HOMEMADE SWEET CHILI SAUCE



Homemade Sweet Chili Sauce image

Step by step guide to making your own home made sweet country style chili sauce. This recipe is three generations old and oh so tasty!

Number Of Ingredients 7

11 quarts tomatoes ((44 cups))
3 cups green peppers (, diced)
4 cups onions (, diced)
1 cup vinegar
1/4 cup pickling spice
8 cups sugar
4 tbsp dried chili peppers

Steps:

  • To prepare the tomatoes you need to remove the skin and chop or crush them. Fill a large pot 3/4 full and heat the water so it is almost boiling. Drop a bunch of tomatoes in the pot, about 10 at a time. Leave in the pot for about 5 minutes or so. Then transfer them to a sink filled with cold water. After the tomatoes are cool (5 minutes or so), take a knife and slit the skin. The tomato skin should peel off easily. Once, peeled, they can be chopped or crushed in a food grinder. Do this with all the tomatoes.
  • In a pot large enough, add all the ingredients. Bring to a boil and low to a very low boil. Stir it regularly. Cook the sauce for about 4 hours. The sauce should reduce in size and thicken. Ensure that the sauce is not sticking to the bottom of the pot and burning.
  • Pour the chili sauce in sterilized jars, seal and process them in a hot water bath for 15 minutes for 250ml jars, 20 minutes for 500ml jars and 30 minutes for 1 litre jars.

This homemade chili sauce recipe is a great combination of sweet and savory, perfect as a condiment, marinade, or all around flavor builder. So many uses!

6 ounces tomato paste (1 can)
Water for thinning (1/4 to 1/2 cup water, or more as needed)
1/4 cup brown sugar
2 tablespoons honey
3 tablespoons apple cider vinegar (or to taste - white vinegar is good, too)
1 teaspoon paprika (use cayenne for spicier)
1 teaspoon Worcestershire sauce
1/2 teaspoon garlic powder (or more to taste)
1/2 teaspoon red pepper flakes (or use hot sauce, to taste)
1/4 teaspoon ground allspice
1/8 teaspoon ground cinnamon
1/8 teaspoon ground cloves
Salt and pepper to taste (1/4 to 1/2 teaspoon is usually good)

Steps:

  • Add all of the ingredients to a large bowl. Whisk them together until the chili sauce is nicely uniform and all of the ingredients are mixed through.
  • Pour the chili sauce into a small pot or sauce pan. Heat and simmer for 10 minutes to let the flavors meld and develop. Taste and adjust for salt, honey, and other spices. Add more water for a thinner sauce.
  • Cool. Store in the refrigerator, covered.

There is nothing like homemade chili sauce, it's well worth the effort to make, especially when tomatoes and fruit are at there cheapest. This is wonderful with chicken, turkey, even on burgers, you can process this is you wish, but it will keep refrigerated for up to 3 weeks and only gets better with chilling time! You can also make this using apples, peeled and chopped in place of peaches, or use a mixture of peaches AND nectarines! If you prefer a spicy sauce like my family does then add in some dried chili flakes to taste.

8 large peaches (or use nectarines)
5 large ripe tomatoes
1 red onion, finely chopped
1 large bell pepper (seeded and finely chopped into 1/2-inch pieces, use red or green peppers)
1 -2 tablespoon fresh minced garlic
2/3 cup white vinegar (or use cider vinegar)
1/2 cup white sugar
1 1/2 teaspoons salt (can use more to taste)
1/2 teaspoon ginger powder
1/2 teaspoon allspice
1/4 teaspoon cinnamon

Steps:

  • Slice the peaches or nectarines in half, discard the pits and coarsely chop the fruit into about 1/2-inch pieces.
  • Peel the tomatoes if you wish, then chop into the same size pieces as the fruit.
  • Place the peaches, tomatoes, onion, bell pepper and garlic in a large saucepan; stir in vinegar, sugar, salt, ginger, allspice and cinnamon, bring to a boil uncovered, stirring often over high heat.
  • Reduce the heat to medium; boil gently uncovered, stirring occasionally until peaches become soft and the mixture thickens a little (about 20 minutes).
  • Reduce the heat to medium-low and continue to simmer uncovered until the mixture is very thick like applesauce and a small amount of liquid remains (about 20-25 minutes, to prevent sticking to the pan stir frequently near end of cooking).
  • Cool and pour into glass jars and chill for up to 3 weeks, or process in a water bath to store for a longer time.

4 quarts chopped peeled tomatoes (about 24 large)
2 cups chopped onions
2 cups chopped sweet red peppers (about 4 medium)
1 serrano pepper, finely chopped
1 cup sugar
3 tablespoons salt
3 tablespoons mixed pickling spices
1 tablespoon celery seed
1 tablespoon mustard seed
2-1/2 cups white vinegar

Steps:

  • In a stock pot, combine the tomatoes, onions, peppers, sugar and salt; simmer, uncovered, for 45 minutes. , Place the pickling spices, celery seed and mustard seed on a double thickness of cheesecloth; bring up corners of cloth and tie with string to form a bag; add to tomato mixture. Cook for 45 minutes or until very thick, stirring frequently. , Add vinegar; cook to desired thickness. Discard spice bag. Carefully ladle hot mixture into hot pint jars, leaving 1/2-in. headspace. Adjust caps. Process for 15 minutes in a boiling-water canner.
