HAMBURGER PIE

Hamburger Pie image

Hamburger, tomato soup, green beans and mashed potatoes--sounds gross! You will be surprised, this is really good!! This is an old recipe, I remember my mom making it over 30 years ago. There is not much you have to add to make it a meal, maybe some buttered bread.

GROUND BEEF & POTATOES SKILLET

Ground Beef & Potatoes Skillet image

In this healthy ground beef and potatoes recipe, ground beef and potatoes are paired with colorful veggies, including kale, tomato and peppers. Everything is cooked in one skillet, which allows for layers of flavor to build quickly while also cutting back on the number of dishes.

Provided by John Somerall

Categories     Healthy One Skillet Recipes

Time 40m

Number Of Ingredients 13

3 tablespoons extra-virgin olive oil, divided
1 pound 90% lean ground beef
2 teaspoons ground cumin
¾ teaspoon salt
¼ teaspoon ground pepper
3 medium Yukon Gold potatoes, diced (1/2-inch)
1 medium yellow onion, chopped
1 yellow bell pepper, diced (1/2-inch)
1 poblano pepper, diced (1/2-inch)
2 cloves garlic, minced
1 bunch lacinato kale, stemmed and roughly chopped
2 plum tomatoes, cored and diced (1/2-inch)
1 scallion, thinly sliced crosswise (optional)

Steps:

  • Heat 1 tablespoon oil in a large cast-iron skillet over medium-high heat. Add beef, cumin, salt and pepper; cook, stirring often to break up the meat, until evenly browned, about 6 minutes. Using a slotted spoon, transfer the beef to a paper-towel-lined plate; do not wipe out the pan. Add 1 tablespoon oil to the drippings in the pan. Add potatoes; cook, stirring occasionally, until the potatoes begin to caramelize and are tender, about 20 minutes. Transfer the potatoes to the plate with the beef.
  • Heat the remaining 1 tablespoon oil in the skillet over medium heat. Add onion, bell pepper and poblano; cook, stirring occasionally, until tender, about 6 minutes. Add garlic; cook, stirring often, until aromatic, about 1 minute. Add kale and tomatoes; cook, stirring often, until the kale is wilted and the tomatoes are heated through, about 3 minutes. Stir in the beef and potatoes. Sprinkle with scallions, if desired.

Provided by Laura

Time 1h15m

Yield 8-10

Number Of Ingredients 12

1 pound hamburger meat
1 small chopped onion
6 cups beef broth
4 large carrots, peeled and cut into bite sized pieces
6 medium potatoes, peeled and cut into bite sized pieces
2 cups frozen peas
Sea salt and pepper to taste
⅓ cup cold water
2 Tablespoons organic corn starch, arrowroot powder, or wheat flour
1 cup milk
1 cup mayonnaise (I use Hain Safflower Mayonnaise)
1 cup whole wheat flour (I use freshly ground flour from hard white wheat)

Steps:

  • In a large cooking pot, brown hamburger and onion together.
  • Stir in broth and prepared veggies.
  • Cook until veggies are tender.
  • Mix cornstarch with water until smooth. Stir mixture into the broth/veggies, cooking for about one minute on the stove to help the mixture thicken.
  • Pour contents into a 9×13 inch baking dish.
  • In a separate bowl, stir together milk, mayo, and flour.
  • Spread mixture over the veggies in the baking dish.
  • Bake in a 350° oven for about 45 minutes or until the crust is golden brown.

Time 1h

Number Of Ingredients 6

2 lb ground beef
1 onion (optional if you like it or not)
6 large potatoes
2 cans green beans
1 can tomato soup
Seasoning salt recommended to season the beef

Steps:

  • Brown the ground beef with the onion sliced to desired size. Cube potatoes and boil. When potatoes are done, mash and season to desire.
  • Drain the beef and spread evenly on the bottom of a baking dish. Add the green beans (drain all of the juice) to the top of the beef (as to layer it). Then add the tomato soup to the top of the green beans and spread it evenly over the beans (do not dilute the soup). After the potatoes have been mashed and seasoned to taste. Spread them over the tomato soup and make sure all the top is covered evenly.
  • Place in the oven at 350 degrees F for 20 minutes. Let stand for 5 min. and serve as a one meal skillet.
