Adopted Recipe...I worked through all my adopted recipes and made changes to suit my tastes and cooking habits. I do not cook with bacon grease, so I changed the recipe from bacon grease to butter. (Note added 2/5/06).

2 -3 lbs yellow squash
2 tablespoons butter
2 tablespoons onions, diced
1 teaspoon salt
1/2 cup water
1 tablespoon sugar
1/4 cup cream

Steps:

  • Wash tender yellow squash; remove stem and blossom ends.
  • Cut into 1/2-inch rounds.
  • Place squash, butter, onions and salt into heavy skillet.
  • Add water.
  • Cover and cook on medium low heat until water is absorbed and squash is tender.
  • Lightly mash with a fork.
  • Add sugar and cream.
  • Let it cook slowly until mixture is fairly dry and flavors develop, being careful not to let it scorch.

10 large yellow squash, cut into pieces
1/2 cup onion, chopped
1 (8 ounce) carton sour cream
1/2 teaspoon salt
1/2 teaspoon dried basil
1/8 teaspoon ground red pepper
1 cup soft breadcrumbs
1/2 cup cheddar cheese, shredded
1/4 cup butter, melted
1/2 teaspoon paprika

Steps:

  • Cook squash and onion in boiling water 10 or 15 minutes or until tender. Drain well, and mash.
  • Combine squash mixture, sour cream, salt, dried basil and red pepper, stirring well.
  • Spoon mixture into a greased 2 quart casserole.
  • Combine breadcrumbs, cheddar cheese, margarine and paprika and toss well. Sprinkle over squash mixture.
  • Bake, uncovered, at 300 degrees for 30 minutes or until thoroughly heated.

I coaxed this easy (and forgiving) recipe from its maker after tasting it at a pot luck, and was surprised by its simplicity. Just a few ingredients make a delicious summer side dish for anything barbecued, grilled, or smoked - especially if the squash is home grown!

3 pounds yellow summer squash, cut into 1-inch cubes
½ cup dry bread crumbs
½ cup chopped onion
2 eggs
¼ cup butter, melted
1 tablespoon white sugar
1 teaspoon salt
½ teaspoon black pepper
¼ cup butter, melted
¼ cup dry bread crumbs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
  • Place the squash in a large saucepan, cover with water, and boil until soft, about 15 minutes. Drain the squash well, place in a large mixing bowl, and mash until slightly chunky. Stir in 1/2 cup of bread crumbs, onion, eggs, 1/4 cup of butter, sugar, salt, and pepper until thoroughly combined, and spread mixture into the prepared baking dish. Drizzle the top of the casserole with 1/4 cup melted butter, and sprinkle 1/4 cup bread crumbs over the butter.
  • Bake in the preheated oven until the casserole is cooked through and the top is golden brown, about 1 hour.

1/3 cup butter or 1/3 cup margarine, melted
1/2 teaspoon paprika
8 slices bacon, cooked and crumbled

Steps:

  • Cook squash and onion in 1/2 c boiling water until tender; drain and mash. Combine squash with sour cream, salt, pepper, and basil. Pour into a greased 2 quart casserole.
  • Combine breadcrumbs,cheese, butter, and paprika. Sprinkle over squash mixture. Top with bacon.
  • Bake at 300 degrees for 20 minutes.

From the Good Eats Cafe in Houston. Drain squash well or mixture may be watery. Add sour cream as desired for consistency and richness. If using glass baking dish, reduce oven temperature by 25 degrees.

2 lbs yellow squash, cut up
1/2-1 cup sour cream
1 (10 3/4 ounce) can condensed cream of chicken soup
1 small onion, chopped
salt and pepper (to taste)
1 carrot, grated
1/2-2/3 cup seasoned bread crumbs (crushed stuffing cubes work well)
1/4 cup butter

Steps:

  • Cut squash in chunks and drop into boiling water. Cook covered until soft. DRAIN WELL and mash. You should have about 4 cups.
  • Combine squash in bowl with sour cream, undiluted soup, onion, salt, pepper and grated carrot.
  • Sprinkle an even layer of herb-seasoned bread crumbs on the bottom of a shallow 2-quart casserole.
  • Add squash mixture and cover with another layer of crumbs. Dot generously with butter.
  • Bake at 350* degrees 30 t0 40 minutes.

I've tried many squash casseroles, but this is by far the best I've ever had. This recipe was given to me by a friend and has gotten rave reviews from squash lovers and squash haters alike. Fresh squash, bell pepper and onion are given an extra boost of flavor and texture from cornbread stuffing mix. This is a lightened-up version of the original recipe, but you won't miss a thing!

2 tablespoons butter
1 red bell pepper, chopped
¾ cup white onion, diced
1 ½ cups zucchini, sliced
1 ½ cups yellow squash, sliced
½ cup chicken broth, or as needed
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup reduced-fat sour cream
1 (6 ounce) package cornbread stuffing mix

Steps:

  • Preheat an oven to 300 degrees F (150 degrees C). Grease a 7-inch casserole dish.
  • Melt the butter in a skillet over medium heat. Stir in the bell pepper, onion, zucchini, squash, and chicken broth. Bring to a simmer, and cook until the vegetables have softened, about 10 minutes. Use more broth if needed to keep the mixture moist. Remove the vegetables from the heat, and stir in the condensed mushroom soup, sour cream, and 3/4 of the stuffing mix; pour into the prepared casserole dish. Sprinkle the remaining stuffing mix over top.
  • Bake in the preheated oven until browned on top, about 30 minutes.

  • In a skillet, melt butter over medium high heat. Saute squash and onion until crisp-tender. Remove from the heat; stir in chilies, crackers, and salt and pepper. Spoon into a greased 1-1/2-qt. casserole. Top with cheese. Bake at 350° for 15-20 minutes.
