Always a hit at family brunch. Make sure you leave enough time for the casserole to refrigerate overnight. Prepare it in the evening and bake it the next morning.

1 lb pork sausage
1 lb frozen hash browns
1 dozen egg
1/2 cup milk
1 yellow pepper
1 red pepper
1 green pepper
2 cups cheddar cheese (shredded)
cooking spray
bacon (optional)
cubed cooked ham (optional)

Steps:

  • Brown sausage in a pan. If using bacon, also cook the bacon.
  • Spray cooking spray into a 13x9 cake pan.
  • Spread frozen hashbrowns into pan, covering about 1" to 1.5".
  • Sprinkle peppers on top of hashbrowns.
  • Spread meat(s) on top of peppers.
  • Pour mixture of milk and eggs over the top.
  • Cover the pan in plastic wrap and let refrigerate overnight.
  • When ready to bake, remove plastic wrap and bake at 350 degrees for 30-40 minutes.
  • Stir outside to inside a couple of times while baking.
  • 2-10 minutes before done, sprinkle cheese on top. Cook until melted.

This is my family's recipe that has been handed down through the years. We've always used the maple flavored pork sausage but any kind is good. This casserole is a nice and cozy breakfast or brunch meal that everyone will enjoy. It's got the perfect taste with lots of cheese. Yum! Be sure to use a baking dish that is deep enough to cover with aluminum foil.

1 (2 pound) package frozen hash brown potatoes, thawed
1 pound pork sausage
1 small onion, diced
5 eggs
½ cup milk
½ teaspoon onion powder
⅛ teaspoon garlic powder
salt and ground black pepper to taste
12 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish. Place the hash brown potatoes in the bottom of the baking dish.
  • Heat a skillet over medium heat and cook and stir the sausage and onion until the sausage is crumbly, evenly browned, and no longer pink; drain. Meanwhile, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper, and pour over the potatoes. Layer with half the Cheddar cheese, the sausage mixture, and the remaining Cheddar cheese. Cover with aluminum foil.
  • Bake in the preheated oven for 1 hour. Remove cover; return casserole to the oven and bake until a knife inserted into the center comes out clean, about 10 minutes. Let stand for 5 minutes before serving.

1 lb bulk pork sausage
1 cup chopped onion
2 cups frozen hash brown potatoes, defrosted
8 large eggs, beaten
1 (1 7/8 ounce) package knorr leek soup mix
1/2 cup mayonnaise
3/4 cup milk
3 tablespoons all-purpose flour
1 cup grated sharp cheddar cheese

Steps:

  • Preheat oven to 325°; coat a 13 x 9 inch baking dish with nonstick cooking spray.
  • In a 10-inch skillet over high heat, cook the sausage, breaking it into smaller pieces, until it loses its pink color.
  • Drain off the fat; return to skillet and add in onion; cook, stirring, until it is softened, 4-5 minutes.
  • Remove the pan from the heat and transfer the mixture to a large mixing bowl; add in the hash browns.
  • In another bowl, combine the eggs, soup mix, mayonnaise, milk, and flour.
  • Fold the egg mixture into the sausage mixture and pour into the prepared dish.
  • Sprinkle the top of the casserole with the cheese and bake 25 minutes, until the casserole is set.
  • Let sit for 5 minutes before serving.

Optional: 6 dashes hot sauce (or to taste)
2 cups shredded cheddar cheese
8 slices bacon (cut into 1-inch pieces and cooked), divided
1 cup shredded Colby cheese

Steps:

  • Gather the ingredients.
  • Preheat the oven to 350 F. Spray a 9 x 13-inch pan with cooking spray.

1 lb Italian sausage (I used hot and spicy)
1 medium white onion, peeled and diced
3 garlic cloves, minced
1 red bell pepper, cored and diced
6 eggs
1/3 cup milk
20 ounces frozen hash browns, thawed
2 cups shredded cheddar cheese or 2 cups mozzarella cheese
1/4 teaspoon fresh ground black pepper
thinly sliced green onion, to taste

Steps:

  • Heat oven to 375.
  • Add the sausage to a medium saute pan. Cook over medium-heat until browned, crumbling the sausage with a spoon as it cooks.
  • Remove sausage with a slotted spoon and transfer to a large mixing bowl.
  • Reserve about 1 tablespoon of sausage grease in the saute pan, discarding the rest.
  • Add the onion and red pepper to the saute pan and saute for 5 minutes until cooked.
  • Add the garlic and saute for an additional 2 minutes or until fragrant.
  • Pour the vegetable mixture into the mixing bowl with the sausage. Add the hash browns and 1 1/2 cups cheese to the mixing bowl with the sausage and vegetables. Stir to combine.
  • In a separate bowl, whisk together the eggs, milk, and black pepper until combined.
  • Then add them to the hash brown mixture and stir to combine. Pour the mixture into a baking dish, and top with the remaining 1/2 cup of shredded cheese. Cover with aluminum foil and bake for 20 minutes.
  • Then remove the aluminum foil and bake for an additional 10 to 15 minutes and the top of the potatoes begin to slightly brown. Remove and let the casserole rest for 5 minutes. Sprinkle with green onions and serve.

1/4 teaspoon salt
1/2 cup cold butter

12 bacon strips, cooked and crumbled
1/2 cup shredded pepper jack or Monterey Jack cheese
1/2 cup shredded sharp cheddar cheese
1/3 cup finely chopped onion
4 large eggs
2 cups heavy whipping cream
3/4 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon cayenne pepper

Steps:

  • Combine flour and salt; cut in butter until crumbly. Gradually add 3-5 tablespoons ice water, tossing with a fork until dough holds together when pressed. Wrap and refrigerate 1 hour., Preheat oven to 450°. On a lightly floured surface, roll dough to an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Line unpricked crust with a double thickness of heavy-duty foil. Bake 5 minutes; remove foil. 5 small corn tortillas
1 1/2 cups finely shredded colby-monterey jack cheese, blend
1/2 lb smoked cooked chorizo sausage, coarsely chopped
1 (4 1/2 ounce) can chopped green chilies
6 eggs
1/2 cup milk
1/2 teaspoon dried oregano
1/8 teaspoon ground red pepper
salsa

Steps:

  • Spray 8 inch square baking dish with non-stick cooking spray.
  • Place 4 tortillas in bottom of dish, overlapping as necessary, about 1/2 to 1 inch up sides of dish. Cut the last tortilla in half, and then into strips.
  • Sprinkle 1/2 cup of the cheese over tortillas in dish. Top with chorizo, chiles and 1/2 cup cheese.
  • Arrange tortilla strips over cheese.

2 lbs cooked and drained sausage (I sometimes use a bit of both.) or 2 lbs bacon (I sometimes use a bit of both.)
1/2 cup chopped onion
1/2 cup chopped green bell pepper
12 eggs
2 cups milk
2 teaspoons salt
1 teaspoon fresh ground pepper
1 teaspoon dry mustard
12 ounces grated cheddar cheese

Steps:

  • Line a prepared 9 x 13 baking dish with frozen hash browns. Top evenly with cooked sausage (or bacon), onion, and green bell pepper.
  • In a separate dish, mix together eggs, milk, salt, pepper, and dry mustard. Pour this over meat and hash browns.
  • Top everything evenly with the grated cheddar cheese.
