Steps:
- Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
- Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
- Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
- While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
- Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
- Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
- Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

Steps:
- Place the spare ribs, cider vinegar, soy sauce, rice wine vinegar and sugar in a large bowl. Add 2/3 cup water and stir to combine. Place the spare ribs and the liquid in a large pot over low heat. Cover the pot and bring to a gentle simmer. Cook until the meat begins to come apart from the bone, about 40 minutes.
- Remove the spare ribs from the pot using a slotted spoon. Increase the heat to high and let the sauce reduce until it looks glazy, 5 to 10 minutes. Add the honey and sprinkle with pepper and let the sauce simmer, about 1 minute. Pour the sauce over the spare ribs and mix to combine. Serve immediately.

COUNTRY PORK RIBS
These hearty ribs feature a lip-smacking sauce that's deliciously tangy with just the right hint of sweetness. "The marinade is absolutely terrific for country-style ribs, but I've found it's great with other meats, too," says Brian Johnson of LaGrange, Georgia.

Steps:
- Preheat the oven to 350 degrees F.
- Pat the ribs dry and sprinkle with salt and pepper. Heat 2
- tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
- on all sides, working in batches if needed. Remove the ribs and set aside. Add
- the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
- Add the carrots, celery, onions and some salt and pepper and cook until soft,
- about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
- the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
- Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
- leaves.
- Add the ribs back to the pan and add enough stock to reach
- halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
- the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
- half hour, uncover to allow the liquid to reduce and the pork to brown.
- Serve the ribs with Creamy Polenta, spooning the sauce on
- top, and garnishing with parsley.
- Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
- In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
- Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.

Steps:
- Mix together the hoisin sauce, soy sauce, brown sugar, honey, five-spice powder, garlic, ginger and food coloring in a metal, non-reactive bowl. Pour the marinade into a large zip-top bag, reserving 1/2 cup on the side for basting later. Add the ribs to the bag and marinate, refrigerated, for at least 3 hours, though longer is better and overnight is ideal.
- Heat a charcoal or gas grill to 275 degrees F for direct and indirect grilling.
- Remove the ribs from the marinade (discard the marinade) and place onto a wire rack. Place the rack directly on the cooler side of the grill. Cook until the meat is very tender, basting with the reserved marinade 3 times during the cooking process, 2 to 3 hours.
- Drizzle the ribs with honey, move them to the direct heat side and quickly char each rib to caramelize.
COUNTRY-STYLE PORK RIBS WITH BOURBON AND COKE BBQ SAUCE
Country-style ribs are not actually ribs. This cut of meat comes from the shoulder of the pig, where it is sliced in half under the blade bone and then cut into long strips to resemble ribs. As a result, much like other tough cuts of meat, country-style ribs benefit from any type of low and slow cooking. Tender, tangy, and accented with just a hint of bourbon, these ribs are a messy, saucy affair. Bone-in country-style ribs are recommended for this recipe since it's the bones that are packed with the most flavor (you can use boneless ribs, but they may require less cooking time).

Steps:
- Trim any excess fat from the ribs and cut into approximately 5-inch-long pieces. Lightly season the ribs with salt and pepper.
- Heat a large sauté pan on the stovetop over medium-high heat. Add the oil, then the ribs, and brown well on all sides. (To avoid overcrowding the pan, you may have to do this in batches.)
- While the ribs are searing, spray the inside of the slow cooker with cooking spray. Add the ketchup, cola, tomato paste, garlic, brown sugar, chili sauce, bourbon, cider vinegar, sorghum syrup, Worcestershire sauce, chili powder, and cayenne. Stir well. Add the ribs to the slow cooker, layering the larger, fattier ribs on the bottom. Make sure all the ribs are covered in sauce. Cover and cook on low for at least 8 hours and up to 9 hours, until the meat is fall-off-the-bone tender.
- Transfer the ribs to a platter and keep warm. Pour the leftover sauce into a small saucepan and cook over medium heat for 10 to 15 minutes, until it is reduced and slightly thickened. Skim off any visible fat, season with salt and pepper, and serve the sauce over the ribs.
SLOW COOKER COUNTRY-STYLE SPARERIBS
This is an easy slow cooker recipe. This dish ranks as one of my family's favorite Sunday meals. Serve over cooked rice, using sauce as a gravy. My family is picky so I cut the green pepper and celery in larger pieces so I can pick them out before I serve the meal. It doesn't change the flavor, but my kids don't complain about the icky green stuff.

THE 9 MOST POPULAR RIB SAUCE RECIPES

Author Derrick RichesPublished 2011-09-24
- Classic BBQ Rib Sauce. A great rib sauce should cook on the ribs, low and slow so that it can sink into the pores of the meat and create a sticky crust on the surface.
- Kansas City Rib Sauce. In Kansas City, you typically get a thick tomato-based sauce that is sweet and often spicy. Our classic barbecue sauce is rich, dark in color, beautifully shiny on your favorite ribs, and also sticky and sweet.
- Jack Daniel's Rib Glaze. Whiskey-based barbecue sauces have a long history in the South. Our sweet tomato-based sauce gets that great whiskey flavor, and the sugar and spices tame that bite.
- Savory Rib Sauce. Our savory barbecue sauce features an old-fashioned approach to sauce-making by using chicken stock as a base. This is a great sauce for all kinds of barbecue, but the perfect blend for ribs, and because it's mild heat it's good for kids.
- Chipotle Barbecue Sauce. Many commercial barbecue sauces use liquid smoke or smoke flavoring to give them that "authentic" barbecue flavor. In our sauce, we use smoked jalapeños (chipotles) instead for a hint of that charred flavor.
- Dr. Pepper Barbecue Sauce. If you have a plate of smoky ribs in one hand, chances are an ice-cold soda is in the other. Grab one bottle of Dr. Pepper and put this soda to fantastic use in a sweet sauce that's perfect on ribs.
- Best Odds Rib Sauce. This classic barbecue sauce is specifically designed for great barbecue ribs and gives you the best odds at making the best rack of ribs you've ever made.
- Apple City Barbecue Sauce. From legendary pitmaster Mike Mills, this award-winning barbecue sauce is a labor of love. Loaded with flavor, this sauce balances the sweetness of apples, the tartness of vinegar, and the smokiness of bacon.
- Memphis Barbecue Sauce. Balanced between sweet and hot, this sauce contains 1/2 cup of Louisiana-style hot sauce for a little kick. Thinner than most BBQ sauces, our Memphis-style recipe calls for molasses and sugar, so keep an eye on the pot and don't let it burn.
