dough using the traditional method of heating the liquid and adding the yeast, proofing, and then mixing in the dry ingredients. If using this method knead about 10 minutes and let the dough rest about 10 minutes.
  • When the dough cycle is complete, place dough onto floured surface and divide into 2 equal pieces.
  • Form into loaves by rolling each piece into a rectangle about 12x10 inches. Starting at short end, roll tightly into a loaf. Tuck ends and pinch seams to seal.
  • Place on greased baking sheet.
  • With a sharp knife, make slashes in the top of the loaves about an inch apart. Brush with egg white.
  • Let rise until double, about one hour.
  • Brush with the egg white again before baking.
  • Bake at 400°F for 30 minutes.
